2 cups old-fashioned oats
1 cup fat-free milk
1/4 cup maple syrup
2 teaspoons vanilla extract
1 cup vanilla yogurt
1/2 cup chopped walnuts, toasted
Assorted fresh fruit

Steps:

  • In a large bowl, combine oats, milk, syrup and vanilla. Refrigerate, covered, overnight., Just before serving, stir in yogurt. Top with walnuts and fruit.

1/3 to 1/2 cup liquid such as dairy milk, almond, cashew or coconut milk
1/3 to 1/2 cup old-fashioned rolled oats
1/3 to 1/2 cup yogurt, optional
1 teaspoon chia seeds, optional but highly recommended
1/2 banana, mashed, optional
Serving suggestions: fruit (fresh or dried), nuts, nut butter, seeds, protein powder, granola, coconut, spices, citrus zest and vanilla extract

Steps:

  • Add the desired amounts of milk, oats, yogurt, chia seeds and banana to a jar or container and give them a good stir. Refrigerate overnight or for at least 5 hours.
  • In the morning, add additional liquid if you'd like. Once you achieve the desired consistency, top with fruit, nuts, nut butter, seeds, protein powder, granola, coconut, spices, zest or vanilla extract.

A super-simple way to get a hearty breakfast on the table without any work! This recipe was inspired by an overnight maple and brown sugar oatmeal on MelsKitchenCafe.com (http://www.melskitchencafe.com). Make sure to use steel-cut oats, otherwise you'll end up with a pot of gummy paste.

6 cups apple cider (add 1-2 cups of water if you like thin oatmeal)
2 cups steel cut oats
2 tablespoons packed light brown sugar (up to 1/4 cup, depending on preferred sweetness )
1/2 teaspoon kosher salt
1 teaspoon ground cinnamon

Steps:

  • Coat the inside of a 4-5 quart slow cooker with cooking spray.
  • Combine all the ingredients in the slow cooker and stir. I find it helpful to mix the brown sugar with the cinnamon; the cinnamon gets better incorporated and doesn't separate from the mix as much.
  • Cook for 7-8 hours on low.
  • Stir thoroughly before serving with a rubber spatula or wooden spoon.
  • Serve immediately.
  • Refrigerate leftovers; reheat with a splash of milk.
  • *This recipe is easily cut in half for smaller slow-cookers. A time of 4 hours is optimal.

I chose these as a last-minute addition to my Thanskgiving 2015 menu after seeing a recipe online and remembering that a friend had never tried maple syrup before. Turns out, they were even more popular than the store-bought dessert and went like hotcakes! Even my significant other, who doesn't like maple syrup and isn't a big fan of oatmeal, couldn't stop eating them! I found the original oatmeal amount a bit much, so I've reduced it here. I also found these cookies were better the day after being baked. I also left the batter to sit in the fridge overnight, although the original recipes says to let it sit for at least 3 hours to allow the oatmeal to soften up and absorb the flavors.

3/4 cup all-purpose flour
3/4 teaspoon cinnamon
1/2 teaspoon salt
1/4 teaspoon baking soda
8 tablespoons unsalted butter, melted
3/4 cup packed brown sugar
1/4 cup plus 1 tablespoon grade b maple syrup
3/4 teaspoon vanilla extract
1 large egg
1 1/4 cups old fashioned oats (you can adjust this quantity to make the cookies thicker, the original recipe called for 1 3/4 cups)

Steps:

  • In a medium bowl, whisk together flour, cinnamon, salt, and baking soda; set aside.
  • In a large bowl, whisk together melted butter, brown sugar, maple syrup, and vanilla. Let butter cool for 1 minute, then whisk in egg. Add dry ingredients to bowl and stir until combined. Stir in oats. Press plastic wrap over dough in bowl and let chill in refrigerator from 3 hours to overnight to allow oats to soften up and soak up flavors.
  • Place oven racks in upper and lower thirds of oven. Preheat oven to 350°F. Line two baking sheets with parchment paper. Drop dough by rounded tablespoon onto prepared baking sheet. Bake until almost golden, about 13-15. Let cool on sheet for 5 minutes then transfer to a wire rack to finish cooling. Cookies can be stored in a sealed container at room temperature for up to a week.
