Poached salmon is wonderfully moist and delicate. Poach it in white wine or simply in water, then serve it warm with hollandaise sauce or cold with tartar sauce.

1 cup dry white wine
1 bunch dill weed
2 (6 oz) wild salmon fillets (skin-on, pin bones removed with tweezers)
1/2 teaspoon Diamond Crystal kosher salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder

Steps:

  • Pour the wine into a 12-inch lidded skillet. Bring to a simmer over medium heat.
  • Place the dill weed in the skillet, reserving a few sprigs for garnish. Place the salmon fillets on top of the dill, skin side down. Sprinkle the salmon with kosher salt, black pepper, and garlic powder.
  • Cover the pan tightly with the lid (or with foil).
  • Poach the salmon until no longer raw in the thickest part, 5-10 minutes, depending on its thickness. It should reach an internal temperature of 145°F.
  • Serve the salmon immediately (with hollandaise sauce if you wish), or chill for at least 2 hours and serve cold, with mayonnaise or tartar sauce.

6 peppercorns
4 sprigs fresh dill

Steps:

  • For the salmon: Combine the wine, water, bouillon, peppercorns, dillweed, bay leaves, celery, and lemon in a skillet. Bring to a boil; cover.

  • Add the salmon to the mixture in the skillet and cook for 10 minutes or until the fish flakes easily.

Few stalks celery, sliced, if desired
1/2 pound carrots, peeled, sliced, if desired
1 small bunch parsley
2 cups dry white wine
Water
Salt
Black peppercorns
4 (6 to 8-ounce) center cut, skinless, salmon fillets

Steps:

  • Combine all poaching liquid ingredients in a medium saucepan. Bring the poaching liquid to a very low simmer and cook 30 minutes. Skim the top as needed to remove any foam from the surface. Lay some cheesecloth over the top of the poaching liquid, making a bed for the fillets. Submerge salmon in poaching liquid and cook for 8 to 10 minutes.
  • 1 English cucumber, unpeeled, roughly chopped
  • Fronds from 1 bunch dill (about 1 cup)
  • 1/2 small red onion
  • 2 large lemons, juiced
  • 1/3 cup mayonnaise
  • 2 tablespoons extra-virgin olive oil
  • 1/3 cup yogurt
  • Salt and freshly ground black pepper
  • Combine first four ingredients in a blender and puree. Gradually blend in mayonnaise, oil and yogurt and then season, to taste, with salt and pepper.
  • Serve poached salmon with side of sauce.

1 1/2 cups white wine

Steps:

  • Cut salmon fillets into 4 portions.

3 cups water
1 lemon, sliced
1 tablespoon black peppercorns
10 juniper berries, crushed
3 bay leaves
1 stem fresh basil
3 fronds fennel
1 (2 1/2 to 3 pound) salmon fillet, skin on
Olive oil
2 lemons, sliced for garnish
1 bunch dill, for garnish
Dill Dijon Whipped Cream, recipe follows
1/2 cup heavy cream
1 tablespoon Dijon mustard
2 teaspoons dill, chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • Put the Chardonnay, water, lemon, peppercorns, juniper berries, bay leaves, basil and 2 fennel fronds into a large saucepan. Place the pan over high heat and bring the liquid to a boil. Reduce the heat to low and let the liquid simmer for 10 minutes. Remove from the heat, discard the fennel and basil and let cool.
  • Put the salmon into the foil pan and top with the remaining fennel frond. Pour the poaching liquid over the salmon. Cover the pan with foil and seal it tightly. Place the pan into the preheated oven for 20 minutes. Remove the foil halfway through the cooking process and baste the salmon. Reseal and finish poaching. Remove the pan from the oven, remove the foil and brush the top of the salmon with the poaching liquid to remove any white bits.
  • When the pan is cool enough to handle place it over your sink. With a sharp knife, make a few punctures in the bottom of the pan to let the poaching liquid drain. Place the pan directly into the second pan to prevent dripping. Brush the salmon with olive oil, cover with foil and refrigerate overnight.
  • To serve, cut the end off the foil pan and, with a spatula, slide the salmon onto a platter. Fan the lemon slices out along the top and garnish the sides with the dill. Serve with Dill Dijon whipped cream on the side.
  • Pour the heavy cream into a large bowl and, using an electric mixer on high, beat until soft peaks form. Add the mustard and continue to beat on medium for 1 minute. Fold in the dill and season with salt and pepper, to taste.
  • Transfer to a decorative bowl for serving.

3 ½kg whole salmon (ask your fishmonger to clean and gut it)
olive oil , for greasing
1 small onion , very thinly sliced
4 bay leaves
20g pack dill
6 tbsp dry white wine
3 ripe avocados , preferably Hass
200ml mayonnaise
zest and juice 1 large lemon
½ cucumber , peeled, deseeded and diced
bunch watercress , lemon wedges, thick cucumber slices, fresh dill (optional)

Steps:

  • Heat oven to 150C/fan 130C/gas 2. Put the salmon on a large sheet of oiled extra-wide foil (this will stop it from sticking later). Put the onion, bay leaves and half the dill in the body cavity, spoon over the wine, season with salt and black pepper, then loosely bring the foil round the salmon and seal well to make a parcel. Lift onto a baking tray, then bake for 2 hrs. Take from the oven, then leave to cool for about 10 mins, still in its parcel.
  • Meanwhile, whizz the flesh from the avocados (with a hand blender or in a food processor) with the mayo, lemon juice, zest and seasoning. Tip into a bowl. Chop the remaining dill, stir in with the cucumber, then transfer to a serving bowl. Chill for up to 3 hrs.
  • Unwrap the salmon, then strip away the skin and fins. Personally, I don't take the skin from the bottom of the fish if I am serving the salmon warm, as you risk breaking the fish up as you turn it over. It is more robust when it is cold, so in this case remove the skin from both sides. You can leave the head on or take off at this stage. Carefully lift onto a platter, then garnish with watercress, cucumber, lemon wedges and dill, if using.
  • To serve, remove the fish in chunky fillets. When all the fish has gone from the top fillet, remove the onion and herb flavouring, pull away the bones, then remove portions of the bottom fillet, leaving the skin behind. Eat with the avocado mayo, warm buttery new potatoes, and salads or green beans.

1 lemon
¼ cup fresh dill (minced)
1 pound asparagus (woody ends trimmed)
2 tablespoons nonfat plain Greek yogurt
2 tablespoons light sour cream
1 teaspoon fresh dill (minced)
1 teaspoon lemon zest
1 tablespoon lemon juice
salt (to taste)
black pepper (to taste)

Steps:

  • Preheat the oven to 400° F and line a rimmed baking sheet with parchment paper or a silicone baking mat.
  • Place the salmon on the baking sheet and season all the fillets with salt and pepper, to taste.
  • Zest the lemon, reserve it, and cut 4 slices off of one end of the lemon.
  • Reserve 1 tablespoon of dill, then spread the rest of it over the tops of each fillet, and place a lemon slice on each.
  • Pour enough water on the bottom of the sheet tray to cover the salmon about ½ of a centimeter.
  • Lay the asparagus around the salmon fillets and season it with salt and pepper.

  • If the salmon is skin-on, gently insert a fish turner or straight spatula between the skin and the flesh, and easy slide the flesh away from the skin. The skin will stay on the sheet tray.

1 kg thawed salmon fillet, with skin on 1 side (may substitute with steelhead trout)
1 -1 1/2 tablespoon pickled capers (can be found in grocery store located in same aisle as pickles)
1 tablespoon chopped dill weed (use fresh or frozen but not dried)
1/4 cup thinly sliced onion
1 tablespoon lemon juice or 1/2 fresh lemon, peeled and sliced
salt and pepper

  • Pre-heat oven to 350 degrees fahrenheit.
  • Remove any visible bones and cut off the head and tail (if it hasn't already been done for you) If using a poacher place the tray in the poacher, add 1/4 cup water and place your salmon in the tray skin side down.
  • If you do not have a fish poacher (how many of us do?) you can use any oven safe pan large enough to hold your fish.
  • Just crumple and crinkle a medium sized sheet of tin foil and place your fish on the foil skin side down.
  • Add enough water to just come to the edge of the foil without spilling onto the fish (approx 1/3 cup).
  • On top of the fish sprinkle all ingredients.
  • Cover with lid or tin foil.
  • Cook for 12-20 min's.
  • For RARE fish, cook just until white liquid emerges from fish (this is the cooked fish oil).
  • It will be pinky white on the outside and peachy pink inside.
  • For more well done fish, cook until fish is a pinky white color all the way through.
  • Place on a platter to serve.
  • Leave onions, capers and dill on the fish.
  • Slice lemons on the side for those who like fresh lemon juice.
  • This salmon is great served with rice and steamed veggies or a salad.

COLD POACHED SALMON WITH DILL SAUCE

  • For Sauce:
  • Place cornichons, dill and juice in small bowl and stir to blend. Add crème fraîche and stir gently just until combined; do not overmix or sauce will thin out. Season with salt and pepper. (Can be made 2 days ahead. Cover; chill.)

Poached Salmon image

Poached salmon is delicate, moist, and cooks in minutes. Perfect for dinner parties and fast weeknight dinners.

2 tablespoons white vinegar
1 tablespoon honey
2 teaspoons kosher salt
4 (6-ounce) center cut salmon fillets (skin on)
water
12 sprigs fresh dill (plus additional chopped dill for serving)
6 whole peppercorns
1 bay leaf
Cracked black pepper (lemon wedges (for serving))

Steps:

  • Fill a saute pan wide enough to hold the salmon in a single layer without overlapping the fillets and tall enough to cover the salmon with water about 1/4 of the way to the top. Add the vinegar, honey, and salt. Whisk to combine.
  • Carefully lower the salmon fillets into the pan in a single layer. Add more water so that they are just barely covered.
  • Scatter the dill, peppercorns, and bay leaf over the top.
  • Bring the water to a gentle boil over medium-high heat. Simmer the salmon, adjusting the heat as needed so that you maintain a steady simmer but not a rapid boil. Let cook 2 minutes.
  • Check the temperature of the salmon using an instant read thermometer. It should be around 135 to 140 degrees F, no more (fish is considered cooked at 145 degrees F, but the temperature will continue to rise as it rests). If needed, cook it 1 to 2 minutes more. DO NOT overcook or your salmon will be dry.
  • With a wide spatula, gently lift the poached salmon out of the water and place it on a plate (discard the poaching liquid). Cover and let rest 4 minutes. Enjoy hot, sprinkled with additional chopped dill, cracked black pepper, and a squeeze of lemon as desired.

  • Dissolve the salt in the water and brine the salmon in the refrigerator for 30 minutes to 1 hour, depending on how thick it is. Move the salmon to a cutting board and pat dry with paper towels.
  • If you have a vacuum sealer, seal each portion of salmon in its own bag -- if you jam them all together they won't cook as well -- each with at least 1 tablespoon of butter; you can use more if you'd like. If you don't have a vacuum sealer, melt the butter in a pot large enough to submerge at least 1 piece of salmon. Turn the oven on to "warm" and put a baking sheet inside; this is for the cooked pieces of salmon to rest while you do the others. Of course, you could also melt a pound or so of butter and poach all of the salmon at once, but that gets expensive.
  • The easiest way to poach the salmon is to cook it sous vide for 20 to 45 minutes at 135°F -- the lower end of this spectrum will give you rare-on-the-inside salmon, the upper end will get you fully cooked but still luscious salmon. If you don't have a sous vide water oven., fill a large pot 3/4 full of water and heat it to the steaming point, about 150°F to 160°F. Don't let it simmer. Drop the vacuum-sealed salmon in the water, cover the pot and turn off the heat. Let them cook in the bags for 10 to 20 minutes. If you are doing the butter bath method, melt the butter over low heat. Place the salmon in the butter and let it cook gently for 10-20 minutes. Carefully lift it out with a spatula and move it to the preheated oven.
