These make a great snack to take hiking or camping, or for children to take to school, Reconstituted and patted dry on absorbent paper towels, they're ready for frying with pork chops or sausages.

Ingredients

12 firm but ripe apples
2 tablespoons salt
1 1/2 cups water

Steps:

Core the apples, slice into 1-inch thick rings,m and soak for 10 minutes in the salt nad easter solution. Drqin and thread the apple rings onto skewers. (Note: Soad wooden skewers in water overnight before using),.
Place in a preheated 140F oven, alternating the apple rings on the rungs of the oven racks so that they are not touching. Bake for 4-5 hours or until leathery but pliable.
Let cool for 10-12 hours on dish towels. Place in a labeled airtight container in a cool, dark place,. Soak for 24 hours in water to reconstitute.
OVEN-DRYING TIP: Oven-drying is a more exact method than sun-drying; the only problem can be in keeping your oven at the correct, low temperature. Your aim in drying is not to heat the food, but rather to remove the moisture from it.

These are a great snack, side dish, dessert, breakfast...anything goes!! Another great way to use up apples that are past their prime. Simple, but different and very tasty, and kids love these, too. I think I practically lived on these when I was a kid...grandma made them for us all the time:) When served as a dessert, they are great with a dollop of whipped topping.

Ingredients

4 -6 tart cooking apples, peeled and cored
1 cup flour
2 tablespoons sugar
1 teaspoon baking powder
1 dash salt
2 eggs, lightly beaten
2/3 cup milk
1 tablespoon Crisco shortening, melted
Crisco shortening or oil, for frying
cinnamon (for sprinkling)
sugar (for sprinkling)

Steps:

Slice apples cross-wise into 1/2-inch thick rings.
Combine flour, sugar, baking powder, and salt in medium bowl.
In separate bowl, combine eggs, milk, and melted Crisco.
Add egg mixture to dry mixture and beat until smooth.
In large, heavy skillet, preheat about 1/2 inch deep shortening or oil to about 365 degrees.
Dip apple slices, one at a time, into batter to coat well.
Fry in hot oil about 2 1/2-3 min.
or until brown and edges are crispy, turning once.
Drain on paper towel.
Sprinkle with cinnamon and sugar and serve warm.
