FULLY LOADED DIRTY CHIPS
We love these fully loaded dirty chips on a Friday night after a busy week at work. Just like you'd get at the pub with a pint, but far better for you than you might think.

Steps:
- Cook the oven chips according to the packet instructions.
- While the chips are cooking, cut the bacon into small pieces. Fry in a splash of oil until crispy.
- Allow the bacon to cool on a piece of kitchen paper on a plate. The kitchen paper absorbs the fat.
- When the chips are cooked, remove from the oven and transfer to a small, oven proof dish. Cover with the grated cheese and return to the oven for a couple of minutes, just long enough to melt the cheese.
- When the cheese has melted, remove the dish from the oven. Top the chips with the bacon pieces, the sour cream and the chopped spring onion. Enjoy immediately!

Steps:
- Preheat the oven to 220C/200C Fan/Gas 7. Half-fill a large saucepan with water and bring to the boil. Cut the potatoes in half and then into slender wedges or chips. Add to the water and return to the boil. Immediately drain in a colander and leave to stand for 5 minutes.
- Tip the potatoes back into the saucepan and toss with the olive oil, paprika and salt. Scatter over a baking tray in a single layer and bake for 15 minutes. Turn with a spatula and cook for a further 5-10 minutes, or until tender and golden-brown.
- To make the salsa, mix together all the salsa ingredients in a small bowl and season with a good pinch of salt and lots of black pepper.
- Transfer the chips to a shallow ovenproof dish. Scatter the roasted pepper and jalapeño peppers on top and sprinkle with the cheese. Return to the oven for 5 minutes, or until the pepper is hot and the cheese has melted.
- Top with sliced avocado, the tomato salsa and soured cream. Scatter extra coriander on top and serve with lime wedges for squeezing.

Steps:
- Preheat the oven to 220*C/425*F/ gas mark 7. Line a baking tray with some foil and spray with low fat cooking spray. Toss the frozen chips with the Cajun seasoning and the Worcestershire sauce. Spread them out on the baking sheet. Bake for of the baking time according to the package directions. Remove from the oven. Spray a large baking dish, or iron skillet with some low fat cooking spray. Pile the baked chips into the dish. Sprinkle with the grated cheese, then the chopped peppers, spring onions and bacon bits. Return to the oven briefly to melt the cheese and warm things up. Serve immediately. Note - I don't like things overly spicy so I err on the side of caution when it comes to using Cajun spice People can always add more at the table it they want to blow their socks off! Ranch dressing is also nice with these for dipping.

Steps:
- Heat the oven to its highest setting. For the fries, pour the sunflower oil into a baking tray and put in the oven for 15 mins to get hot. Reduce the temperature to 220C/200C fan/gas 8. Tip the fries into the oil, turn to coat, and cook for 20 mins. Add the Cajun spice mix and return to the oven for 15 mins until golden and crisp.
- Meanwhile, make the mayo by mixing all the ingredients together in a bowl. Set aside.
- For the chimichurri-style sauce, blitz all the ingredients together until you have a smooth sauce, then season to taste. Set aside.
- Heat a griddle pan over a high heat. Rub the steaks with salt only (pepper will catch and burn), put the steaks in the pan and cook for 3 mins on each side (for medium). Remove from the pan, cover with foil and leave to rest for 10 mins.
- Halve the ciabatta rolls, toast in the same griddle pan that you cooked the steak in, cut-side down, and spread one half of each with the chipotle mayo. Slice the steak into strips, divide between the ciabattas, drizzle over the chimichurri and add a little rocket. Serve with the fries and any leftover mayo.
