BLT MACARONI SALAD
My DH always raved about my mom's pasta salad until I found the inspiration for this recipe in TOH June 2002. Now he doesn't like it any other way. I have modified the original recipe over the years & now need to post it here for safe-keeping because the clipping is falling apart. UPDATE: May 2010 - I'd like to add that this recipe has now been tested with gluten free pasta and turkey bacon and was just as delicious as the posted recipe. Keep in mind though that a little extra mayo was needed with the GF pasta. :)

Steps:
- Boil pasta per package directions, then drain & rinse in cold water.
- While pasta is cooking, trim most of the fat from the bacon, chop into 1-inch pieces & then panfry til almost crisp; drain on paper towels & set aside.
- In large bowl, combine mayo, vinegar, salt, pepper, celery, onion & bacon.
- Gently stir in tomato, & pasta.
- Cover tightly & refrigerate til serving.
- *Note: Original recipe reserves bacon to add right before serving. I've done both but usually mix it immediately to save time.

Steps:
- Whisk 1 cup mayonnaise, vinegar, Dijon mustard, salt, black pepper, and cayenne pepper together in a bowl until well blended; whisk in sugar. Stir in celery, red bell pepper, carrot, onions, and jalapeno and poblano peppers. Refrigerate until macaroni is ready to dress.
- Bring a large pot of well salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through, 8 to 10 minutes. Drain but do not rinse. Allow macaroni to drain in a colander about 5 minutes, shaking out moisture from time to time. Pour macaroni into large bowl; toss to separate and cool to room temperature. Macaroni should be sticky.
- Pour dressing over macaroni and stir until dressing is evenly distributed. Cover with plastic wrap. Refrigerate at least 4 hours or, ideally, overnight to allow dressing to absorb into the macaroni.
- Stir salad before serving. Mix 1 tablespoon mayonnaise and 1 tablespoon water into salad for fresher look.

MACARONI SALAD
I take this salad to a lot of picinics during the summer and it is always a big hit. I know it looks like a lot of ingredients, but it is really simple to assemble. I vary it with diced ham, turkey or chicken as well. The recipe is easy to double and the serving amount really depends on what you intend on having it for a side dish or a buffet type item.Enjoy!

Steps:
- Make and peel 6 hard-boiled eggs. Try my recipe to make Steam Hard Boiled Eggs.
- Put a large pot of salted water and heat on the stove to boil the pasta. Follow the cooking time and the package instructions of your pasta brand. Adding salt is optional but recommended.
- Gradually add pasta, stirring to separate it, and return to a boil. Boil uncovered, stirring occasionally until you have tender macaroni that is al dente pasta.
- While the pasta is boiling, chop the fresh ingredients: celery, green onions, dill pickles, and chop the eggs into small pieces.
- Drain the large pot of pasta, and pour it into a very large bowl.
- Into the large bowl, add the chopped ingredients to the warm cooked pasta. Add celery, green onions, chopped pickles, pickle juice, chopped eggs, black olives, mayonnaise, yellow mustard, sea salt, and black pepper.
- Stir well to combine, and chill for several hours or overnight. The warm pasta will absorb the pickle juice as it sits in the fridge, that is what makes it so good!
- Optional: Slice a couple of eggs and places them on top with sprinkles of paprika to make it pretty.
- Serve macaroni pasta salad in a large bowl or inexpensive paper Chinese takeout containers (order online), great for picnics and parties. Keep this macaroni salad chilled at all times in an airtight container, or serve immediately.

FAST, EASY, DELICIOUS MACARONI SALAD - EVEN YOUR KIDS WILL LOVE

Steps:
- Boil noodles like you normally would do. Until done. Drain the noodles. Put them in a large bowl and put in the fridge to cool. (Faster prep: Run them under cold water until cool then let sit so all of the water will drain).
- Mince pickles and black olives. (Faster & easier prep: Buy dill pickle relish and already chopped black olives).
- Chop green onions.
- After noodles are cool add mayonnaise (more or less to taste) & mustard (optional) and mix together.
- Add pickle, olives, & green onions and mix. (Can use more or less. I personally like a lot of pickles and little onion & olives).
- Add salt and pepper to taste.
- Put in the fridge to chill. (Sometimes you may need to add more mayo when ready to serve).
- Add the cheese when you are serving. (I let everybody add as much as they want. Makes it fun for the kids).

THE BEST MACARONI SALAD EVER
Steps:
- Cook the macaroni in lightly salted water according to the package directions. Drain and rinse under cold water to cool. Set aside.
- Mix together the mayo, vinegar, sugar, salt, and pepper. Splash in enough milk to make it pourable. Splash in pickle juice for extra flavor. Taste and adjust seasonings as needed. Set aside.
- Place the cooled macaroni in a large bowl and pour in 3/4 of the dressing. Toss and add more dressing if you'd like. (The dressing will seem a little thin, but it will thicken up as the salad chills.)
- Stir in the roasted red peppers (or pimentos), olives, pickles, and green onions. Add more of any ingredient if you'd like more stuff going on! At the end, splash in a little more pickle juice and stir.
- Chill for at least 2 hours before serving. Sprinkle with sliced green onions to serve!

Steps:
- Cook the macaroni in heavily salted boiling water according to directions. In the last 1 minute of cooking, add the frozen peas and frozen corn to the water.
- Meanwhile, in a large bowl, make the dressing. Whisk together the mayonnaise (1 cup), the honey (2 tablespoons), dijon mustard (1 tablespoon), kosher salt (1 teaspoon), black pepper (1/2 teaspoon), and dill pickle juice (1/4 cup).
- When the macaroni, peas, and corn are fully cooked, drain and rinse with cool water until the it has cooled off completely (check it so you can make sure it's cool to the touch). Shake off as much excess water as possible and add it to the bowl with the dressing.
- Add the chopped dill pickles (1/2 cup), diced red bell pepper (1), and sliced green onions (1/2 cup) to the bowl and mix everything together. For best results, allow to sit for 1-2 hours in the fridge for all the flavors to marry.
- Serve cold from the fridge or at room temperature.

- Boil a large, salted pot of water for the macaroni and cook it al dente according to package directions. Drain it then rinse it under cold water and set aside (let it drain well).
- At the same time as the pasta is boiling, cook the eggs in a separate pot until they're hard-boiled. I simply time 10 minutes from the point where they start to boil. I cool them by running cold water over them for a few minutes. Peel the eggs once they've cooled.
- Meanwhile, make the dressing by combining the dressing ingredients in a measuring cup or small bowl, and prep the remaining ingredients (pickles, celery, onion).
- Once the pasta is cooled and dry, add it to a large salad bowl, along with the eggs (chop them to desired size), pickles, celery, and onion. Pour the dressing over and toss until well coated.
