750 gms fish slices
1 teaspoon chili powder
2 teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon ginger garlic paste
1/2 teaspoon garam masala
2 tablespoon besan (gram flour)
salt to taste
oil for frying

Steps:

  • Wash the fish thoroughly and add a teaspoon of turmeric and salt and rinse again. This helps in removing raw smell from the fish considerable.
  • Make a batter of chilli powder,remaining turmeric powder, coriander powder, ginger garlic, garam masala. besan (gram flour)and salt with little water.
  • Dip the fish in the batter one by one and keep aside. Marinate for 30 minutes or you can skip it.
  • Heat oil in a skillet and fry fish until brown, turning once and frying on the other side till brown. Serve hot with lemon wedges and onion.

Vegetable oil, for frying
1 1/2 to 2 pounds fresh cod
Salt and pepper
1 /2 cup all-purpose unbleached flour
2 large eggs
2 tablespoons cold water, a splash
2 cups plain bread crumbs
1/2 teaspoon dried mustard powder
1/4 teaspoon cayenne pepper, a few pinches
Wedged lemons and malt vinegar for topping

Steps:

  • Pour 2-inches of vegetable oil into a large skillet. Place skillet over large burner and heat oil over medium high heat. To check if the oil is hot enough, drop in 1-inch cube of white bread. The bread should brown in a 40 count.
  • Cut cod into 4 servings, 6 to 8-ounce portions and season with salt and pepper. Place a couple of scoops of flour in a pie tin. Combine egg and water in second tin. Season plain bread crumbs and mustard and cayenne in the third tin. Coat fish in flour, then egg, and then bread crumbs. Gently set coated fish into hot oil and fry 5 minutes on each side until medium golden brown in color.
  • When the fish is evenly golden all over, remove and drain on brown paper sacks.
  • Suggested: 3 disposable pie tins .

3/4 cup plus 3 tablespoons unbleached all-purpose flour
3/4 cup cornstarch
Kosher salt and freshly ground pepper
1 1/4 teaspoons baking powder
1 1/2 cups club soda or seltzer
3 pounds skinless freshwater fish fillets (1/2 to 1 inch thick), such as trout, perch, or walleye, cut into 2-inch pieces
Potato rolls, sliced tomatoes, pickles, potato chips, and lemon wedges, for serving
Tartar Sauce with Pickled Jalapenos, for serving

Steps:

  • Heat oil in a large, heavy pot (preferably cast iron) to 365 degrees. In a medium bowl, whisk together flour, cornstarch, 1 teaspoon salt, and baking powder. Gently whisk in club soda; do not overmix (there may be some lumps). Let stand 15 minutes.
  • Pat fish very dry; season with salt and pepper. Working with a few pieces at a time, dip fish in batter, then transfer directly to hot oil with tongs. Cook until crisp and golden brown all over, about 3 minutes. (Be sure to keep oil temperature between 345 degrees and 365 degrees.) Transfer to paper towels to drain. Serve fish hot on rolls, with tomatoes, pickles, chips, and tartar sauce, and lemon wedges alongside.

8 medium white fish fillets or 4 large white fish fillets
110 g plain flour or 110 g self raising flour
1/4 teaspoon salt
1 egg
1 tablespoon butter, melted
150 ml milk
to taste lemon wedge (to garnish)

Steps:

  • Half-fill a deep pan with melted fat or oil. Heat until a faint haze rises from it (or until a bread cube sinks to the bottom of the pan, rises to the top immediately and turns golden in 50 seconds).
  • Sift the flour and salt into a bowl.
  • Beat to a smooth batter, unbeaten egg, butter and milk. Then add the flour and salt mixture.
  • Coat 2 pieces of fish with batter.
  • Lift into the pan with a fork or kitchen tongs.
  • Fry until crisp and golden, allowing about 6-8 minutes for large pieces and 4-5 minutes for medium.
  • Remove from the pan and drain on absorbent kitchen paper.
  • Repeat with the remaining fish.
  • Garnish with lemon wedges.

  • Choose the Right Fish. Over the years, I’ve heard several people comment that they don’t like the taste of striped bass. My first question is always, “How do you cook it?”
  • Season the Fillets. A lot of recipes out there call for seasoning the flour, the egg wash, and/or the breading with salt and other seasonings which, frankly, makes no sense.
  • Dip the Fillets in Flour, Egg, and Breadcrumbs. Applying the breading is 3-step process. The first step is to dust both sides of the fillet in flour until evenly coated.
  • Place the Fillets in the Fridge. This, I believe, is crucial. After breading the fillets, I always pop them in the refrigerator for at least a half hour.

  • Picking the Right Cooking Oil. You want one that has a high smoking point. Olive oil does not, and the same with butter. Stick with canola, vegetable, or peanut oil.
  • Flip the Fried Fish. Did you know there is a kitchen tool designed specifically for flipping fried fish? A fish spatula should be your weapon of choice for this task.
  • Place the Fried Fish on a Drying Rack. When your fried fish is ready to come out of the pan, it should be placed on a metal wire drying rack to rest, never on paper towels!
