6 small red potatoes
1 tablespoon thinly sliced green onion
2 teaspoons butter
1/4 cup heavy whipping cream
2 to 3 teaspoons minced fresh dill
1/8 teaspoon salt
Dash pepper

Steps:

  • With a vegetable peeler, remove a strip of peel around the middle of each potato. Place potatoes in a saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender., Meanwhile, in a small saucepan, saute onion in butter until tender. Add the cream, dill, salt and pepper. Reduce heat; simmer for 4-5 minutes or until sauce is thickened. Drain potatoes; drizzle with sauce and toss gently.

1 pound fingerling potatoes
Kosher salt
1 tablespoon unsalted butter
1 tablespoon finely chopped fresh dill

Steps:

  • Place the fingerling potatoes in a medium pot, add cool water to cover by 1 inch, and bring to a boil over high heat. Add salt to taste, reduce the heat, and simmer for 10 to 15 minutes, until the potatoes are fork-tender. Remove the pot from the heat and drain off the water. Toss the potatoes well with the butter and the chopped dill, melting the butter. Season with additional salt to taste, and serve.

6 medium red potatoes
4 tablespoons butter
1/2 teaspoon dried dill
salt and pepper

Steps:

  • Wash and scrub your potatoes.
  • Cut into 1/2 inch slices or cubes (whichever you prefer) but leave the skins on.
  • Place potatoes into a large pot of salted boiling water and let cook for about 8- 10 minutes until potatoes are soft but not mushy and they hold there shape.
  • Drain and rinse with cold water to stop the cooking process.
  • Place your butter in a pan and melt butter with a medium-high heat.
  • Add your dill and mix well.
  • Place your potatoes in your pan and stir until potatoes are evenly coated with butter/dill mixture.
  • Saute another 5 to 10 minutes.
  • You can add more butter or dill depending on your tastes.
  • Season with salt and pepper.
  • Enjoy!

2 tablespoons melted butter
2 tablespoons flour
1 cup milk
1/2 cup mayonnaise
1/4 teaspoon pepper
1/4 teaspoon salt
1/4 teaspoon dry dill weed

Steps:

  • Boil potatoes until almost done, then peel and dice.
  • Spread potatoes out evenly into casserole dish.
  • Mix together butter, milk and flour and bring to a boil, whisking constantly.
  • Cook for 1 minute more, then remove from heat.
  • Add mayonnaise and rest of ingredients and mix.
  • Pour mixture over potatoes in casserole.
  • Sprinkle paprika and additional dill on top, if desired.
  • Bake uncovered for 30 minutes.

1 ½kg Desirée potatoes , cut into roughly 1in chunks
3 tbsp olive oil
1 onion , as thinly sliced as you can
small bunch dill , roughly chopped

Steps:

  • Bring a large pan of salted water to the boil. Add spuds, bring back to the boil, then cook for 3 mins. Drain really well, leave in the colander for 10 mins to steam dry. Toss with the oil, onion and seasoning in a large roasting tin.
  • Heat oven to 220C/200C fan/gas 7 and put in the potatoes. Roast for 30 mins, stirring halfway, until golden and crunchy. Stir in the dill and put back in the oven for 5 mins, then serve.

small bunch of dill
50g unsalted butter, at room temperature
1 large garlic clove, crushed or finely grated
1.65 kg - 1.8 kg whole chicken
1 small unwaxed lemon, halved
800g red-skinned potatoes, peeled and cut into 2cm chunks
1 tbsp olive oil

Steps:

  • Heat the oven to 200C/180C fan/ gas 6. Cut the stems from the dill and set aside, then roughly chop the leaves. Keep a small handful of the dill leaves to garnish, then mix the rest with the butter and garlic.
  • Carefully lift the skin of the chicken breasts and legs, and push about two-thirds of the garlic butter under the skin. Spread it over the meat, then spread the remaining butter over the skin and season. Put the chicken in a large roasting tin and squeeze over the lemon halves, then put them into the cavity along with the dill stalks. Roast the chicken for 20 mins.
  • Reduce the oven to 180C/160C fan/gas 4. Scatter the potatoes around the chicken, drizzle over the oil and sprinkle with a little salt. Turn the potatoes so they're coated in the oil and any roasting juices from the chicken. Roast for another 1 hr, turning the potatoes occasionally until brown and the chicken is completely cooked through. Sprinkle over the reserved dill leaves and serve.
