MARBLED DIPPED APPLES

Steps:
- Line a baking sheet with wax paper. Insert ice pop sticks into the cores of the apples and set aside.
- Place the colored chocolate discs into separate glass bowls and melt in the microwave according to package instructions. Drizzle a few tablespoons second and third colors in to the base color; do not stir.
- One at a time, fully dip the apples in the base color, twisting and turning as you remove them to create marbled patterns. Allow the excess to drip off, then set on the prepared baking sheet. Refrigerate the dipped apples for at least 15 minutes to harden.
CHOCOLATE COVERED APPLES
Steps:
- Twist off the stems from the apples and push a Popsicle stick down into the core. Put the apples in the fridge while preparing the chocolate; they'll coat better if they're cold.
- Slowly melt the chocolate in a double boiler over hot water or in a microwave set on high for 2 minutes, stirring halfway through the heating time to smooth it out. Remove from the heat and stir until completely melted and warm, not hot. Dunk each apple into the chocolate, allowing the excess to drip back into the bowl. Roll the apples around in the chocolate, turning with the stick, so it's coated all the way up to the top. Use a spoon to baste any hard to get spots.
- Put the desired coating in a separate bowl and roll the dipped apple around so it is completely covered. Set the chocolate dipped apples on a cookie sheet lined with wax paper. Refrigerate until the chocolate is set.
MINI CHOCOLATE DIPPED CARAMEL APPLES WITH VANILLA SWIRLS
Steps:
- Line a baking sheet with a silicone mat or parchment paper. Remove the stem from each apple and press a wooden stick into the top. Put the caramels and milk in a microwave safe bowl. Microwave for 4 minutes, stirring once. Add more time in 30 second increments, if needed.
- Roll each apple quickly in the caramel sauce until well coated and shake to remove the excess. Arrange on the baking sheet to set. Cool for 30 minutes.
- Melt the chocolate candy melts in a double boiler. Dip the cooled apples into the chocolate and return to the baking sheet. Cool for 30 to 45 minutes.
- Fill a microwavable squeeze bottle halfway with colored vanilla flavored candy melts and microwave it in 30 second increments, squeezing the bottle to distribute the heat. Drizzle on the cooled apples and decorate with a bow when completed.
DOUBLE DIPPED APPLES
These are amazing and look like you spent all day making them. I've seen them for sale for over $15.00 each. But let's face it, I'm cheap, so I came up with an easy way to make them myself. I bring these every year to Thanksgiving, but they are a great treat anytime! Enjoy!

Steps:
- Wrap each apple in two sheets of caramel. (I find these in the produce section of my grocery store.).
- Place a candy stick into each apple.
- Set apples aside on waxed paper sheet from the caramel kit.
- Melt chocolate according to directions.
- Dip apples into the melted chocolate coating completely.
- Let excess chocolate drip off.
- Dip apple into topping of your choice.
- Let cool on the paper sheets from caramel wraps.

Steps:
- Insert popsicle stick into stem of each apples; set aside.
- Heat caramels and water in large saucepan over medium-low heat, stirring until caramels are melted and smooth.
- Dip apples into melted caramel, spooning caramel over apples to coat.
- Roll in chopped cookies, pressing cookies gently into caramel.
- Place on waxed paper-lined baking sheet; let stand for 25 minutes or until caramel sets.
- Heat chocolate and oil in medium saucepan over low heat, stirring until melted and smooth; cool for 15 minutes.
- Drizzle over apples. Let stand until firm (refrigerate if needed).
- Store in refrigerator up to 2 days.

CHOCOLATE APPLES
Make these chocolate apples as a treat for a kids' party. Great for Bonfire Night or Halloween, cover in chopped nuts, sprinkles and honeycomb pieces

Steps:
- Put the chocolate in a heatproof bowl set over a pan of just simmering water, being careful that the bowl doesn't touch the water. Stir frequently for 10 mins until completely melted, smooth and shiny. Remove from the heat. Alternatively, heat the chocolate in short bursts in the microwave, stirring between each burst, until melted.
- Put the apples in a heatproof bowl and pour over boiling water from the kettle. Drain carefully, and wash under hot water to remove any residual wax on the skin. This helps the chocolate stick better. Pat dry with kitchen paper, remove the stalks and push a lolly stick or skewer in its place.
- Line a baking tray or large board with baking parchment. Hold the apples by their sticks and dunk into the melted chocolate. Use a spoon to coat the tops of the apples if you like. Once the apples are completely coated, hold over the bowl for a few seconds for excess chocolate to drip back into it, then place, stick pointing up, onto the prepared tray. Leave to set for a minute or two.
- Tip the decorations into separate bowls. When the chocolate on the apples is just starting to set but not fully firm, sprinkle the decorations onto the apples. Hold them on their side and rotate using the stick to completely cover. Place back on the tray and leave until completely set.
- If using the white and dark chocolate to decorate, heat each separately, as you did the milk chocolate in step 1, then leave to cool slightly. Melt the dark chocolate first, then when the chocolate apples are set hard, use a teaspoon to drizzle this over them, again holding the stick so the apple is on its side and rotating the apple. Have a sheet of baking parchment underneath to catch any drips. Place back on the tray and leave to set, then repeat the process using the white chocolate. Will keep in an airtight container in a cool place for two days.

- Give the apples a quick bath in boiling water with a touch of distilled vinegar. Bring 4 cups of water to a boil using a kettle. Place the boiling water in a bowl with the distilled vinegar. Dip the apples for 5 seconds, then use a slotted spoon to remove. Dry the apples thoroughly with a kitchen towel, then remove the stems and insert a sturdy stick through the center.
