4 overripe American bananas
Oil, for deep frying
1 egg white
1/2 cup all-purpose flour, sifted
1/4 cup cornstarch
1/2 teaspoon baking powder
1/2 cup water, ice cold
1 tablespoon oil

Steps:

  • Cut the bananas into 1 inch length, set aside.
  • In a big bowl, mix all the ingredients in the Frying Batter together. Stir to mix well. Make sure the batter is smooth. Gently the bananas into the batter.
  • Heat up a small pot with 2-3 inches oil on high heat. The oil is ready when it's fully heated with a swirl of smoke coming from the surface.
  • Gently drop each piece of banana into the hot oil. Deep fry the bananas in batches. Turn the bananas over so both sides turn golden brown in color and become crispy.
  • Use a slotted spoon to remove the fried bananas out of the oil, drain on a plate lined with paper towels.
  • Repeat step 4 until bananas are used up. To serve, dust some powdered sugar on top of the bananas. You may also serve with maple syrup and chocolate sauce.

1 cup all-purpose flour
1/4 cup sugar
1 teaspoon salt
1/4 teaspoon ground nutmeg
1 egg, large, lightly beaten
1 tablespoon vegetable oil
1/2 cup milk
1 teaspoon vanilla
vegetable oil
9 bananas, firm and ripe, sliced into 1 inch pieces

Steps:

  • In a small bowl, combine the first four ingredients.
  • In a large bowl, combine the egg, oil, milk, and vanilla. Gradually add the flour mixture to the egg mixture, stirring often.
  • Pour the oil to a depth of 2 inches into a Dutch oven; heat to 375 degrees. Dip the banana slices into the batter; fry in hot oil 3 1/2 to 4 minutes or until golden. Drain on paper towels.

Vegetable oil (enough to completely cover the bananas)
5 ripe but firm small bananas
1 cup all-purpose flour or whole wheat flour ((or GF flour, almond flour or coconut flour))
3 large eggs (beaten and mixed with 1 tsp water)
1 cup bread crumbs

Steps:

  • Heat the oil to 350ºF (180ºC) in a deep-fry machine or heavy-bottom saucepan over medium heat. While oil is heating, peel the bananas, remove the stringy parts that cling to the peeled fruit, and cut crosswise in half.
  • Place the flour, eggs, and bread crumbs each in a separate bowl. Dredge the banana halves in flour to get an even coating. Shake to remove excess flour. Next, soak the banana halves in the beaten eggs mixed with 1 tsp water. Finally, cover the banana halves in bread crumbs.
  • Fry each half until lightly golden (do NOT overcrowd the pan), about 1 to 2 minutes. Remove with a slotted spoon. Place on a plate lined with a double layer of paper towels.

One 4-ounce bar semisweet chocolate, chopped
Small pinch cayenne pepper (less than 1/16 teaspoon)
1 tablespoon unsalted butter
4 slightly underripe bananas, split lengthwise in half, then cut crosswise in half
1/4 cup light brown sugar
1/3 cup sliced almonds, toasted

Steps:

  • For the chocolate sauce: Combine the chocolate and 1/4 cup water in a heavy small saucepan. Stir over medium-low heat until the sauce is melted and smooth. Remove from the heat. Stir in small pinch cayenne pepper. Set aside.
  • For the bananas: Place the brown sugar in a pie dish or on a plate. Toss the bananas in the brown sugar until nicely coated. Melt the butter in a heavy large skillet over medium-high heat until the butter becomes golden brown. Add the bananas to the hot pan cut-side down. Turn the bananas over as soon as they are golden brown and the sugar forms a crunchy coat on the bananas, about 30 seconds per side (do not allow bananas to become soft and mushy). Divide the bananas between 2 shallow bowls or plates. Spoon the chocolate sauce over the bananas. Sprinkle with the toasted almonds, and serve immediately.
  • Cook's Notes: To toast the almonds, arrange them in a single layer on a baking sheet. Bake in a preheated 350 degrees F oven for 6 to 8 minutes until lightly toasted. Cool completely before using.
  • An alternate way to melt the chocolate is to combine the chocolate and water in a small metal bowl over a small saucepan of simmering water, and stir the chocolate mixture until melted and smooth. Remove the bowl from over the water and set aside.

  • Leave to rest for one hour.

coconut ice cream or mango ice cream, to serve
4 teaspoons butter
4 teaspoons dark rum
3/4 cup firmly packed brown sugar

Steps:

  • Peel bananas and cut in half lengthways.
  • Place lightly beaten egg in a shallow bowl, and the combined ground hazelnuts and breadcrumbs in another shallow bowl.
  • Dip banana pieces firstly into egg, and then coat in hazelnut and breadcrumb mixture.
  • Heat cooking oil in a wok to 375ºF, and deep-fry bananas, in batches, until golden brown.

vegetable oil
1 1/2 tablespoons butter

  • Peel the bananas and cut them in half lengthways, then half again, so that you have long strips.
