- In a large bowl add the warm water, salt, sugar, and yeast. Set aside for 5 minutes
- Then add mashed bananas and mix with a wooden spoon or hands preferably, followed by flour, and nutmeg. Mix well until flour and bananas have been fully incorporated.
- Set the mixture in a warm area and let it rise and double in size -approximately 1- 2 hours
- In a large, sauce pan pour vegetable oil, until it is at least 3 inches (or about 5 centimeters) high (too little will result in flatter balls), and place on medium heat until oil is 375 degrees.
- The dough is going to be sticky so use your hands to grab a little bit of mixture at time and drop in the oil or use a spoon to spoon up the batter, and another spoon or spatula to drop it in the oil, sort of in the shape of a ball. Do not overcrowd the pan.
- Do so in batch
- Fry for a few minutes until the bottom side is golden brown.
- Turn the ball over and fry for a few more minutes until the other side is golden brown.

- Mix the egg and milk together in a separate bowl.
- Lay a sheet of puff pastry out and cover with the mixed milk and egg.
- Slice the bananas and layer them on top of the puff pastry sheet.
- Lay your second sheet of puff pastry on top of the bananas and then cover again with the milk/egg mixture.
- Sprinkle with some brown or raw sugar for some extra sweetness.
- Bake at 180 degrees Celsius (356 F) for 12-15 minutes (or until golden brown).

Steps:
- Preheat oven to 170C/fan 150c/gas 5, Grease a 12 hole muffin tin - I lined the bases with a little circle of greaseproof paper too just incase!
- Mix the dry ingredients (flour, baking powder, spices, salt) in a large bowl.
- Mix the wet ingredients (sugar, egg, oil, milk, vanilla, banana) together until smooth and fully combined.
- Add the wet to the dry ingredients and stir together - don't over mix, just combine with a spoon). Divide the mixture in to the muffin tin.
- Bake for 20/25 minutes or until golden and until a knife comes out clean.
- Whilst the puffs are baking melt the butter in a pan/or microwave and mix the cinnamon and sugar together in a seperate bowl. Once the puffs are baked, remove from the tin and whilst they are still hot brush them with the melted butter and dip them in the cinnamon sugar.
