MAPLE BOURBON PECAN ICE CREAM
A decadent homemade ice cream recipe.

- In a medium, heavy-bottomed saucepan, combine the maple syrup, half and half and fine salt. Heat over a medium flame, stirring occasionally, until the mixture starts to steam and small bubbles form around the edges. (If the mixture begins to look curdled, take it off the heat and don't worry; it will smooth out in the next step. It's just the acidity of the maple syrup having its way with the milk solids.)
- Place the egg yolks in a medium bowl and place the bowl on a damp kitchen towel to anchor it. Place the cold, heavy cream in a heat-proof bowl and set a mesh sieve over the bowl.
- Slowly dribble the hot milk mixture into the yolks, whisking constantly. Return the mixture to the pot, place over a low flame, and cook, stirring constantly with a heat-proof silicone spatula, until the mixture begins to "stick" or form a film on the bottom of the pan, or reaches 170º. Immediately remove the pan from the heat, and pour the mixture through the strainer and into the cold cream. Stir to combine, then cover and chill until very cold, at least 4 hours and up to 2 days.
- In a small, heavy-bottomed saucepan, add enough water to barely cover the bottom of the pan. Add the sugar to the center of the pot, moisten it evenly with the water, and wash any crystals that get on the sides of the pan down into the water. Add the corn syrup and cover the pot with a lid. Place the pot over medium-high heat and bring to a boil until the sugar has dissolved.
- Have the butter, salt and nuts measured and at the ready, and have a sheet of parchment paper or a baking sheet ready on which to dump the candied nuts.
- Remove the lid from the pot, and, without stirring, boil the syrup until it reaches an amber caramel. (If the mixture begins to crystallize, you can save it by adding more water and beginning the caramelization process again.) Remove the pot from the heat and immediately swirl in the butter and salt, then add the nuts and stir quickly to coat with a heat-proof silicone spatula.
- Dump and scrape the nuts out onto the parchment, and quickly separate the pieces with the spatula as much as possible. - Stir the bourbon and vanilla into the chilled ice cream base. Place the ice cream base in the freezer for half an hour to get it really cold, stirring it every 10 minutes to prevent ice crystals from forming.
- Churn in an ice cream maker according to the manufacturer's instructions. When the ice cream is the consistency of a thick milkshake, stir in the candied pecan pieces. Scrape the ice cream into a container, and freeze until scoopable, at least 4 hours.
- The ice cream is best within a week of churning, but will keep for several months. Store with a piece of parchment paper pressed to the surface to prevent ice crystals from forming.

- Simmer sugar and water on medium heat, swirling pan NOT stirring for about 15 minutes or until a deep amber color is reached. Watch closely as not to let it burn.
- Turn off burner and remove from heat and slowly add cream while stirring.
- Add pinch of salt and bourbon and place back on still-warm burner for another minute while stirring.
- Transfer to a heat-safe dish or bottle and let cool. Store covered in the refrigerator and bring to room temp or heat in a warm water bath before serving. You can also just simply microwave the jar for 30 seconds before each use without affecting the texture or flavor.

BOURBON ICE CREAM WITH BOURBON-CARAMEL SWIRL

- Prepare the Bourbon Ice Cream Base: Cook whipping cream, milk, brown sugar, and salt in a medium saucepan over medium, stirring occasionally, until sugar is dissolved and mixture is steaming, about 5 minutes. Remove from heat. Whisk egg yolks in a small bowl until pale, about 1 minute. Slowly pour or ladle 1 cup hot cream mixture into yolks, whisking constantly. Whisk warm yolk mixture back into remaining cream mixture in saucepan.
- Cook mixture over low, stirring constantly, until thickened and a thermometer registers 175°F, about 5 to 7 minutes. Remove from heat, and stir in bourbon and vanilla bean paste. Pour mixture through a fine mesh strainer into a large bowl, discarding solids. Cover surface of cream mixture with plastic wrap, pressing plastic wrap directly on surface, and refrigerate until completely chilled, at least 4 hours or up to overnight (12 hours).
- Prepare the Bourbon-Caramel Swirl: Cook granulated sugar and 2 tablespoons water in a medium saucepan over medium, swirling occasionally (but do not stir), until sugar has dissolved and caramel reaches a golden amber color, about 10 minutes. Remove from heat, and carefully whisk in warmed whipping cream. Whisk in bourbon and salt. Set aside to cool to room temperature, about 30 minutes.
- Meanwhile, pour chilled Bourbon Ice Cream Base into the bowl of an electric ice-cream maker, and freeze according to manufacturer's instructions. When Bourbon Ice Cream Base reaches a soft-serve consistency, spoon about 1 cup ice cream into a 9-x 5-inch metal loaf pan. Drizzle about 2 tablespoons cooled Bourbon-Caramel Swirl over ice cream. Repeat ice cream and caramel layers 3 more times; reserve any leftover Bourbon-Caramel Swirl for serving or another use, and store in an airtight container or jar in refrigerator for up to 2 weeks. Smooth top, and cover with plastic wrap or parchment paper, pressing plastic wrap or parchment directly onto surface. Freeze until firm, at least 4 hours.
SPICY CARAMEL ICE CREAM WITH BOURBON MAPLE SAUCE
Steps:
- In a large stockpot, heat the cream to 160°, being careful not to boil. While cream heats, in a large bowl whisk your egg yolks and sugar together until smooth. Add a 1/2 cup of the heated cream, while constantly whisking. Continue adding the cream in small increments while whisking until the mixture is smooth and tempered. Run through a fine mesh strainer or chinois to catch any shells or cooked egg pieces. Cool down mixture quickly in an ice bath, and refrigerate for up to 4 days. Ice cream turns out better if this is refrigerated overnight. Over a double boiler, combine the dulce de leche and nutmeg, whisking until the caramel has liquified and is very smooth and without lumps. Slowly whisk in the ice cream base until the mixture is even in color with no caramel chunks. Run the mixture through a strainer and chill before preparing according to your ice cream maker. While ice cream mixes, combine the bourbon and maple syrup in a small saucepan, and bring to a slow boil. Simmer for 2 minutes. In a small bowl, combine the corn starch and water, and mix with a spatula to make a slurry. While bourbon and syrup continue to simmer, slowly drizzle the slurry into the saucepan, while constantly whisking. Turn heat back up and allow mixture to slowly boil until it will coat the back of a spoon. Cool in an ice bath before refrigerating. If mixture ends up runny, make more corn starch/water mixture and boil it into the sauce again. Lightly drizzle sauce over the caramel ice cream for a perfectly spicy and balanced dessert.

- Whisk grated ginger, garlic, brown sugar, rice vinegar, fish sauce, hot sauce, and soy sauce together in a large bowl.
- Place chicken chunks in a bowl. Pour 1/4 cup of the prepared sauce onto chicken chunks; mix until all chicken pieces are coated. Set aside 15 minutes.
- Heat vegetable oil in a heavy skillet over high heat. As soon as oil starts to smoke, place chicken chunks in a single layer in the pan. Cook and stir until chicken pieces start to caramelize and turn deep brown, 8 to 10 minutes. Reduce heat to medium. Stir in sliced jalapeno and red peppers, peanuts, and green onions. Cook and stir one minute. Pour in remainder of sauce. Simmer until heated through, 1 or 2 minutes. Remove from heat.
- Stir in cilantro. Serve over hot cooked rice and top with chopped green onions.

CARAMEL ICE CREAM

- In 2-quart saucepan, heat sugar over medium heat until sugar begins to melt. Stir until sugar is completely dissolved and becomes deep golden brown to amber in color. Remove from heat; gradually stir in 1 cup of the whipping cream (mixture will boil and splatter at first). Heat over low heat, stirring frequently, until any hardened sugar bits dissolve; remove from heat.
- With whisk, stir in remaining 1 cup whipping cream, the milk, egg yolks, salt and vanilla until well mixed. Cook over medium heat just until mixture comes to a boil, stirring constantly (do not allow mixture to continue to boil or it will curdle). Immediately remove from heat.
- Pour milk mixture into chilled bowl. Refrigerate uncovered 2 to 3 hours, stirring occasionally, until room temperature. At this point, mixture can be refrigerated up to 24 hours before completing recipe if desired.
- Pour into 1-quart ice-cream freezer and freeze according to manufacturer's directions.

- In a large heavy saucepan, combine cream, milk, sugar and salt. Heat over medium heat until bubbles form around sides of pan, stirring to dissolve sugar. , In a small bowl, whisk a small amount of the hot mixture into the egg yolks; return all to the pan, whisking constantly. Cook over low heat until mixture is just thick enough to coat a metal spoon and temperature reaches 180°, stirring constantly. Do not allow to boil. Immediately transfer to a bowl. , Place bowl in a pan of ice water. Stir gently and occasionally for 2 minutes. Stir in bourbon and vanilla. Press waxed paper onto surface of mixture. Refrigerate several hours or overnight., Fill cylinder of ice cream maker two-thirds full; freeze according to the manufacturer's directions. (Refrigerate remaining mixture until ready to freeze.) Transfer ice cream to a freezer container; freeze until firm, 4-6 hours. Repeat with remaining mixture.
