HOMEMADE RED HOT SAUCE

Homemade Red Hot Sauce image

Provided by Food Network

Categories     condiment

Time 35m

Yield 2 cups

Number Of Ingredients 7

20 tabasco or serrano chiles, stemmed and cut crosswise into 1/8-inch slices, or 12 very ripe red jalapenos (about 10 ounces)
1 1/2 tablespoons minced garlic
3/4 cup thinly sliced onions
3/4 teaspoon salt
1 teaspoon vegetable oil
2 cups water
1 cup distilled white vinegar

Steps:

  • Combine the peppers, garlic, onions, salt and oil in a non-reactive saucepan over high heat. Saute for 3 minutes. Add the water and continue to cook, stirring occasionally, for about 20 minutes, or until peppers are very soft and almost all of the liquid has evaporated. (Note: this should be done in a very well-ventilated area!) Remove from the heat and allow to steep until mixture comes to room temperature. In a food processor, puree the mixture for 15 seconds, or until smooth. With the food processor running, add the vinegar through the feed tube in a steady stream.
  • Taste and season with more salt, if necessary. (This will depend on the heat level of the peppers you use as well as the brand of vinegar used.) Strain the mixture through a fine mesh sieve and then transfer to a sterilized pint jar or bottle and secure with an airtight lid. Refrigerate. Let age at least 2 weeks before using. Can be stored in the refrigerator for up to 6 months.

NEW MEXICO RED CHILE SAUCE

New Mexico Red Chile Sauce image

Red chile is a staple of the New Mexican and West Texan diet, and this recipe is my grandmother's recipe. When I make it, it reminds me of the smells of her cooking in her kitchen, fresh corn tortillas, beans, and red chile peppers. You can kick up the spiciness by adding more arbol chile pods.

Provided by Cookincwgrl

Categories     Side Dish     Sauces and Condiments Recipes     Sauce Recipes

Time 43m

Yield 4

Number Of Ingredients 10

2 tablespoons canola oil
20 New Mexico dried red chile pods, stemmed and seeded
10 dried chile de arbol peppers, stemmed and seeded
1 large yellow onion, chopped
3 cloves garlic, chopped
1 quart chicken stock, or more if needed
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon dried oregano
1 tablespoon honey

Steps:

  • Coat the bottom of a heavy saucepan with oil; add chile pods. Toast over medium heat until aromatic, about 3 minutes.
  • Stir in onion and garlic; cook and stir until fragrant, about 5 minutes. Add enough chicken stock to allow pods to float; simmer until they develop the texture of wet leather, 5 to 7 minutes.
  • Fill blender halfway with chile-stock mixture. Cover and hold lid down with a potholder; pulse a few times before leaving on to blend. Pour into a bowl; repeat with remaining mixture. Strain sauce through a fine mesh strainer into a saucepan over medium heat. Discard solids.
  • Stir cumin, coriander, and oregano into the saucepan; add honey. Cook until sauce is thick and evenly coats the back of a spoon, about 10 minutes.

CILANTRO-CHILI PEPPER SAUCE

Cilantro-Chili Pepper Sauce image

I am overrun with wild cilantro in my back yard. Literally, it feeds my compost bin more than my family even though we use it in everything. This sauce (perhaps more of a pesto) is fabulous on anything but the obvious choices are chicken and tuna. Enjoy.

Provided by Jeff

Categories     Side Dish     Sauces and Condiments Recipes     Sauce Recipes

Time 1h5m

Yield 8

Number Of Ingredients 11

3 fresh red chile peppers
1 tablespoon sesame oil
3 cloves garlic, minced
1 pinch kosher salt
½ cup malt vinegar
2 tablespoons fish sauce
2 tablespoons brown sugar
3 tablespoons soy sauce
1 teaspoon lime juice
1 bunch cilantro, chopped
1 green onion, chopped

Steps:

  • Cut the stem end off of the chile peppers, and remove the seeds using a thin knife, otherwise leaving the peppers whole. Place the peppers into a skillet, and toast over medium-high heat, turning frequently, until the skins of the peppers have blackened and loosened, about 10 minutes. The peppers are ready when 1/4 of the skin has blackened. Remove the peppers, place into a small bowl, and cover with plastic wrap. Allow to cool and steam for about 15 minutes, then remove and discard the skins. Chop the peppers, and set aside.
  • Heat the sesame oil in the skillet over medium heat. Stir in the garlic, and cook for 2 minutes to soften, then increase heat to medium-high, and stir in the chopped peppers and salt. Cook and stir until the mixture is hot and sizzling, about 1 minute. Pour in the vinegar, brown sugar, and fish sauce. Bring to a boil, then reduce heat to medium-low, and allow to simmer for 10 minutes.
  • Scrape the mixture into a blender, and add the soy sauce, lime juice, cilantro, and green onion. Puree until smooth. Serve immediately.

CANNED HOT PEPPER SAUCE

Canned Hot Pepper Sauce image

Use this delicious hot pepper sauce as a condiment for soups, pasta, sandwiches, tacos, eggs . . . pretty much anything to which you want to add a hot, spicy flavor.

Provided by Susan Vinskofski

Categories     Condiment

Time 1h

Number Of Ingredients 12

1/2 lb sliced peppers (a mixture of sweet and hot, seeds removed from hot peppers if you prefer milder flavor)
1/2 cup apple cider vinegar
1/2 cup white vinegar
1/2 cup chopped onion
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
1/2 teaspoon ground mustard
1/2 teaspoon ground turmeric
1/2 teaspoon sea salt
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
2 teaspoons sugar

Steps:

  • In a medium stockpot, combine the peppers, cider vinegar, white vinegar, onion, garlic powder, cumin, mustard, turmeric, salt, clove, allspice, and sugar.
  • Put the lid on the pot, bring the mixture to a simmer over medium heat, then simmer the sauce for 20 minutes.
  • While the hot sauce is simmering, prepare the water bath canner. Fill it halfway with water and put it on the stove to simmer. Check two half-pint jars for any nicks or cracks, wash them in hot soapy water and rinse them in hot water. Keep the jars hot until it's time to use them. Wash the lids in hot soapy water and rinse them.
  • After 20 minutes, remove the pan from the heat and puree the pepper mixture. You can use an immersion blender or ladle the mixture into a blender to puree it.
  • Pour or ladle the hot sauce into the prepared jars, leaving 1/4 inch of headspace. Remove the air bubbles with a bubble remover tool or chopstick and recheck the headspace. Wipe the rims with a clean cloth, put the lids on the jars and screw on the bands. Place the jars in the prepared hot water bath canner, making sure that the jars are covered by at least an inch of water.
  • Put the lid on the canner and bring the water to a full rolling boil. Process the jars for 10 minutes, adjusting for altitude, if necessary.
  • Arrange a folded towel on the counter or table. Remove the jars, using a jar lifter, and place them on the towel. Let the jars cool for at least 12 hours.
  • Once the jars are cooled, remove the bands and check the seals. If any jars failed to seal, put the in the refrigerator to use first. Wipe the jars with a clean cloth and store them for up to a year.

  • Serrano Pepper. This is a slightly hotter pepper that is harvested while it is still green. It’s one of the hottest chilies with a milder flavor. They are used in the southwest USA but you can also find them in markets.
  • Cayenne Peppers. This is a chili pepper that has an iconic chili “finger” shape, with a curved, pointy end. The spiciness ranges from mild to hot – it actually depends on the growing conditions and what type it is as to how spicy the pepper is.
  • Pequin Chili Peppers. This is a rectangular shaped chili: short and squat around an inch long. They are hot chili peppers that are actually harder to find than others because the cultivation is limited.
  • Jalapeno. This is one of the most common chili peppers. They are smooth, dark green or red chilies that vary from medium hot to very hot. They are commonly used in Mexican cuisine and are popular worldwide.
  • Tien Tsin Chili. This is a hot chili pepper from northern China, that is used mostly in Chinese dishes like Szechuan or Kung Pao Chicken. These chili peppers are also known as Chinese Red Peppers.
  • Paprika. You can always use paprika. A fresh, good quality big red paprika. For 10 dry chilies use 2 paprikas and add according to your hotness level taste.
  • Cayenne Chili Pepper. Another substitute is the cayenne chili pepper – if you can’t find it as a whole pepper, you can use the dried one as well or simply crushed as red pepper flakes.
  • Dried Poblano Peppers. There is one more dried pepper that I would recommend and that is the dried form of poblano peppers. They are usually low in heat, sweet with a smoky flavor.
