CREAM CORN

Cream Corn image

This is the way my paternal grandmother made cream corn. She had a garden of her own, so fresh corn was easy to come by. If you can't get fresh corn or your corn is dry, you will have to use the option to add dairy cream. The very best time to make this is when Silver Queen Corn is coming in!

Provided by breezermom

Categories     Corn

Time 40m

Yield 4-5 serving(s)

Number Of Ingredients 6

6 ears sweet corn, preferably the Silver Queen variety
1/2 lb butter
salt, to taste
pepper, to taste
1/4 cup water
1/4 cup cream (optional)

Steps:

  • First you have to get the corn kernels off the cob. Place the corn over a bowl to cut your kernels off the cob. Carefully cut the kernels off so that half the kernel is left on the cob -- it sounds strange, but this is how you will get your milk for the recipe. Once you have the cobs with half a kernel on them, press or grate the remaining half kernels so that you get all the milk and remaining corn off the cob. I usually just use the flat side of my knife to scrape the milk out.
  • Place the butter, the cut kernels, and the milk from the corn scraping into a heavy skillet and cook over medium heat. Salt and pepper to taste. Add water, and if needed, add the cream and cook until thickened, about 20 minutes.

2 eggs
1½ cups grated mature cheddar
½ tsp smoked paprika
1 tsp salt
1½ cups flour
1 tsp baking powder
½ cup milk

Steps:

  • In a large bowl, combine the corn kernels, creamed corn, eggs, cheddar, smoked paprika and salt and mix well.
  • Sift in the flour and baking powder and mix well.
  • Slowly stir in the milk until the batter is not too thick and drops off a spoon easily. (it should also not be so thin that it spreads too much when you fry the cakes)
  • Heat a large frying pan and add some oil.
  • Fry spoonfuls of the batter until bubbles appear at the top and flip. Allow to cook on the other side. Remove from the pan once cooked and place on some kitchen paper to drain.

STEAMED CORN ON THE COB

Steamed Corn on the Cob image

Steaming corn on the cob is one of the simplest and tastiest ways to cook corn-especially fresh. You can do it with or without a steamer basket.

Provided by Cynthia Nelson

Categories     Dinner     Lunch     Side Dish

Time 21m

Yield 3

Number Of Ingredients 2

3 corn cobs
Water

Steps:

  • Gather the ingredients.
  • Husk the corn and remove the silk. Trim off any discolored kernels or any that have been damaged by insects. Depending on the size of your steamer basket, you may need to cut the ears of corn in half so they are short enough to fit.
  • Add 2 inches of water to a large pot and insert a steamer rack. Make sure the water is not touching the bottom of the steamer rack. If it is, pour some of it off.
  • Cover the pot and bring the water to a boil over high heat.
  • When the water begins to boil, place the corn into the steamer basket inside the pot using a pair of tongs.
  • Cover the pot and let the corn steam for 4 minutes or until it turns deep yellow and crisp. If you prefer softer corn, steam for 7 minutes. For the softest corn, steam for 10 to 15 minutes. The longer you steam the corn, the more attention you must pay to the water level. Don't let it fall lower than 1 inch or it may run dry and scorch your pot.
  • Turn off the burner and carefully remove the corn from the pot with tongs. Serve as is or with butter, salt, and pepper.
