Steps:
- Preheat oven to 350.
- Line a loaf pan with parchment paper (or butter and flour it).
- In a large mixing bowl, sift the flour, baking soda, baking powder and salt. Set aside.
- In a mixing bowl, beat the coconut oil on medium speed until soft (about 3 minutes). Add the cheese and continue beating on medium for about another 3 minutes.
- Add the brown sugar and beat at medium speed until fluffy (about 5 minutes). Add the egg and bananas and mix until combined.
- Add the dry ingredients and mix on medium speed for around 3 minutes until combined
- Pour mixture into loaf pan.
- Bake 45-55 minutes. The bread should be golden brown.
- A knife or toothpick inserted in the middle will come out clean when the bread is done.

Steps:
- In a bowl, combine butter and sugar; mix well. Add eggs and extracts; beat on high speed until thickened. Stir in bananas. Combine the flour, baking soda and salt; gradually add to banana mixture. Fold in the chocolate, coconut and pecans. Transfer to two greased 8x4-in. loaf pans. Bake at 350° for 70-75 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks.

- Beat the margarine and brown sugar together until fluffy.
- Add the egg, beating until smooth.
- Stir in the mashed bananas and rum.
- In a large mixing bowl, stir the flour, salt and baking soda together.
- Gradually stir the egg mixture into the dry ingredients, stirring until the batter is moistened and blended.
- Spray a loaf pan with cooking spray.
- Spoon the batter into the loaf pan, spreading the top until smooth.
- Bake at 350 for one hour.
- Place loaf pan on cooling rack for 10 min's then remove loaf and continue to cool to room temperature.
- Banana bread is always better the day after it is made.
- Store in a loose plastic bag, loaves do not like to be in sealed bags.

I altered the Starbucks banana bread recipe to include my favorite substitutions and made it extra "banana-y". The whole wheat flour makes it healthier, the agave lowers the glycemic index, and the coconut oil and extra banana helps this "healthy" version taste better.

- Preheat oven to 325. Grease a 9x5x3 loaf pan and dust with flour.
- Mix the dry ingredients together in a large mixing bowl.
- Mash up the bananas in a large bowl.
- Add and mix the wet ingredients together with the bananas.
- Pour the wet ingredients into the dry ingredients bowl and stir together.
- Add 1/2 cup walnuts into the mix.
- Pour into prepared loaf pan.
- Top with remaining walnuts.
- Bake for 45-60 minutes until a toothpick comes out clean.

MOIST AND DELICIOUS BANANA BREAD
This is the best banana bread I have ever had. I buy really ripe bananas just so I can make this :-) Got the recipe years ago from my friend Rachel. We used to beg her to make this for us in college! I think the moistness is due to the 1/2 cup of oil - I didn't say it was the healthiest banana bread around, but it is worth the extra time on the treadmill!
