This fresh, ruby-colored cranberry apple relish is sweet and tangy, and the celery gives it a terrific crunch. At our house, it's a holiday menu mainstay since it's so pleasant with poultry and pork. -Edith McFarland, Willits, California

Yield 16 servings (8 cups).

Number Of Ingredients 5

2 medium navel oranges
2 bags (12 ounces each) fresh or frozen cranberries
2 medium apples, peeled and cut into chunks
2 celery ribs, cut into chunks
3 cups sugar

Steps:

  • Grate peel of oranges and set aside. Peel and discard white membrane. Separate orange into sections and place half in a food processor or blender. Add half of the cranberries, apples and celery. Process until coarsely chopped. , Transfer to a bowl; repeat with remaining oranges, cranberries, apples and celery. Stir in sugar and reserved orange peel. Cover and refrigerate overnight.

Number Of Ingredients 8

1 cup sugar
1/4 cup cider vinegar
1 teaspoon salt
1 1/2 pound tart, crisp apples, peeled and cut in 1/2-inch chunks
1 pound cranberries
1 tablespoon grated ginger
2 teaspoons finely chopped jalapeño or Serrano chile
Pinch cayenne pepper

Steps:

  • Over medium heat, in wide stainless steel skillet, heat sugar, vinegar and salt, stirring to dissolve.
  • Add chopped apples and cranberries, and increase heat to medium-high. Let fruit cook, uncovered, for 5 to 7 minutes, stirring carefully, until apples are tender but still hold their shape.
  • Add ginger, jalapeño and cayenne, mix gently and cool to room temperature. May be prepared ahead and refrigerated up to 4 days.

1 pound fresh cranberries
3 medium apples, unpeeled
1/2 cup walnuts, chopped
1/2 cup celery, sliced
2 tablespoons crystallized ginger, chopped (optional)
2 teaspoons grated lemon rind
3 tablespoons Cherry Heering
1/2 cup sugar

Steps:

  • Coarsely chop cranberries and apples in food processor and transfer to a bowl.
  • Combine remaining ingredients with the fruit and refrigerate, covered, overnight or two days before serving.

The natural flavors of cranberries, apples, raisins, and orange are lightly sweetened yielding a relish you'll want to serve with meats and seafood throughout the year and Holidays.

(1) 12oz bag(s) fresh cranberries
1 cup(s) splenda granulated
1 cup(s) water
3 tablespoon(s) orange juice concentrate
1 medium apple - peeled, cored and diced
1/3 cup(s) golden raisins

Steps:

  • Place cranberries, SPLENDA® Granulated,water and orange juice concentrate in a medium saucepan. Bring to a boil and boil 3-4 minutes or until cranberries start to thicken and water has reduced by about half. Remove from pan and place in medium bowl.
  • Cover and refrigerate 2-3 hours or overnight. Add diced apple and half of the raisins to cranberries. Stir well. Refrigerate until ready to serve. Just before serving,sprinkle remaining raisins over cranberries as a garnish. Serve chilled as an accompaniment to roast meats or poultry.

  • Wash the cranberries and discard any small stones or soft berries. Cut the stem and blossom end of the orange to the flesh, then quarter it and cut each quarter in half. Do not peel the orange. Discard any seeds. Roughly chop a 1 inch piece of ginger. Powder the sweetener in a coffee or spice grinder.
  • Layer the cranberries and orange pieces in the processor and add the sweetener, spice and ginger juice. (Put the chopped ginger in a garlic press and squeeze to extract as much of the juice as you can. You can't really taste it, but it surely adds to the over-all flavor.)
  • Using the pulse button, run the food processor until the cranberries and orange are chopped into roughly the same sized pieces. Taste. If you would like it sweeter, add your favorite stevia sweetener or more powdered Sukrin 1 (or Swerve Granulated). It should taste both tart and sweet.
  • Refrigerate up to two days before needing and for 5-7 days total. Makes approximately 3 cups with 1/4 cup per serving.
