How to make the best, authentic Italian Marinara Sauce recipe from scratch, with organic San Marzano tomatoes, garlic and fresh basil.

2 X 28 oz cans San Marzano Tomatoes
1/2 yellow onion (-diced)
8 cloves garlic (-minced)
1 leaf bay
4 sprigs basil
1/3 c fresh basil leaves (- sliced or torn)
4 tbsp extra virgin olive oil
1 pinch sea salt (( or to your taste))

Steps:

  • Heat a heavy bottom large pot on medium low flame. Add a lug of olive oil and the diced onion with a pinch of sea salt. Cook for about 10 minutes until traslucent taking good care not to burn it.
  • Stir in the minced garlic and let it infuse the oil for about 30 seconds.
  • Use your hands and crush the tomatoes as you add them to the pot with the onion and garlic. Rustic chunks are what we are after.
  • Add the bay leaf and the 4 sprigs of basil then bring everything to a gentle simmer. Partially cover with a lid and cook down until reduced and thick to your liking. About an hour or so. Stir a few times making sure the sugars from the tomatoes don't stick to the bottom.
  • After the sauce has reduced season to taste with the sea salt. Discard the bay leaf and basil sprigs.
  • Finish with a drizzle of extra virgin olive oil and the reserved fresh basil. Serve with your favorite pasta to transfer to jars and refrigerate up to one week.

12 ounces tomato paste
3 teaspoons garlic, minced
2/3 cup finely chopped onion
4 tablespoons olive oil
4 tablespoons parsley flakes
2 teaspoons oregano
3 teaspoons salt
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes
3 tablespoons italian seasoning
3 tablespoons sugar
1/2 cup chicken broth
1/2 cup red wine
2 teaspoons dried basil

Steps:

  • Peel tomatoes and process smooth.
  • Sauté garlic in large pot in olive oil.
  • Add all other ingredients and simmer for 1 1/2 hours. Stir occasionally.
  • This recipe is approx yield of 80 oz.
  • If canning use canning salt otherwise this freezes nicely. I store in 20 oz containers.

  • In a large pot, heat the oil over a medium-high flame. Add the onions and garlic and saute until the onions are translucent, about 10 minutes. Steps:

Cook, stirring, for 30 seconds to a minute, until it begins to smell fragrant, and add the tomatoes and their juice, the sugar, salt, and basil sprigs. Stir and turn up the heat. When the tomatoes begin to bubble, lower the heat to medium and cook, stirring often, until thick and fragrant, 15 to 20 minutes, or longer if necessary. Remove the basil sprigs and wipe any sauce adhering to them back into the pan. Taste and adjust seasonings. Stir in the slivered basil.

I am vegan but occasionally I make a special pot for my husband who loves it when I add a ground link of Spicy Italian Sausage to simmer in the sauce and serve it with sausage on the side.

30 -35 roma tomatoes, sliced in half
1/2 cup water
1/2 cup fresh oregano
1 cup fresh basil leaf, lightly chopped (I love a lot of basil. You may want to do a little less)
1/2-1 cup sugar (to taste, I prefer it sweet too!)
1/4 teaspoon crushed red pepper flakes (to taste)
1/2 teaspoon fresh ground black pepper (to taste)
1/4 teaspoon salt (to taste)

Steps:

  • Wash all ingredients very well. Start with tomatoes and water over low heat in medium pot. Slowly stir in each ingredient and continue cooking and stirring for about 1/2 hour to an hour (at least, the longer/the better). If you can, refrigerate and reheat. I don't know why, but it taste better.
  • Great Additions: Artichoke Hearts, mushrooms, chopped onion, etc are just a few great additions you can add to this recipe! I have tried all of these just based on what I have in the kitchen at the time, and it always comes out great!
  • Note: This recipe is so versatile. Serve over pasta, I prefer linguini), vegetables, or even toasted crostini bread with a bit of mozzeralla on top. It can also be served cold over sliced toasted Italian bread as a bruschetta -- mmm.
  • Tip: I worked in a family owned Italian restaurant in high-school. They said to stir continually and never let the sauce boil. I try every time but have yet to succeed.

3 pounds ripe tomatoes, quartered if you have a food mill, peeled, seeded, and diced if you don't

Steps:

  • In a wide, nonstick frying pan, or in a 3-quart saucepan, heat the oil over medium heat and add the garlic. Cook, stirring, just until fragrant, about 1 minute. Add the tomatoes, sugar, basil or thyme sprig, and salt (begin with 1/2 teaspoon and add more later), and bring to a simmer. Reduce the heat to medium low and simmer, stirring often, until thick. Pulpy tomatoes like romas will usually take 20 to 30 minutes. However, if the tomatoes are very juicy, it will take longer for them to cook down. The longer you cook the sauce, the sweeter it will be. You can speed up the process by turning up the heat, but stir often so the sauce doesn't scorch.   • If using quartered tomatoes, put through the medium blade of a food mill. If you used peeled seeded tomatoes but want a sauce with a smooth, even texture, remove the basil sprigs and discard. Pulse the sauce in a food processor fitted with the steel blade.
