The traditional Cornish recipe uses a cheese such as Double Gloucester or English Cheddar, but I have made some very tasty varieties using Stilton, Feta, Bleu Cheese, and even Havarti.

puff pastry (I use frozen, but homemade is fine if you are a purist)
1/2 ounce unsalted butter
2 medium onions, finely chopped
1/2 lb double Gloucester cheese or 1/2 lb cheddar cheese, grated
4 tablespoons fresh parsley, chopped

Steps:

  • Thaw the pastry.
  • If using homemade, put your dough in the refrigerator to chill.
  • Preheat oven to 400°F.
  • Melt the butter in a frying pan on a low heat.
  • Mix in the onions and cook them until they are just beginning to soften.
  • Mix them with the cheese and parsley.
  • Roll out the pastry and cut out 4 rounds, each about 6 inches in diameter.
  • Put a quarter of the cheese mixture on one half of each one.
  • Fold over the other side and crimp the edges together.
  • Lay the pasties on a floured baking sheet and brush them with milk or beaten egg.
  • Bake them for 30 minutes and serve hot.

Cheese, Onion and Potato Pasty made with puff pastry, beautifully golden and flaky, with a delicious vegetarian filling. Great as a snack, or even as a light meal with a nice salad on the side. These are the best savory puff pastry pies that go down a treat as an afterschool snack. Back to school is easy peasy now. The pasties are a great British snack, so popular that is hard not to have one too many. Ready from scratch in about 30 minutes or so.

3 medium potatoes
1 large onion
100 g grated Cheddar cheese
1 tbsp olive oil
1 tbsp butter
1 egg
1 sheet of puff pastry ((ready rolled))
1 tsp chopped parsley
salt and pepper to taste

Steps:

  • Peel and chop the potatoes and boil in salted water for 10-15 minutes or until tender.
  • Drain the water and allow them to cool.
  • Peel and lightly mash the potatoes using a fork, it does not have to be a smooth mash, a lumpy one would do.
  • Add the cheese and add it to the potatoes.
  • Peel and cut the onion roughly
  • In a pan, heat up the oil and butter, then fry the onions until translucent.
  • Mix the fried onions with the potatoes and cheese, add the parsley and season to taste.
  • Preheat the oven to 200 degrees C (390 Fahrenheit).
  • Cut the puff pastry into 4 rectangles, place the potato mixture on one half, brush the edges with a bit of water, then fold the other half over and seal.
  • Repeat with the other 3 pasties.
  • Slightly beat the egg and brush the pasties, then oil and flour a baking tray, place the pasties on it and bake for about 20 minutes or until golden.
  • Remove from the oven and allow them to cool slightly.
  • Serve them either warm or cold.

This cheesy pasty is a delicious alternative to the regular Cornish pasty and is quick and easy to make.

450g / 1lb packet puff pastry
2 medium potatoes diced small
1 medium onion
220g / 8oz Cheddar Cheese
1 egg
1 Tablespoon chopped parsley
Salt and pepper to taste

Steps:

  • Peel and chop the potato into small chunks and the onion finely chopped and grate the cheese. Finely chop the parsley.
  • Mix all the ingredients together well in a bowl.
  • Divide the pastry in 4 and roll each piece into a round about 15 cm (6 inches) in diameter.
  • Put a quarter of the cheese mixture on each one, dampen the edge with a little water, then fold over and crimp the edges.
  • Lay the pasties on a floured baking sheet and brush them with milk or beaten egg.
  • Bake them for 45 minutes.

2 small potatoes (about 300g/11oz), cut into 1cm cubes
knob of butter
2 small leeks , tough outer leaves removed, split in half lengthways and finely sliced
3 thyme sprigs, leaves chopped
1 tbsp Dijon mustard
2 tbsp cream
flour , for dusting
500g block shortcrust pastry
140g/ 5oz Welsh Caerphilly cheese, strong cheddar or vegetarian alternative, cut into small chunks
1 egg , beaten

Steps:

  • Cook the potatoes in boiling, salted water for 5-8 mins until tender, but still holding their shape. Meanwhile, melt the butter in a large saucepan. Add the leeks and thyme and soften for 10-12 mins. Drain potatoes and add to the leeks with the mustard and plenty of seasoning. Stir in the cream and leave to cool a little.
  • Heat oven to 180C/160C fan/gas 4. On a floured surface, roll out the pastry to the thickness of a £1 coin. Use a side plate or a bowl as a template to cut out 6 x 15cm circles. Mix the cheese with the leek mixture and pile a mound of the mix onto the centre of each pastry circle. Brush around edges with a little egg, then bring edges together and crimp with your fingers to seal.
  • Place pasties on a baking tray lined with baking parchment, brush with the remaining egg and bake for 40-45 mins until golden brown. Serve warm or leave to cool.

500 g pastry dough, short crust or 500 g bought pastry dough
2 cups grated cheese, mature cheddar
1 onion, large, finely chopped
1/2 teaspoon pepper, course black
salt
1 egg

Steps:

  • Cut pastry into rounds, I use a side plate and just cut around it.
  • Pre heat the oven to 210°C.
  • Mix the grated cheese with the onion adding the pepper and salt,.
  • Beat the egg and brush around the edge of the pastry and carefully lift the pastry up and pinch together, brush the egg over the outside and poke a few vent holes on either side, I use a satay stick to do this.
  • Cook in the oven for approximately 15 minutes or until light golden brown.

Here is a vegetarian version of the traditional Cornish miners turnover. Haven't tried it yet, but posting for the Zaar World Tour 2005. This recipe is from Moosewood.

3 cups flour
1 teaspoon salt
1 cup butter
3 tablespoons ice water
1 cup diced celery
3/4 cup diced turnip
2/3 cup chopped leeks or 1/2 cup chopped scallion
1 1/3 cups diced carrots
12 ounces grated cheddar cheese
1 pinch mace
1/4 teaspoon black pepper
1/4 teaspoon cayenne

Steps:

  • To make crust: combine salt and flour. Cut butter into flour with fingers until it resembles coarse corn meal.
  • Sprinkle on cold water and stir until dough sticks together.
  • Form dough into a ball and refrigerate for 15-30 minutes. Do not over-chill!
  • To make Filling: Mix together the filling ingredients in a large bowl.
  • Preheat oven to 375°F.
  • Cut the ball of dough into 6 pieces. Roll out each piece about 1/8 inch thick and Cut a 9 inch circle out of each piece.
  • Put 1/6 of the filling in the middle of each pastry circle.
  • Pull one edge over the filling to make a half-circle.
  • Seal the edges together like a turnover. Turn the edges over and press with a fork to double-seal.
  • Cut slits in the top of the pasties so that steam can escape.
  • BAke for 15 minutes, then reduce heat to 350 F and bake for another 15-20 minutes until lightly golden.
  • Remove from oven, and allow the pasties rest for 5 minutes before serving.

Rustle up these little cheese and onion pasties for a family picnic. If you won't eat all 12, they freeze well and can be cooked straight from frozen

1 tbsp vegetable oil
2 onions, sliced
4 thyme sprigs, leaves picked
150g mature cheddar (or a mixture of strong hard cheeses), grated
1 tbsp wholegrain mustard
4 spring onions, sliced
250g plain flour, plus extra for dusting
125g cold butter
large pinch of cayenne pepper
½ tsp English mustard powder
1 large egg, beaten

Steps:

  • First, make the pastry. Tip the flour into a bowl. Holding the block of butter in its wrapper, grate it directly into the flour (you may need to dip the end of the butter into the flour occasionally if it becomes sticky). Add the cayenne pepper, mustard powder and half the beaten egg, and season with a pinch of salt. Bring everything together with your hands until the mixture starts to clump together. Tip the pastry onto the work surface and knead very briefly into a smooth ball, adding up to 3 tbsp cold water if it's too dry. Squash the pastry into a disc. Wrap and chill while you make the filling.
  • Heat the oil in a frying pan and cook the onions and thyme leaves for 8-10 mins until the onions have softened and started to caramelise. Tip into a bowl and leave to cool. Once cool, mix in the grated cheese, mustard and spring onions.
  • Heat the oven to 200C/180C fan/gas 6 and line a baking tray with baking parchment. Roll the chilled pastry out on a lightly floured surface to the thickness of a £1 coin. Cut out as many 10-12cm circles as you can (you can use a cup or mug as a template), then re-roll any off-cuts and repeat. You should get about 10-12 circles in total.
  • Spoon a mound of the filling into the centre of each pastry circle, leaving the edges clear. Working with one circle at a time, brush a little of the remaining beaten egg around the edge, then bring two sides up to meet in the middle in a half-moon shape. Pinch the pastry together, crimping the edge to seal. Transfer to the baking tray and repeat with the remaining pastry circles and filling. Brush all the pasties with some beaten egg. Will keep frozen for two months.
  • Bake the pasties for 20-25 mins (or 40-45 mins from frozen) until the pastry is deep golden brown. Leave to cool for at least 10 mins before eating warm, or cool completely and pack into containers for a picnic. Will keep in an airtight container for up to three days.

These tasty little treats are super easy to make and also quite healthy. They feature a flavourful vegetable filling which can be varied according to whats in season or what strikes your fancy. Vary the spices and herbs according to the filling veggies you choose. I hope youll enjoy them as much as we do! :)

250 g low-fat Quark (or use cream cheese mixed with yogurt to a ricotta like consistency)
25 g butter, softened
75 g whole wheat flour
75 g flour (you can use all whole wheat, too)
1/4 teaspoon salt
1 small carrot, chopped finely
1 small parsnip (or other vegetables of your choice to make up this amount, think of peas, potatoes, broccoli, etc.)
1 teaspoon oil
1/4 teaspoon freshly ground black pepper
1/4 teaspoon chili powder
1/4 teaspoon curry powder
1/2 teaspoon dried rosemary
50 g cheese, grated (use a mature variety, low fat is fine)

Steps:

  • In a big bowl combine quark, butter, flours and salt, Using your hands quickly knead into a smooth dough. Place in the fridge until filling is ready.
  • Heat the oil in a frying pan and saute veggies for about 5 minutes. Season with pepper, chili powder, rosemary and curry powder. Allow to cool slightly (2 min.). Stir in cheese.
  • On a lightly floured surface roll out quite thinly (as thinly as possible without it breaking). Using a glass or cookie cutter (8 cm in diameter) cut out 8 rounds.
  • Place 1 tbs of filling onto each dough round and fold over to get a pasty shape. Seal using a fork to press down the rim.
  • Place the pasties on a paper-lined baking sheet and bake in the preheated oven at 180°C/350°F for about 30 minutes (check 5 minutes early to prevent overbrowning).
  • Serve with dipping sauce and salad of choice.

double cream

small handful of flat leaf parsley

sheet of ready rolled puff pastry
egg yolk
splash of milk

Steps:

  • Heat the oil in a large drying pan and gently fry the finely diced potatoes until softened and golden. Now add the butter to melt and gently fry the onion for about 1 minute. Place in a bowl and allow to cool.
  • Now add the cheese, cream, mustard, parsley and season to taste. Mix until fully combined.
  • Unroll the sheet of pastry and cut into four rectangles. Divide the filling into four and place on one side of each rectangle. Place the egg and a splash of milk in a small bowl and brush around the edges. Fold the pastry over and seal the edges. with your fingers. Place in the fridge.
  • Preheat the oven to 200°C/180°C fan/ Gas Mark 6.
  • Using a fork, press down around the outside of each pasty. Place on a lined oven tray and slice some steam holes in each pasty . Brush with the egg wash and place in the oven for 15-20 minutes. After about 10-12 minutes brush the pasties with some more egg wash. Keep an eye on them as they can bake quite fast. Remove from the oven and place on a wired rack. Serve warm or cold - enjoy!

1 lb sharp cheddar cheese, grated

  • Heat the oven to 400°F
  • Roll out the pastry and cut out 6 circles 8in in diameter.
  • Heat the oil and cook the onions in it until starting to soften.

Crust:
2 cups unbleached all purpose flour
1 cup white whole wheat flour or whole wheat flour
1 1/8 teaspoons salt
1/2 cup solid vegetable shortening (preferably nonhydrogenated), frozen
1/2 cup (1 stick) chilled unsalted butter, cut into 1/2-inch cubes
7 tablespoons (or more) ice water
Filling:
4 teaspoons olive oil
2 large onions, thinly sliced
1/2 cup dry white wine
1/2 teaspoon dried thyme
10 ounces skirt steak, cut crosswise on diagonal into 1/4-inch-wide strips
1 teaspoon coarse kosher salt, divided
6 ounces coarsely crumbled Stilton blue cheese (11/3 to 11/2 cups), divided
1 large egg white, beaten to blend

Steps:

  • For crust:
  • Blend both flours and salt in processor 5 seconds. Drop in shortening by tablespoonfuls. Cut in until coarsely diced. Add butter. Cut in until coarse meal forms. Transfer to bowl. Add 7 tablespoons ice water. Toss with fork until moist clumps form, adding more water by teaspoonfuls if dry. Gather dough into ball; divide into 4 equal pieces. Shape each into disk; wrap and chill at least 45 minutes and up to 1 day.
  • For filling:
  • Heat oil in heavy large skillet over medium heat. Add onions. Sauté until deep brown, reducing heat if necessary to avoid burning, about 30 minutes. Add wine and thyme. Simmer until liquid evaporates, stirring often, about 3 minutes.Season with salt and pepper. Cool. DO AHEAD: Can be made 1 day ahead. Cover and chill.
  • Position 1 rack in top third and 1 rack in bottom third of oven and preheat to 400°F. Roll out each dough disk between sheets of parchment paper to 9-inch round. Peel top parchment off each. Spread 1/4 of onion mixture on half of each round, leaving 1-inch plain border. Top onions with beef strips. Sprinkle 1/4 teaspoon coarse salt over beef on each, then top each with 1/4 of cheese. Sprinkle with pepper. Brush dough border with some egg white. Using bottom parchment as aid, fold plain dough half over filling. Seal edges. Fold sealed edge over again; press with fork to double-seal.
  • Brush each pasty with egg white. Cut 3 slits in each top crust. Divide pasties (still on parchment) between 2 large rimmed baking sheets.
  • Bake pasties until crust is golden brown and filling is cooked through, about 30 minutes. Cool 10 minutes; serve.

  • To make the pastry, put the flour and salt in a mixing bowl. Rub in the cubed butter between your thumbs and forefingers until the mixture resembles fine breadcrumbs. Stir in the egg, milk, and vinegar using a table knife. Using your hands, work the mixture until it comes together to form a dough – it should be soft but not sticky. Shape the dough into a ball on a flour-dusted work surface, flatten into a disc and cover in cling film. Set aside in the fridge for at least 30 minutes to rest (see Make Ahead).
  • For the filling, melt the butter in a heavy-bottomed pan over medium heat. Add the onions and cook, covered for 10 minutes until softened. Stir regularly and add a little water if they start to look dry. Add the potato to the onions and continue to cook for 5-10 minutes. Remove from the heat and set aside to cool.
  • Heat the oven to 180ºC fan/gas 6. Divide the pastry into 4 equal pieces. Roll out one piece on a lightly floured surface to form a circle roughly 4-5mm thick (keep the rest of the pastry wrapped in the fridge).
  • Stir the cheddar and cream (if using) through the cooled potato mixture, season with a good pinch of salt and lots of freshly ground black pepper (you want the mix to be heavily seasoned). Pile a quarter of the cooled filling on one half of the pastry, leaving a 3cm border around the edge. Brush the edges with a little beaten egg, then fold the other half over and press to enclose the filling. Crimp the edges of the pastry and place on a large, lined baking sheet. Repeat with the remaining pastry and filling. Brush the pasties with the egg, poke with a fork so steam can escape, then bake for 25-30 minutes until golden (see Make Ahead)

  • Roll out the puff pastry onto a lightly dusted work surface. Cut four circles from the pastry using a cookie cutter. Prick each pastry circle several times using a fork.
  • In a bowl, mix together the chopped spinach, cheddar, nutmeg and ready-made ratatouille until well combined.
  • Place two of the pastry circles onto the lined baking tray. Spoon half of the filling mixture into the centre of both pastry circles.
  • Dab a little water around the edge of both pastry circles using a pastry brush. Place one of the remaining pastry circles over each, pressing down at the edges to seal.
  • Bake the pasties in the oven for 12-15 minutes, or until the pastry has risen and is golden-brown. Set aside to cool slightly before eating with a tomato salad.
