MINI CHEESEBURGER SKEWERS

Number Of Ingredients 10

1/2 lb ground beef
1/2 lb ground sausage
1.5 tsp salt
1/2 tsp black pepper
splash Worcestershire sauce
5 cheddar cheese slices, (quartered)
20 grape tomatoes
lettuce, (cut in squares)
20 dill or bread & butter hamburger pickles
7-8 large seasame seed hamburger buns

Steps:

  • Preheat oven broiler to 550° Fahrenheit.
  • In a medium bowl, mix ground beef and sausage together. Add salt, pepper and worchestershire sauce. Mix well without overmixing and causing the fats in the meat to begin to melt.
  • Form seasoned meat into 1" balls. Gently press down top to flatten a little. Place on a broiler pan and broil for approximately 8 minutes. Add cheese to top of burgers, put back under broiler and melt.
  • Use a small biscuit or cookie cutter to cut "mini" buns out of the hamburger bun tops and bottoms.
  • Assemble skewers by adding a top bun, 2-3 pieces of lettuce, cheeseburger, tomato, pickle and bottom bun until all ingredients have been used. Serve with your favorite burger condiment or sauce!

1 teaspoon shallot, minced
6 slider buns
1 tablespoon Simple Truth™ Organic Olive Oil
5 slices shredded cheddar cheese, quartered
½ head Simple Truth Organic™ Butter Lettuce, cut into 1" squares
9 cherry tomatoes, halved
6 red onions
18 slices dill pickle
Simple Truth™ No Sugar Added Ketchup
2 Simple Truth™ Avocados, pitted
¼ cup Simple Truth™ Organic Whole Milk Greek yogurt
2 tablespoons mayonnaise
1 clove garlic
2 tablespoons lime juice
½ teaspoon kosher salt, or to taste
6 skewers, 9 3/4

Steps:

  • In a large bowl, mix the Simple Truth™ ⁹⁰⁄₁₀ Ground Beef with the Worcestershire sauce, salt, pepper, garlic powder, and shallot until just combined.
  • Divide the beef mixture into 18 balls (about 1-1½ tablespoons each) and flatten into ½"-thick patties.
  • Using a 2-2½" ring cookie cutter, cut each side of the slider buns into small rounds.
  • Heat a large frying pan over medium-high heat. Toast the buns, cut sides down, for 20 seconds, or until golden brown. Set aside.
  • Heat the olive oil in the same skillet. Working in batches, add the beef patties and cook for 90 seconds. Flip and reduce the heat to medium. Place a quarter slice of cheddar on top of each patty and cook for 90 seconds more, or until the cheese is melted and the patties are cooked through. Remove from the pan and repeat with the remaining patties and cheese.
  • Make the avocado dip: In a blender, combine the avocado flesh, Greek yogurt, mayonnaise, garlic, lime juice, and salt. Blend on high speed for 1-2 minutes, until smooth. Season with more salt to taste.
  • Assemble the skewers: Thread a toasted bottom bun onto a skewer, followed by a beef patty, a piece of lettuce, a tomato half, a piece of red onion, and a pickle slice. Repeat stacking the ingredients from the beef patty to the pickle 2 more times, then finish with a top bun. Repeat to make 5 more skewers.
  • Serve the skewers immediately with the avocado dip and Simple Truth™ No Sugar Added Ketchup for dipping.

1/2 cup ketchup
1/4 cup yellow mustard
1 cup mayonnaise
1 tablespoon Worcestershire sauce
1 tablespoon Cajun seasoning
4 tablespoons grapeseed oil
4 tablespoons unsalted butter
12 slider buns
Twelve 3-ounce burger patties
Salt and pepper to taste
Salt and pepper to taste
12 slices American cheese
24 slices Roma tomato
3 cups shredded romaine lettuce

Steps:

  • For Paul's burger sauce: In a medium bowl, whisk together all of the sauce ingredients.
  • For the burgers: Heat a large cast-iron skillet over medium-high heat until almost smoking. Add about 1 tablespoon of oil and 1 tablespoon of the butter to the skillet. When the butter has melted, working in batches, open the buns and toast them in the skillet until they are golden brown.
  • Wipe out the skillet and reheat it over medium-high heat. Season the burger patties with salt and pepper. Working in batches and using more of the oil and butter, place some of the burger patties in the skillet (do not crowd the pan). Cook until the burgers are well seared (about 3 minutes) and flip. Place a slice of cheese on each burger and continue to cook the burgers for 2 minutes longer. Cover the skillet to melt the cheese and steam the burgers. Continue until all the burgers are cooked, adding more oil and butter to the skillet between batches as necessary.
  • Spread each side of the buns with about 2 teaspoons of Paul's burger sauce. Season the tomato slices with salt and pepper and place the tomatoes on the bottoms of the buns. Place the cooked burger patties on top of the tomatoes and then top the burgers with shredded lettuce. Secure the tops of the buns on the burgers with frilled toothpicks or small bamboo skewers.

2 pounds ground beef
1 (1.25 ounce) envelope onion soup mix
½ cup mayonnaise
2 cups shredded Cheddar cheese
24 dinner rolls, split
½ cup sliced pickles

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Cover a baking sheet with aluminum foil and spray with cooking spray.
  • Mix together the ground beef and onion soup mix in a large skillet; cook and stir over medium-high heat until the beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Remove from heat. Stir the mayonnaise and Cheddar cheese into the ground beef mixture.
  • Lay the bottoms of the dinner rolls on the prepared baking sheet. Spread the cheese and beef mixture on the bottom half of each roll. Replace the tops. Cover with another sheet of aluminum foil sprayed with cooking spray.
  • Bake in the preheated oven until the burgers are heated through and cheese melts, about 30 minutes. Serve with sliced pickles.
