RED WINE REDUCTION DESSERT SAUCE
I got these recipe ingredients from Chef Bruce at the Red Rooster Cafe in New Braunfels, TX. I serve this sauce with fresh blackberries from my dad's garden. Layer in a wine glass, sweetened whipped cream, berries, sauce, then more whipped cream. Top with a berry and sprinkle with a little powdered sugar. So good! They also use this sauce on their Monte Cristo Sandwich.

- Combine wine, sugar, vanilla extract, and cinnamon together in a saucepan; simmer over low heat, stirring occasionally, until sauce reduces, about 30 minutes.

WARM CHOCOLATE TART WITH RED WINE SAUCE
This romantic tart comes together in no time at all with the use of a premade tart shell. Feel free to make your own of course, but I stick with the premade ones on account of being pastry-challenged. As far as a rich and indulgent dessert, you cannot go wrong with warm chocolate and red wine! Perfect for valentines day, or any day that you just want to treat yourself and the ones you love.

Steps:
- For the Tart:.
- Preheat the oven to 325°F.
- Place the chopped chocolate in a medium bowl and set aside.
- Combine the cream and milk in a medium saucepan, and bring to a boil over medium-high heat. Pour the hot cream mixture over the chocolate. Allow to stand for 30 seconds to melt the chocolate,then whisk until the chocolate is completely melted and the mixture is smooth. Allow to cool for 10 minutes.
- Whisk the egg into the chocolate mixture. Pour the filling into the prebaked tart shell.
- Bake the tart for 8 to 10 minutes, until the edges of the filling are set; the center will still be soft. Cool the tart on a wire rack for 10 minutes and served warm.
- For the Red Wine Sauce:.
- Put the sugar in a deep sauce pan. Stir constantly on medium high heat until sugar liquefies and turns mahogany brown. Add the red wine and whisk until sugar is dissolved and wine is incorporated. Chill. Serve over tart.

This is a good dessert sauce to pour on top of berries, over cheesecake, baked meringue, or pound cake.

- Heat wine in a saucepan over high heat until reduced to about 1 1/2 cups, about 5 minutes. Mix chocolate and coconut sugar into wine; cook, stirring frequently, until sauce is smooth and glossy, about 5 minutes.

NANNY'S SWEET WHITE SAUCE
Another old family recipe from my Canadian turned naturalized US citizen Grandmother. This is a dessert white sauce, served warm over your choice of cake. My Grandmother used to serve it over an apple cake or her walnut cake (Recipe #360999). Definitely fits in the comfort food category and makes for an elegant, but simple, dessert. It will enhance the flavor of your cake, not overpower it.

Steps:
- Put milk in medium size sauce pan, bring to a gentle simmer.
- Add beaten egg, blending continuously with whisk.
- Add sugar; continue to whisk.
- Mix flour with water. Add slowly to mixture, still whisking.
- Stir mixture till it becomes thick, but still "pourable.".
- Sprinkle with nutmeg and cinnamon.
- Serve warm, ladled over individual cake slices. (I recommend my Grandmothers cake, Recipe #360999).

- Place the chopped chocolate in a small heat proof bowl. Heat the whipping cream in a small saucepan over medium heat until it just begins to simmer, or microwave on high for 60 seconds. Pour over the chocolate and let sit for 5 minutes.
- Fill a saucepan with one inch of water. Place over medium heat and bring to a boil. In a large heat proof bowl, combine the egg yolks, sugar, wine, and salt. Whisk together and immediately place the pot of simmering water. Continue to whisk constantly for several minutes until the mixture is light and foamy and hot to the touch.
- Fold in the chocolate gradually and stir until smooth and fully combined. Serve warm or chill for several hours and serve cold.
