Whenever friends compliment me on my zesty cake, I say, "Thanks Mom!" Her recipe for Lemon Streusel Cake was among dozens I took with me when I turned 21 and left home. When I was growing up, we had five kinds of fruit trees plus a big garden in our yard. Many times during the summer, I'd be so full from snacking on the "crops" that I'd have trouble finishing supper! Today, I'm a nurse in a large hospital-but my husband and I look forward someday to living in the country.

1/2 cup cold butter
1 package lemon cake mix (regular size)
1/2 cup chopped walnuts
3/4 cup whole milk
2 large eggs
FILLING:
1 package (8 ounces) cream cheese, softened
1/4 cup sugar
1 tablespoon lemon juice
1 teaspoon grated lemon zest

Steps:

  • Cut butter into cake mix until crumbly. Set aside 1 cup mixture for topping; stir in nuts and set aside. To remaining mixture, add milk and eggs; beat on high speed for 2 minutes. Pour into greased and floured 13x9-in. baking dish; set aside. , In a small bowl, beat the cream cheese, sugar, lemon juice and zest until blended. Drop by teaspoonfuls onto the batter and spread to edges of pan. , Sprinkle with reserved cake mixture. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Store in refrigerator.

This coffee cake really packs a wallop of extra streusel flavor! A family favorite. Easy to double recipe for a 9x13" pan.

1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup sugar
1/2 teaspoon vanilla
1/4 cup cooking oil
1 egg
3/4 cup milk
3/4 cup brown sugar
2 1/2 teaspoons cinnamon
3 tablespoons butter, melted
4 tablespoons flour

Steps:

  • In a large bowl, sift together the flour, baking powder and salt.
  • Add the sugar.
  • Blend the 1/4 cup oil into the flour and sugar mixture until it is like cornmeal texture.
  • In another bowl, combine the egg, milk and vanilla.
  • Add to the flour mixture. Stir only enough to mix.
  • Pour 1/2 mixture in a greased 8" pan.
  • Combine the streusel ingredients, and sprinkle 1/2 of the streusel on the cake batter.
  • Add remaining batter on top, and sprinkle with the other 1/2 streusel.
  • Bake in a 350 degree oven for 25 minutes.
  • You may drizzle with a thin powdered sugar icing, if desired.

2 cups all-purpose flour
1 cup sugar
3 teaspoons baking powder
1 teaspoon salt
1/3 cup margarine or 1/3 cup butter, softened
1 cup milk
1 egg
1/2 cup chopped nuts
1/3 cup packed brown sugar
1/4 cup all-purpose flour
1/2 teaspoon ground cinnamon
3 tablespoons firm margarine or 3 tablespoons butter

Steps:

  • Heat oven to 350*.
  • Prepare streusel.
  • Mix all ingredients until crumbly.
  • Beat remaining ingredients in large mixer bowl on low speed 30 seconds.
  • Beat on medium speed, scraping bowl occasionally, 2 minutes.
  • Spread half of the batter in greased oblong pan, 13x9x2" or square pan, 9x9x2"; sprinkle with half the streusel.
  • Top with remaining batter; sprinkle with remaining streusel.
  • Bake until wooden pick inserted in center comes out clean, 35-40 minutes.

3 tablespoons sugar, divided
1/2 cup milk
1 tablespoon applesauce
1 tablespoon lemon juice
3 teaspoons grated lemon zest, divided
1/4 teaspoon almond extract
1 1/2 cups all-purpose flour, divided
2 teaspoons baking powder
1/2 teaspoon salt
2 cups raspberries
2 tablespoons butter

Steps:

  • Preheat oven to 375.
  • Beat egg in large bowl. Add 1/2 cup sugar, milk, apple sauce, lemon juice, 2 tsp lemon zest, and almond extract; mix thoroughly.
  • Add 1 cup flour, baking powder and salt; stir, being careful not to overmix.
  • Pour into greased 8x8 pan.
  • Add berries over batter.
  • Mix remaining 1/2 cup flour, 3 tbs sugar, 1 tsp lemon zest. Cut in Butter. Sprinkle mixture over berries.
  • Bake 25 to 30 minutes.
  • ENJOY!

1 box yellow cake mix
1 1/2 c water
2 Tbsp vegetable oil
2 eggs
1 small box (3.4 oz) instant lemon pudding
STREUSEL MIXTURE:
1/2 c brown sugar
1/2 c flour
1/4 c butter, cold

Steps:

  • 1. Mix together cake mix, water, oil, eggs and lemon pudding mix. Beat for 2 minutes.
  • 2. Spread half of the cake batter into a 15x10x1 inch greased pan.
  • 3. Sprinkle with the half of the streusel mixture. Repeat with remaining batter and streusel mixture.
  • 4. Bake at 350 for 30 minutes or until wooden toothpick inserted in center comes out clean.
  • 5. Remove from oven. While still warm, drizzle with powdered sugar glaze.
