A delicious meatloaf that's stuffed with a cheesy rice mixture and rolled up!

1 ½ ground beef
1 c. bread crumbs
8 oz Cheez Whiz
1 egg (beaten)
¼ tsp salt
1 ½ c. cooked white rice
2 Tbsp chopped parsley

Steps:

  • In a mixing bowl combine meat, bread crumbs, half of the processed cheese spread, egg and salt. Mix lightly.
  • Tear off a 12'' x 10'' rectangle piece of tinfoil. Pat out mixture to cover foil.
  • Combine the rest of the cheese spread, rice and parsley. Spread mixture over meat. Roll up, starting at the narrow end, pulling the tinfoil away from the meat as you roll it up. Place in refrigerate for several hours or overnight.
  • Remove from fridge and cut roll into eight slices; place in baking dish.
  • Bake in preheated oven at 350 degrees for 45 minutes or until meat is done.

These easy baked Italian Pinwheels are the perfect bite-size appetizer or party snack to pair with a cold beverage, a glass of wine, or your favorite cocktail. A prep-ahead option with just 10 minutes of effort!

1 refrigerated pie crust ((half of a 14.1-ounce Pillsbury package))
2-3 tablespoons Dijon mustard
3 ounces prosciutto ((about 6 very thin slices))
¾ cup grated mozzarella cheese
1-2 tablespoons grated Parmesan cheese
¾ teaspoon Italian seasoning ((or more to taste))
Optional garnish: chopped fresh herbs such as parsley or basil

Steps:

  • Allow the refrigerated pie crust to sit on the counter for about 10-15 minutes.
  • Unroll the crust into a flat circle.
  • Spread a thin layer of Dijon mustard on top of the pie crust, reaching all of the way to the edges.
  • Top with a single layer of prosciutto; overlapping in some places is fine.
  • Add mozzarella and Parmesan; sprinkle with Italian seasoning.
  • Tightly roll up the pie crust, pressing gently to seal the seam. Wrap in foil; refrigerate for at least 1 hour (or overnight).
  • When ready to bake, preheat oven to 425°F. Line a baking sheet with parchment paper or foil that has been sprayed lightly with nonstick spray.
  • Remove the foil wrap and slice the roll crosswise into ½-inch thick rounds. You should have about 13-14 rounds. I typically discard the tapered ends. Arrange pinwheels on the prepared baking sheet.
  • Bake for 10-11 minutes, or until the cheese is melted and the pastry is golden brown. Cool slightly, then serve warm or at room temperature. Garnish with fresh herbs, if desired.

3 large eggs
1 cup dry bread crumbs
1/2 cup finely chopped onion
1/2 cup finely chopped green pepper
1/4 cup ketchup
2 teaspoons minced fresh parsley
1 teaspoon dried basil
1 teaspoon dried oregano
1 garlic clove, minced
2 teaspoons salt
1/2 teaspoon pepper
5 pounds lean ground beef (90% lean)
3/4 pound thinly sliced deli ham
3/4 pound thinly sliced Swiss cheese
TOMATO PEPPER SAUCE:
1/2 cup finely chopped onion
2 celery ribs, chopped
1/2 cup chopped green pepper
1 garlic clove, minced
1 to 2 teaspoons olive oil
2 cups chopped fresh tomatoes
1 cup beef broth
1 bay leaf
1 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon dried thyme
1 tablespoon cornstarch
2 tablespoons cold water

Steps:

  • In a large bowl, combine the first 11 ingredients. Crumble beef over mixture and mix lightly but thoroughly. On a piece of heavy-duty foil, pat beef mixture into a 17x15-in. rectangle. Cover with ham and cheese slices to within 1/2 in. of edges. , Roll up tightly jelly-roll style, starting with a short side. Place seam side down in a roasting pan. Bake, uncovered, at 350° until a thermometer reads 160°, 1-1/4 to 1-1/2 hours., In a large saucepan, saute the onion, celery, green pepper and garlic in oil until tender, 3-5 minutes. Add tomatoes, broth, bay leaf, sugar, salt and thyme. Simmer, uncovered, for 30 minutes. Discard bay leaf. , Combine cornstarch and water until smooth; stir into sauce. Bring to a boil; cook and stir until thickened, about 2 minutes. Drain meat loaf. Serve with sauce.

1/4 cup plus 2 tablespoons extra-virgin olive oil
4 teaspoons (about 6 cloves) chopped garlic
2 medium onions, diced
2 red peppers, seeded, small diced
1/2 cup chopped basil leaves
2 tablespoons chopped parsley leaves
4 eggs
1 teaspoon salt
1/2 teaspoon black pepper
2 cups grated Parmesan
1 1/2 cups breadcrumbs
3 pounds ground beef
2 tablespoons Worcestershire sauce
2 tablespoons balsamic vinegar
1 cup marinara sauce

Steps:

  • Preheat oven to 350 degrees F.
  • Heat 1/4 cup of the olive oil in a medium saute pan over medium heat and add the garlic. Saute 1 minute and then add the peppers and onions and saute until just soft. Let cool.
  • Whisk together the basil, parsley and eggs in a small bowl, and then add the salt and black pepper. Combine the Parmesan and breadcrumbs in another small bowl. Thoroughly combine the meat, herbs and eggs, Parmesan and breadcrumbs, the Worcestershire, vinegar and remaining 2 tablespoons olive oil together in a large bowl using your hands, making sure not to overmix.
  • Pack the meat mixture into an oiled loaf pan, if you do not have a loaf pan, form the meat mixture into a loaf shape on an oiled oven tray or baking dish. Top with the marinara making sure to spread evenly over the top.
  • Bake for approximately 50 to 60 minutes or until an instant-read thermometer registers 160 degrees F in the middle of the meatloaf. Remove from the oven and let rest for 5 minutes. Slice and serve.

8 ounces cream cheese, softened
1 tsp Italian seasoning
1 tsp garlic powder
1 tbsp Italian dressing
1/4 cup red onion, minced
1/4 cup parmesan cheese, grated
5 large sun dried tomato tortillas
15 slices provolone
15 slices ham
15 slices salami (I used peppered salami)
15 slices hot capocollo or pepperoni
1/2 cup pepperoncini peppers
1/2 cup roasted red bell peppers

Steps:

  • Combine the cream cheese, Italian seasoning, garlic powder, Italian dressing, red onion and parmesan cheese in a small bowl. Set aside.
  • Spread 2 tablespoons of the cream cheese mixture onto each tortilla. On the bottom half of the tortilla layer provolone cheese, salami, and hot capocollo. Divide the pepperoncini peppers and the roasted red bell peppers onto each tortilla.
  • Starting at the bottom of the tortilla with the filling roll up into a tight cylinder. Wrap tightly in plastic wrap. Refrigerate for 2 hours to give the pinwheels time to set and help with slicing.
  • Unwrap the pinwheels and cut into 1 inch slices. Serve and enjoy!

3/4 lb bulk Italian sausage
1 egg
1 can (8 oz) pizza sauce
1/4 cup Progresso™ Italian style bread crumbs
1/4 teaspoon pepper
2 cups shredded 6 cheese Italian cheese blend (8 oz)
2 cups loosely packed fresh spinach leaves

Steps:

  • Heat oven to 350°F. In large bowl, mix ground beef, sausage, egg, 1/2 cup of the pizza sauce, the bread crumbs and pepper.
  • On foil, pat mixture to12x8-inch rectangle. Sprinkle evenly with cheese; gently press into meat. Top with spinach. Starting at short end, roll up tightly, using foil to start roll and tucking in spinach leaves; seal ends. Place seam side down in ungreased 12x8-inch (2 quart) glass baking dish.
  • Bake 1 hour. Spread remaining pizza sauce over top. Bake 15 minutes longer or until thermometer inserted in meatloaf reads 160°F. Let stand 5 to 10 minutes before serving.

1 can (8 ounces) tomato sauce, divided
1/2 cup dry bread crumbs
1/2 cup finely chopped onion, optional
1/2 cup finely chopped green pepper, optional
1 teaspoon dried oregano, divided
1 teaspoon salt
1/8 teaspoon pepper
1-1/2 pounds ground beef
1/2 cup shredded part-skim mozzarella cheese
2 tablespoons grated Parmesan cheese

Steps:

  • In a bowl, combine the egg, half of the tomato sauce, bread crumbs, onion and green pepper if desired, 1/2 teaspoon of oregano, salt and pepper. Add beef; mix well. , On a large piece of heavy-duty foil, pat meat mixture into a 14x8-in. rectangle. Sprinkle cheeses to within 1/2 in. of edges. Roll up, jelly-roll style, starting with a short side and peeling foil away while rolling. Seal seam and ends. Transfer to a microwave-safe glass 9x5-in. loaf pan. , Microwave, uncovered, at 50% power for 9 minutes, rotating a half turn once; drain. Continue cooking on 50% power for 14-16 minutes or until meat is no longer pink, rotating a half turn once. In a bowl, combine the remaining tomato sauce and oregano. Pour over meat loaf. 1 (14-oz.) jar tomato pasta sauce

Steps:

  • Heat oven to 350°F. In large bowl, combine all ingredients except pasta sauce; mix well. Add 1 cup pasta sauce; mix well. Press mixture into ungreased 8x4-inch loaf pan.
  • Bake at 350°F. for 40 minutes. Pour remaining pasta sauce over meatloaf. Bake an additional 15 to 20 minutes or until thoroughly cooked in center and meat thermometer registers 160°F. Let stand 10 minutes before serving.
