I've had this muffin recipe for a while so I cannot remember how I got it, but it is good! The steel-cut oats have a nuttier texture like bulgur wheat.

cooking spray
1 cup steel-cut oats
1 cup milk
1 egg
3 tablespoons vegetable oil
2 tablespoons pureed prunes
1 cup wheat flour, sifted
¼ cup white sugar
2 teaspoons baking powder
1 teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a 12-cup muffin tin with foil liners. Spray liners with cooking spray.
  • Place oats into a bowl and add milk. Let stand 10 minutes.
  • Mix egg, oil, and prunes together in a bowl. Add oat mixture and stir to combine.
  • Combine flour, sugar, baking powder, and salt in a bowl and mix well. Pour flour mixture into oat mixture and stir batter gently until just blended.
  • Spoon batter into the prepared muffin cups, filling each 2/3 full.
  • Bake in the preheated oven until a thin knife inserted into the center of a muffin comes out clean, 20 to 25 minutes.

1/2 cup whole milk
1/2 cup plus 1 tablespoon low-fat buttermilk
1 tablespoon brown sugar
1/4 teaspoon cinnamon

Steps:

  • In a large saucepot, melt the butter and add the oats. Stir for 2 minutes to toast. Add the boiling water and reduce heat to a simmer. Keep at a low simmer for 25 minutes, without stirring.
  • Combine the milk and half of the buttermilk with the oatmeal. Stir gently to combine and cook for an additional 10 minutes. Spoon into a serving bowl and top with remaining buttermilk, brown sugar, and cinnamon.

Steps:

  • Bring water and salt to a boil in a saucepan. Stir oats into boiling water.
  • Cook oats until thick and soft, 20 to 30 minutes.
  • Stir milk, cashews, cranberries, coconut, vanilla extract, and cinnamon into cooked oats; continue cooking 10 minutes more, stirring frequently.

2 cups buttermilk
1/2 cup oil
1/2 cup brown sugar
2 eggs
2 cups whole wheat flour (whole wheat is preferred) or 2 cups white flour (whole wheat is preferred)
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 cup raisins (optional) or 1/2 cup other dried fruit (optional)
1/2 cup chopped nuts (optional)

Steps:

  • Beat eggs in large mixing bowl.
  • Add buttermilk, oil, brown sugar, salt, and oats.
  • Combine flour, baking powder, and baking soda separately, then combine with egg mixture.
  • Add fruit and nuts, if desired.
  • Fill greased muffin tins 0.75 full and bake at 400 degrees for 20-25 minutes , or until golden.
  • NOTE: Rolled oats may be substituted for steel cut oats.

I love steel cut oats so I was very pleased to find this recipe. It originally came from the Joy of Cooking but I've tweaked it.

1 cup steel cut oats
1/4 cup dark molasses
1 tablespoon softened butter
3/4 teaspoon salt
2 cups boiling water
2 cups sifted all-purpose flour
1/4 cup warm water
1/4 ounce dry yeast
2 cups sifted all-purpose flour
1 cup nuts, coarse-chopped (optional)

Steps:

  • Measure oats, molasses, butter and salt into a mixing bowl.
  • Pour boiling water over these ingredients. Stir in 2 cups flour. Cool.
  • While this mixture is cooling mix dry yeast with 1/4 cup warm water.
  • After flour mixture is cool add yeast mixture and stir in 2 cups flour. Add nuts if desired. Knead mixture until smooth and let rise in a covered greased mixing bowl. When mixture is doubled punch down and form into loaf.
  • Preheat oven to 375 Place dough in a 5" x 9" greased loaf pan. Let rise until doubled. Bake bread 40 - 50 minutes or until brown.

Coarse salt
Light brown sugar

Steps:

  • The night before: In a 2-quart saucepan, bring 2 1/2 cups water to a boil. Add 2/3 cup steel-cut oats (not quick-cooking). Stir, let cool to room temperature. Cover; refrigerate in pan overnight.
  • In the morning: Add 1/8 teaspoon coarse salt to pan; bring to a boil. Reduce heat to low, and simmer until oats are tender but still chewy, 12 to 15 minutes, stirring occasionally. Stir in 1/3 cup milk, and cook until creamy, 2 to 3 minutes. Divide between 2 bowls. Spoon on light-brown sugar and toppings (such as banana chips or sliced apricots), if desired. For a crunchy texture, add toasted nuts.

1 1/2 cups whole-wheat flour
1 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1 1/3 cups buttermilk
1/4 cup canola oil
1/4 cup maple syrup
1 teaspoon vanilla
1 cup cooked steel-cut oats
1 cup blueberries tossed with 1 teaspoon flour

Steps:

  • Preheat the oven to 375 degrees with the rack positioned in the upper third. Oil, spray or butter 12 muffin cups.
  • Sift together the flours, baking powder, baking soda and salt. In another bowl, beat together the eggs, buttermilk (or yogurt and milk), canola oil, maple syrup and vanilla. Quickly stir in the dry ingredients with a whisk or a spatula. Do not beat, just mix, stirring up from the bottom until you can no longer see flour. A few lumps are fine. Fold in the cooked oats and the blueberries.
  • Spoon into muffin cups, filling them to just below the top. Place in the oven, and bake for 20 to 25 minutes until nicely browned. Remove from the heat, and allow to cool for 10 minutes before unmolding. Cool on a rack, or serve warm.
