DRESSED UP ITALIAN GREEN BEANS



Dressed up Italian Green Beans image

Green beans were never a favorite vegetable of mine, until I tasted this version of them. Try to use fresh green beans, but frozen will work in a pinch. This is wonderful with asparagus also!

Number Of Ingredients 11

2 1/2 lbs fresh green beans
3 cups water
1 cup sliced fresh mushrooms
1/3 cup chopped onion
1 (8 ounce) can sliced water chestnuts, drained
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon basil
1 teaspoon dried Italian seasoning
1/3 cup olive oil
1/4 cup grated parmesan cheese

Steps:

  • Wash beans, trim ends and remove strings.
  • Combine beans and water in a dutch oven.
  • Bring to a boil.
  • cover, reduce heat and simmer 6 to 8 minutes until crisp-tender.
  • drain.
  • Plunge into ice water to stop the cooking process.
  • Drain beans and set aside.
  • Saute mushrooms and next 7 ingredients in oil in a Dutch oven.
  • Stir in beans and cook until thoroughly heated.
  • sprinkle with Parmesan cheese.

1.2 kg mixed green and runner beans
2 cloves of garlic
extra virgin olive oil
red wine vinegar

Steps:

  • This works great as a stand-alone recipe, but also as a component in Jamie's Summery Feast from Together - see the full collection of menus here.
  • GET AHEAD Prep the mixed green and runner beans. Peel the garlic and finely grate into a little jug, add 2 tablespoons each of extra virgin olive oil and red wine vinegar, and a pinch of sea salt and black pepper, then mix well. Cover everything and store overnight.
  • TO SERVE Cook the beans in a large pan of boiling water for 7 minutes, or until just soft. Drain well, then return to the pan and toss with the dressing. Serve hot or at room temperature. Delicious served with the Slow-roasted lamb.

1 jar (4-1/2 ounces) sliced mushrooms, drained
3 tablespoons butter, melted
1/4 teaspoon dried rosemary, crushed
1/4 teaspoon dried basil
Toasted slivered almonds

Steps:

  • Cook green beans according to package directions; drain. Add mushrooms and keep warm. Combine the butter, rosemary and basil; drizzle over bean mixture and toss to coat. Sprinkle with almonds.
