4 whole eggs
1 1/2 cups sugar
1 cup fresh lemon juice
1 cup heavy cream
2 pre-baked piecrusts

Steps:

  • Preheat the oven to 350 degrees F.
  • Whisk the eggs, sugar, lemon juice and heavy cream together in a bowl. Strain and skim any foam.
  • Pour into prebaked pie shells, and bake for about 15 to 20 minutes, or until the filling just sets, and center jiggles. Cool completely.

5 cups sliced apples (enough to fill a casserole pan about 3/4 full.)
1 tablespoon lemon juice
1 cup flour
1 cup either unbleached cane sugar or 1 cup brown sugar
1 teaspoon cinnamon
4 tablespoons soft butter
3/4 cup of chopped hickory nuts or 3/4 cup chopped pecans

Steps:

  • Fill a medium sized casserole three - quarters full of peeled, cored, and sliced apples.
  • Add the lemon juice.
  • In a separate bowl, mix the flour, sugar, cinnamon, butter, and nuts.
  • Blend until mixture looks crumbly.
  • Sprinkle on top of the apples. Do not stir.
  • Bake in a 350 degree oven about forty- five minutes.
  • Turn oven to 450 degrees and allow it to brown quickly.
  • It can be served hot or cold.
  • If you like, you may pour cream on top.

2 -3 slices white bread, fresh & soft crusts trimmed
3 tablespoons butter
1 cup boiling water
1 cup sugar
1 1/2 teaspoons cornstarch
2 egg yolks, beaten
3 tablespoons fresh lemon juice
1 lemon, zest of
unbaked 9-inch pie shell
2 egg whites
4 tablespoons sugar

Steps:

  • Break crustless bread into small pieces to make 1 1/2 Cups.
  • Add butter and pour boiling water on top. Let stand 10 minutes.
  • Mix sugar and cornstarch, add beaten egg yolks, juice and zest.
  • Pour over bread and stir until creamy.
  • Pour into pieshell and bake at 400 until crust is golden brown and filling is set. About 15 to 20 minutes.
  • Cover with meringue made by beating 2 egg whites till foamy and gradually adding 4 Tbsp of sugar.
  • Bake in 325 oven till lightly browned.

  • In a saucepan, off the heat, combine sugar and cornstarch. Stir in egg yolks, lemon zest and juice, stirring with a whisk. Add water and bring to a boil, stirring constantly. Simmer for one minute and remove from heat. Strain. Add butter and stir until melted.
  • In a large bowl, over a double boiler, off the heat, combine water and cornstarch. Cook, stirring with a whisk until the mixture thickens. Remove the bowl from the double boiler. Stir in sugar and egg whites. Put the bowl back on the double boiler and heat for about 1 minute or until sugar has dissolved. Remove the bowl from the double boiler and beat with an electric mixer until meringue forms semi-firm peaks. Cover pie with meringue and bake in the centre of the oven at 180 °C (350 °F) for about 15 minutes or until meringue is golden brown. Refrigerate for 6 to 8 hours.
