Steps:
- Place the sugar, lime juice, and the pitted cherries in a blender. Blend on high speed until smooth.
- If you like, you can strain the cherry mixture through a fine mesh sieve, to remove any small pieces of cherries. I didn't do this, and didn't find the bits of cherries bothersome.
- Divide the cherry lime syrup evenly among four glasses with ice. Pour about 9 ounces of sparkling water into each glass and stir. Top each glass with a cherry if you like.

- Combine cherries (pits and all) and sugar in a medium saucepan over medium heat. Stir to coat the cherries in sugar than use a potato masher to squash the cherries and release their juice (this will be easier to do once they warm up a little bit).
- Bring to a simmer, stirring occasionally, until the sugar has dissolved. Keep at a simmer, adjusting heat as necessary, and cook until cherries are soft and start to break down, about 15 minutes.
- Set a strainer over a bowl and pour cherry mixture into the strainer. Press down on the solids until all the juice has gone through the strainer. Discard solids and chill syrup until ready to use.
- When ready to serve, combine soda, lime juice, and syrup in a large pitcher. Stir gently to combine. Fill pitcher with ice and stir in lime slices. Taste and add more lime juice if it is too sweet. Serve immediately in ice filled glasses.

- Combine the sugar, hot water, and frozen dragon fruit in a heatproof jar or other container. Stir to help thaw the fruit and dissolve the sugar.
- Add the cucumber and optional jalapeno to a blender with enough water for the blender to operate (try 1/4 cup). Blend until mostly liquified, then use a fine strainer to remove the pulp, reserving the liquid. If you don't have a blender, you can use a muddler or a large wooden spoon to mash the cucumber and jalapeno in a small bowl or large measuring cup, then strain, pressing on the pulp to extract as much liquid as possible. Reserve the liquid.

- 1. In a medium saucepan over medium-low heat, bring 1 cup water, sugar, and ginger to a gentle simmer, stirring to dissolve sugar. You have now made a less-sweet gingered simple syrup. Remove simple syrup from heat, cover, and steep for about 30 minutes.
- 2. Over a medium bowl, pour syrup through a fine-mesh sieve, pressing minced ginger against sieve with the back of a spoon to extract flavor and the liquid. Discard ginger. Cover bowl and refrigerate until well chilled.
- 3. Evenly distribute peach slices among 6-8 tall glasses. For each glass, press peaches with a food mill masher, a muddler, or the back of a wooden spoon to release their juice.
- 4. Stir the lime juice into the simple syrup. Pour about 2-3 tablespoons chilled syrup over peaches. Pour in seltzer until glasses are about half full, and stir to mix. Add ice cubes; then top with seltzer. Garnish with mint sprigs.
