SAUSAGE CABBAGE SOUP

Steps:
- In a 3-qt. saucepan, saute onion in oil and butter until tender. Add carrots and celery; saute for 3 minutes. Add caraway; cook and stir 1 minute longer. Stir in the water, cabbage, sausage, tomatoes and brown sugar; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until vegetables are tender. , Add the beans, vinegar, salt and pepper. Simmer, uncovered, for 5-10 minutes or until heated through. Sprinkle with parsley.

- Heat a Dutch oven over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Add carrots, onion, celery, and garlic; cook and stir for 1 to 2 minutes.

This is a combo of a couple of diet cabbage soup recipes I have. I don't follow any particular diet, but this is healthy and much more palatable with the addition of lean sausage for flavor. I'm not a fan of those high-sodium soup flavor packets! :P

Steps:
- Heat oil in large pot over medium heat. Add sausage and cook through, breaking into crumbles.
- Remove sausage, drain pan. Add broth and bring to a simmer.
- Add onion, celery, carrot, tomato, beans, and cabbage. Simmer 30-45 minutes or until all are tender.
- Return sausage to pot. Add herbs, pepper, and little salt to taste. Serve.

10 IN 10 DIET CABBAGE SOUP
This soup is vaguely a borscht, with a sweet & sour tang and a red-tinged broth. I've settled on tomato paste as cheap and the right tomato-iness for us. I used to freeze cubes of crushed tomatoes and use five or so in a batch of soup. One friend put garden-fresh tomatoes in.

- Boil two quarts of water in a kettle.
- Dice 2 large onions and 1/2 head of garlic.
- Slice 2 stalks of celery and 2 large carrots.
- Cover the bottom of an 8-quart pot with olive or grape seed oil and stir-fry the garlic, onions, celery, and carrots. Add at least a tablespoon of sea salt and lots of black pepper. When hot, not tender, pour in the boiling water and boil another kettle of water.
- Add tomato paste, 5 bay leaves, 3/4 cup of apple cider vinegar and 1/2 cup of brown sugar to the pot and boil.
- Slice a whole cabbage as small as you'll be comfortable eating. Put it in the pot as you get it sliced, and add the second kettle of water after it's boiling.
- If you have fresh parsley, chop a good bunch inches Otherwise throw in a handful of dried parsley.
- Cover the pot and boil the heck out of it. It's done when the celery is no longer hard and the thick parts of the cabbage are a bit translucent. The pot can cool overnight on the counter before you store it in the fridge.

ORIGINAL DIET CABBAGE SOUP
This is the recipe From Sacred Heart Memorial Hospital which is used for overweight heart patients to lose weight rapidly usually before surgery. So it is safe, and a great way to lose weight anytime!

- Cut vegetables in small to medium pieces and cover with water. Boil fast for ten minutes.
- Reduce to simmer and continue cooking until vegetables are tender. This soup can be eaten antime you are hungry.
- Eat as much as you want. This soup will not add calories. The more you eat the more you will lose. Fill a thermos in the morning if you will be away during the day. If eaten alone for indefinite periods you would suffer malnutrition.
- For drinks - unsweetened juices, tea, coffee, cranberry juice or water.
- The diet:.
- Day One: Eat only soup and fresh fruits, except for bananas.
- Day Two: All vegetables. Eat all raw or canned vegetables except beans, peas or corn. Eat along with the soup. At dinner time eat a large baked potato and butter. Eat no fruits.
- Day Three: Eat all the soup, fruits and veggies you want. No potatoes or bananas.
- (If you have adhered to the diet-you should have lost 5-7 lbs by now).
- Day Four: Eat 3 bananas and drink 3 glasses of skim milk. Drink as many glasses of water as you like. Eat lots of soup as well.
- Day Five: Eat the soup at least once this day. You mau jave 10-20 ounces of beef and a can of tomatoes or as many as 6 frest tomatoes. Try to drink 6-8 glasses of water to wash away uric acid from your body.
- Day Six: Beef and veggies. Eat all the beef and vegetables you want, but no potato. Eat the soup at least once today.
- Day Seven: Brown rice, unsweetened fruit juice and vegetables.Again stuff yourself and be sure to have the soup at least once today.
- At the end of the seventh day you should have lost 10-17 lbs.
- If you have lost more than 15 lbs, stay off the diet for two days.
- This seven day eating plan can be used as often as you like. If correctly followed, it will clean your system of impurities and give you a feeling of well-being as never before.
- Broiled Chicken or Fish may be substituted for the beef on only one of the beef days.
- No Nos: Bread, alcohol, carbonated drinks,and NO Fried foods.

Even kids who don't care for vegetable soup may enjoy this one. Very good flavor. Sometimes I use crushed tomatoes with garlic, onion, or basil now that they're available. Turkey smoked sausage is great in this recipe!

SAUSAGE AND CABBAGE SOUP
This recipe has linguica (Portuguese) sausage in it! I love cabbage and sausage soups in the winter time, think this would be delicious then. Do not use dark ale or stout....it will be too bitter...only use a light wheat beer. To make this easier, buy a bag of shredded cabbage and carrots to equal the correct amounts. Adapted from Sunset.

- In a 5- to 6-quart pan over medium-high heat, stir sausage often until lightly browned, 6 to 8 minutes. Spoon out and discard all but 1 tablespoon fat from pan.
- Add onion and garlic to pan; stir often until limp, 3 minutes.
- Increase heat to high. Add broth, beer, potatoes, cabbage, and carrots. Wrap and tie coriander, allspice, and peppercorns in cheesecloth; add to the pot. Cover and bring to a boil; reduce heat and simmer until potatoes are tender to bite, 10 to 15 minutes. Discard wrapped spices.
- Stir in parsley. Ladle soup into bowls. Serve mustard alongside to add to taste.
