- Make 2 layers of vanilla pudding, crushed chocolate wafer cookies and whipped cream in tall glasses. Top each with a cookie.
VERY BERRY DREAMBOAT PARFAITS
Steps:
- Combine pudding mix, sweetener, vanilla extract, and milk in a bowl. Stir vigorously until it's smooth and slightly thickened. Mix in whipped topping and cream cheese. Stir thoroughly, until it's completely mixed and smooth. Cover it and refrigerate for at least 20 minutes.
- Evenly distribute raspberries between 2 parfait glasses (or any midsized glasses). Evenly distribute half of the chilled pudding mixture between the glasses, about 1/4 cup per glass.
- Repeat layering with strawberries and the remaining half of the pudding mixture.
- If you like, top each parfait with a squirt of whipped topping. Evenly distribute the crushed graham crackers between the glasses. Enjoy!

- Crumble 1 of the cookies into each of 4 beverage glasses or parfait dishes.
- Top each with layers of 1/4 cup fruit and 1 Tbsp. whipped topping; repeat layers.
- Crush 1 of the remaining cookies over each dessert. Serve immediately or cover and refrigerate up to 4 hours.

- With a food processor or in a large zip-topped bag with a rolling pin, crush the chocolate sandwich cookies to crumbs.
- Place the chocolate and ¼ cup heavy cream in a bowl. Set over pot of simmering water and melt until smooth, stirring often. (This can also be done in a double boilder.) Set aside to cool to room temperature.
- Beat remaining heavy cream to soft peaks. Gently fold the whipped cream into the chocolate in 2-3 additions, gently folding each addition in until no streaks of chocolate remain.
- Layer the Oreo crumbs and chocolate into 4 glasses. Top with more whipped cream and a cookie, if desired.
