SLOW COOKER SHORT RIBS

1 tbsp. canola oil
3 pounds bone-in beef chuck short ribs
2 medium onions, peeled and quartered
2 medium carrots, cut into large chunks
2 medium parsnips, cut into large chunks
2 medium turnips, peeled and cut into large chunks
4 sprigs fresh rosemary
4 sprigs fresh thyme
4 sprigs fresh parsley, stems and leaves separated
1 tbsp. Worcestershire sauce
1 tbsp. spicy brown mustard
1 (12-ounce) dark stout beer, such as Guinness
Kosher salt
Black pepper

Steps:

  • In a large skillet over medium-high heat, add the oil. Season the short ribs with salt and pepper. When the oil is hot, brown the short ribs, in batches, until they are browned on all sides, about 3-4 minutes per side.
  • While the short ribs are browning, place a layer of onion and carrot pieces into the bottom of a slow cooker and season them with salt and pepper. Place the browned meat on top. Add the remaining onions and carrots along with the parsnips and turnips. Tie together the rosemary and thyme with the parsley stems and add them to the pot along with the Worcestershire and mustard. Pour over the stout and add enough water to almost cover the contents. Cover and cook on low for 6-8 hours, or until the meat is very tender.
  • To serve, carefully remove the meat and vegetables from the slow cooker. Strain the juices. Serve the ribs with the juice and garnish with chopped parsley leaves.

Steps:

  • Sprinkle the ribs all over with salt and pepper. Brush the ribs with 1/2 cup of the Thai Style Sweet & Spicy Chili Cooking Sauce. Transfer to a 6- to 8-quart slow cooker insert. Cover and cook on low for 8 hours.
  • Preheat the broiler and line a baking sheet with foil.
  • Place each rib rack half, bone-side down, on the prepared baking sheet. Brush with the remaining cooking sauce. Broil until the glaze is bubbling and browned, 3 to 5 minutes.
  • Slice the ribs between the bones. Transfer to a platter and sprinkle with cilantro and peanuts. Squeeze lime juice over the ribs.

1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon canola oil
4 medium carrots, cut into 1-inch pieces
1 cup beef broth
4 fresh thyme sprigs
1 bay leaf
2 large onions, cut into 1/2-inch wedges
6 garlic cloves, minced
1 tablespoon tomato paste
2 cups dry red wine or beef broth
4 teaspoons cornstarch
3 tablespoons cold water
Salt and pepper to taste

Steps:

  • Sprinkle ribs with salt and pepper. In a large skillet, heat oil over medium heat. In batches, brown ribs on all sides; transfer to a 4- or 5-qt. slow cooker. Add carrots, broth, thyme and bay leaf to ribs., Add onions to the same skillet; cook and stir over medium heat 8-9 minutes or until tender. Add garlic and tomato paste; cook and stir 1 minute longer. Stir in wine. Bring to a boil; cook 8-10 minutes or until liquid is reduced by half. Add to slow cooker. Cook, covered, on low 6-8 hours or until meat is tender., Remove ribs and vegetables; keep warm. Transfer cooking juices to a small saucepan; skim fat. Discard thyme and bay leaf. 4 cups low sodium chicken broth
1/3 cup soy sauce
1/4 cup sugar
3 tablespoons finely grated peeled fresh ginger
2 tablespoons korean red chili paste or 2 tablespoons sambal oelek, for serving
2 tablespoons dark sesame oil (toasted)
4 garlic cloves, finely chopped
1 bunch scallion, thinly sliced (white and green parts, separated)
10 -12 ounces medium-thick rice noodles (rice sticks or jantaboon)
1 carrot, finely grated
1 small kirby cucumber, thinly sliced
1/2 cup cilantro leaf, torn
2 limes, cut into wedges

Steps:

  • Remove any silver skin from the surface of the short ribs, and then make 2 cuts across the grain, through the meat down to the bone. (See how-to photo.) Put the ribs in the slow cooker.
  • Whisk together the broth, soy, sugar, ginger, chili paste, sesame oil, garlic, and scallion whites. Pour over the ribs. Cover and cook on HIGH for 6 hours.
  • About 30 minutes before serving, put the rice noodles in a bowl with hot water to cover. Soak until tender and pliable, about 30 minutes.
  • Skim any fat that may collect on top of the beef broth and discard.
  • Divide the noodles among 6 large shallow bowls and ladle the broth over top. (Cut the meat from the ribs if desired.) Divide the meat evenly among the bowls. Garnish as desired with the carrots, cucumber, cilantro, lime and the remaining green parts of the scallion and more chili paste, if desired.

1 pound short ribs (meat removed from bone, fat trimmed, cut into smallish chunks)
1 tablespoon gochujang sauce (more gochujang = more spicy! I would say this amount is medium spicy)
1 tablespoon tomato paste
1 tablespoon minced fresh ginger
6 cloves garlic, crushed/minced
1 shallot, thinly sliced
4-6 cups beef broth
10-16 ounces dry ramen noodles or any other stir-fry noodles (I use 2-3 individual serving size packages)
spinach (optional)
scallions, sesame seeds, and/or sesame oil on top

Steps:

  • Set Instant Pot to the sauté mode. Sprinkle short ribs generously with salt; sauté without disturbing them until browned on the outside.
  • Add gochujang, tomato paste, ginger, garlic, and shallots to the Instant Pot with the short ribs and sauté for 1-2 minutes.
  • Add broth. Cook on high pressure for 30 minutes. When the cook time is up, the meat should be extremely tender and yummy.
  • Set to the sauté mode again. Add noodles and cook until the noodles are softened. Taste broth and season with salt, pepper, maybe a shot of rice vinegar? and anything else you want.
  • Sauté spinach in a separate pan (optional).
  • Serve noodle soup bowls topped with the short ribs, sautéed spinach, scallion, sesame seeds, and sesame oil.

1/2 cup water
2 bunches scallions, thinly sliced diagonally
1 garlic clove, minced
1 inch fresh ginger, peeled and minced
1/3 cup soy sauce
1/4 cup rice vinegar
1/4 cup molasses
1/4 cup brown sugar
1/4 cup chili-garlic sauce
1/4 cup hoisin sauce (or plum sauce)
2 limes, juice of
1 tablespoon toasted sesame oil

1/2 teaspoon fresh ground black pepper
2 tablespoons sesame seeds

Steps:

  • Trim excess fat off ribs.
  • In a heavy skillet over medium-high heat, brown the ribs on all sides in batches. Transfer browned ribs to an oval slow cooker (for a better fit, but round may be used).
  • Deglaze the skillet with 1/2 cup water and pour the resulting liquid over the ribs.
  • In a medium bowl combine half of the scallions and all remaining ingredients except the sesame seeds. Stir until the sugar is dissolved, pour over the ribs.
  • Cook on the low setting 6 hours or until the meat is tender (some will fall from the bone).
  • Toast the sesame seeds in a small skillet until lightly browned. Transfer to a bowl to cool and set aside.
  • Serve the ribs with some of the sauce, sprinkle with the sesame seeds and remaining scallions.

1 onion, chopped
1 tablespoon butter
3/4 cup ketchup
3 tablespoons soy sauce

1 (16 ounce) package egg noodles

Steps:

  • Put short ribs on a broiler pan and broil until well browned to remove excess fat.
  • Put ribs in crock pot.
