This spicy quinoa pulao with Indian flavors is made with quinoa rather than rice for added protein!

2 tablespoons olive oil
1 teaspoon cumin seeds (jeera)
2 teaspoons minced garlic
1 ½ teaspoons ground cumin (jeera)
1 ½ teaspoons ground coriander (dhana)
1 ½ teaspoons chile powder
1 teaspoon minced ginger
¾ teaspoon minced Thai chile pepper
¼ teaspoon pav bhaji masala
¼ teaspoon ground turmeric (haldi)
1 yellow onion, diced
1 ½ vine-ripened tomatoes, diced
4 cups finely chopped fresh spinach
3 cups water
1 ½ cups uncooked quinoa
1 cup chopped fresh cilantro, or to taste
1 lemon, cut into wedges

Steps:

  • Heat olive oil in a large wok over medium heat. Add cumin seeds and let sizzle for 30 seconds. Add garlic, ground cumin, coriander, chile powder, ginger, chile pepper, pav bhaji masala, and turmeric; saute until fragrant, about 30 seconds. Stir in onion; saute until translucent, about 5 minutes. Stir in tomatoes and cook until the tomato smell goes away. Mix in spinach; cook until wilted, 2 to 3 minutes.
  • Pour water and quinoa into the wok. Bring to a simmer; cook, stirring occasionally, until water is absorbed, 8 to 12 minutes. Garnish with freshly chopped cilantro and lemon wedges.

3 tablespoons extra-virgin olive oil
2 large or 4 small shallots, chopped
1 small red pepper, stemmed, seeded, deveined and chopped into 1/2-inch pieces
1 teaspoon kosher salt, plus extra for seasoning
1/2 teaspoon freshly ground black pepper, plus extra for seasoning
1 1/2 cups quinoa
1/4 cup white wine, such as pinot grigio
1 1/2 cups low-sodium chicken broth
1 packed cup arugula, chopped
1/2 cup slivered almonds, toasted and coarsely chopped
1/2 cup chopped fresh mint
1 medium cucumber, peeled, seeded and diced into 1/2-inch pieces
Zest of 1 lemon

Steps:

  • Cook's Note: To toast the almonds, arrange in a single layer on a baking sheet. Bake in a preheated 350 degrees F oven until lightly toasted, 6 to 8 minutes. Cool completely before using.
  • Heat 2 tablespoons of the oil in a large saucepan or a high-sided skillet over medium-high heat. Add the shallots and cook until soft, about 2 minutes. Add the bell pepper, salt and pepper. Cook until the vegetables are tender, 5 minutes. Make a space in the center of the vegetables and add the remaining 1 tablespoon of oil. Add the quinoa and cook, stirring constantly, until coated with oil, about 2 minutes. Add the wine and cook until all of the liquid has evaporated, about 2 minutes. Add the broth and bring to a boil. Cover the pan and simmer until all of the broth has been absorbed and the quinoa is tender, about 15 minutes. Keep covered and let sit for 10 minutes. Add the arugula, almonds, mint, cucumber and lemon zest and toss well. Season with salt and pepper.

1 vegetable stock cube
2 roasted red peppers , deseeded and chopped (from a jar is fine)
3 tbsp olive oil
3 spring onions , sliced

handful of coriander , chopped

Steps:

  • Cook the quinoa according to pack instructions, adding the vegetable stock cube to the cooking water. Leave to cool, then break up any clumps with a fork. Mix through remaining ingredients and serve.

1 small onion, chopped
1 clove garlic, minced
¾ cup quinoa
1 ½ teaspoons curry powder
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon cumin
¼ teaspoon cinnamon
1 ½ cups chicken stock
1 (14 ounce) can garbanzo beans, drained and rinsed
½ cup toasted pine nuts
½ cup raisins, soaked in hot water and drained

Steps:

  • Stir together the olive oil, onion, and garlic in a saucepan over medium heat until the onion has softened and turned translucent, about 5 minutes. Stir in the quinoa, curry powder, salt, pepper, cumin, cinnamon, and chicken stock. Bring to a boil, then reduce heat to medium-low, cover, and simmer 20 minutes until the quinoa is tender.
  • Once the quinoa has finished cooking, stir in the drained garbanzo beans, toasted pine nuts, and raisins. Serve warm or cold.

½ cup chopped onion
2 carrots, chopped
1 cup quinoa, rinsed
2 cups vegetable broth
¾ cup chopped walnuts
¼ cup chopped fresh parsley

Steps:

  • Heat oil in a saucepan over medium-high heat. Cook onion in oil for 5 minutes, or until translucent. Add carrot, and cook 3 minutes more. Stir in quinoa and vegetable broth, and bring to a boil. Reduce to a simmer, cover, and cook 15 to 20 minutes, or until quinoa is tender and fluffy.

2 garlic cloves
1 tbsp rapeseed oil
1 large onion , quartered and sliced
thumb-sized piece ginger , chopped
1 cinnamon stick
½ tsp cumin seeds
seeds from 8 cardamom pods
1 tsp ground turmeric
1 tsp ground coriander
1 red chilli , halved, deseeded and sliced
1 large red pepper , deseeded and diced
50g freekeh
350ml vegetable stock (made with 2 tsp reduced-salt bouillon powder)
25g sultanas
½ pack coriander , chopped
40g cashew nuts
1 garlic clove
150ml pot bio-yogurt
¼ cucumber , grated
2 tbsp chopped mint

Steps:

  • Chop the garlic for the pilau and set aside. Finely grate the garlic for the raita and put in a bowl. Heat the oil for the pilau in a large open pan, and fry the onion and ginger for 5 mins until softened. Stir in the whole and ground spices, and cook for a few secs to release their aromas. Add the chilli, red pepper and freekeh, stir briefly, then tip in the stock and sultanas. Simmer for 15 mins until the freekeh is tender but still nutty, adding the chopped garlic for the final 2 mins. The stock should have reduced and absorbed into the freekeh now.
  • Meanwhile, finish the raita by stirring the yogurt, cucumber and mint into the grated garlic.
  • When the pilau is cooked, stir in the coriander and cashews, and serve with the raita.

I wanted to make some sort of pialf/pilau type thing with quinoa, read a bunch of different recipes, looked in my cupboard and came up with this. Very aromatic Indian-inspired dish. If you like it less spicy, then leave out the chili. Feel free to play around with the vegetables too, I just used what was in my fridge/freezer. I mostly eyeballed the ingredients, but this is a basic estimation.

1 onion, sliced
4 garlic cloves, crushed
6 cloves
4 cardamom pods, crushed
1 chili pepper, chopped
1 sweet potato, finely diced
1 leek, chopped
2 cups quinoa
4 cups water
1 teaspoon cinnamon
1 teaspoon coriander seed
2 bay leaves, broken
1 cup cauliflower floret
1 cup peas

Steps:

  • In a large pot, fry the onion in a little oil.
  • Add the garlic, cloves, cardamom and chili pepper, and fry a bit more.
  • Add the vegetables (if using any frozen vegetables, don't add them in just yet) and continue frying.
  • Add the quinoa, water, cinnamon, coriander seeds, and bay leaves.
  • Bring to a boil, then lower the heat, cover and simmer for about 12 minutes, or until the quinoa has absorbed the water.
  • About halfway through the simmering, stir in any frozen vegetables you want to add.
