MUSTARD VINAIGRETTE

Mustard Vinaigrette image

A generous spoonful of Dijon mustard makes this vinaigrette creamy and tart. Use the dressing with sturdy salad greens like romaine or with softer lettuces like Bibb lettuce or oak leaf. The dressing is too strong to work with baby salad greens or mesclun. It's also great with cooked vegetables like beets or broccoli and with grain salads.

PAN-ROASTED GREEN BEANS WITH DIJON VINAIGRETTE

Pan-Roasted Green Beans with Dijon Vinaigrette image

Roasting green beans in a hot pan concentrates their flavor so they hold their own with the Dijon mustard and lemon in the vinaigrette.

Provided by Brian Alberg

Categories     Salads & Sides

Time 48m

Number Of Ingredients 8

Zest and juice of 1 lemon
1 tablespoon apple cider vinegar
¼ cup whole-grain Dijon mustard
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
¼ cup plus 1 tablespoon extra virgin olive oil
½ medium red onion, thinly sliced into half-moons
1 pound green beans, stemmed

Steps:

  • In a small bowl, whisk together the lemon juice, vinegar, mustard, salt, and pepper. Whisk in ¼ cup of the olive oil and lemon zest and set the vinaigrette aside.
  • Heat 1½ teaspoons of the olive oil in a large skillet over medium-high heat. Add the red onion and cook until golden, 7 to 9 minutes. Transfer to a bowl and set aside.
  • Return the pan to the heat, add the remaining 1½ teaspoons of olive oil, and spread out the beans in a single layer as much as possible. Allow the beans to cook without moving until they begin to blister and start to turn brown in spots. Stir and continue to cook to the desired tenderness, 8 to 10 minutes. Just before turning off the heat, add the onion back to the pan and stir to combine.
  • Remove the pan from the heat and pour the vinaigrette directly into the pan. Stir to combine, then let stand for 10 to 15 minutes so the beans can absorb some of the dressing. Serve warm or make ahead and serve as a cold salad.

TOMATO SALAD WITH MUSTARD VINAIGRETTE

Tomato Salad with Mustard Vinaigrette image

A staple of French country cooking, Tomato Salad with a classic Dijon Mustard Vinaigrette. The perfect cold side on a hot summer day.

Provided by Cori Horton

Categories     Salad

Time 15m

Number Of Ingredients 9

3 - 6 ripe, fresh tomatoes
1/3 cup salad oil
1 tablespoon Dijon mustard, smooth
1 teaspoon grainy Dijon mustard
2 teaspoons red wine vinegar
2 medium shallots, 1 finely diced, 1 thinly sliced
1 clove garlic, finely diced
2 stems of parsley, finely chopped
salt & pepper to taste

Steps:

  • In a medium bowl combine minced shallots, garlic, red wine and mustard. Whisk to combine. Now slowly incorporate your oil, whisking briskly as you go until Dijon vinaigrette is smooth and opaque, not runny, broken and loose. Season to taste, reserve cold until ready to serve. Or, add ingredients to a good sized measuring cup and zip it with your immersion blender until creamy, about on minute. Add parsley and stir to combine, just before serving.
  • Toss tomatoes and thinly sliced shallots with vinaigrette, or simply arrange tomatoes on a platter and drizzle with Dijon Vinaigrette, reserving the remainder for the table.

ALMOST-EMPTY DIJON MUSTARD JAR VINAIGRETTE SALAD DRESSING

Almost-Empty Dijon Mustard Jar Vinaigrette Salad Dressing image

When your jar of Dijon mustard is pretty much at the end of the road, you can mix this dressing in the same jar. I approximated the amount of Dijon mustard for when you have a full jar, but basically you use the amount that is clinging to the bottom and sides of your almost empty jar! Simple and classic, this can be made and either served immediately or kept in the refrigerator for up to 3 months. When

DIJON MUSTARD

Dijon Mustard image

An easy-to-make, balanced coarse-ground Dijon mustard recipe to use for all of your sandwich, grilled burger, hot dog, and potato salad needs.

Provided by Bryce Coulton

Categories     Condiment

Time P2DT15m

Number Of Ingredients 5

8 tablespoons (80 grams) whole brown mustard seeds
7 ounces distilled white vinegar, divided
4 ounces white wine
1 tablespoon granulated sugar
1 1/2 tablespoons salt

Steps:

  • Soak and refrigerate mustard seeds: In a small plastic container or glass bowl (do not use metal), soak the mustard seeds in 5 1/2 ounces of the distilled white vinegar. Cover and set in the refrigerator for 12-24 hours. Soaking allows the mustard seeds to soften and plump up, which will make them break down easier during the blending process.
  • Strain the mustard seeds: Using a sieve, strain the mustard seeds, and discard any vinegar. The liquid will be too bitter to use.
  • Blend the mustard seeds: Place the strained mustard seeds in a blender. Add the remaining 1 1/2 ounces of distilled white vinegar, white wine, sugar, and salt into the blender as well. Blend at a low setting for 20 seconds, then slowly increase to a high setting and blend for 15 seconds. Scrape down the sides of the blender. The consistency of the mustard will have thickened slightly. Blend at low setting for 15 seconds, slowly increasing to a high setting and blend for 20 to 30 seconds. The consistency will be similar to a thick cake batter. If you prefer a smoother texture, blend for another 20 to 30 seconds at a medium to high setting.
  • Chilling and storing the mustard: Transfer the mustard to a glass jar or plastic container and cover and refrigerate for 24 hours. The mustard is quite bitter immediately after blending and needs time for the bitterness to diminish. It will keep for up to 6 months in the refrigerator.
