⅓ cup Italian-style dressing (such as Bernstein's Restaurant Recipe®)
¾ teaspoon lemon pepper
salt and ground black pepper to taste

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Lay asparagus flat in a 9x9-inch pan. Add Italian dressing, lemon pepper, salt, and black pepper; toss to coat. Transfer asparagus using tongs to the grill.
  • Grill asparagus on preheated grill until tender, 3 to 5 minutes per side. Return asparagus to pan and toss with remaining dressing mixture.

4 tbsp Olive Oil
1/4 Cup Balsamic Vinegar
1/2 tbsp Garlic, grated
1/2 tsp Paprika
1/4 tsp Chili Flakes

1/4 tsp Black Pepper
1 Shallot Onions, minced
1/4 Cup Feta Cheese, crumbled, for serving

  • Pre-heat grill on high.
  • Slice each brussels sprout in half, lengthwise. Set aside.
  • Brussel Sprouts Marinade: In a wide bowl, add olive oil, balsamic vinegar, garlic, honey, paprika, chili flakes and salt. Whisk to emulsify. Take 2 tbsp out in small bowl. Add brussel sprouts to remaining marinade in wider bowl. Mix to coat all in dressing. Season with generous pinch of salt. Set aside. In remaining marinade in small bowl, add minced shallot and set aside.

  • Skewers: Thread brussel sprouts on metal skewers. (See Note 1) Make sure to keep cut side on same side for all sprouts. This ensures even cooking and better placement on the grill.
  • Grill: Spray the grill with cooking oil spray. Place brussel sprouts skewers cut side down. Grill until sprouts are tender and cooked through, about 10 minutes. Keep an eye to avoid burning.

1/2 cup decent quality balsamic vinegar or just a few drops of truly top-notch balsamic vinegar
1 tablespoon kosher salt,
2 bunches (about 2 lbs) asparagus (tough ends snapped off)
1/4 cup extra-virgin olive oil (divided)
1 cup freshly grated Parmigiano-Reggiano cheese

Steps:

  • Preheat the oven to 350°F (175˚C).
  • If using ridiculously pricy, top-notch balsamic vinegar, skip this step. Otherwise, throw the windows open and turn on the exhaust fan. Then place the vinegar in a small saucepan and bring to a boil over medium-high heat. Reduce the heat and simmer, swirling the pan occasionally, until the vinegar is reduced by half, anywhere from 7 to 15 minutes, depending on the size of the saucepan. Remove from the heat.
  • Bring a pot of water to boil. Add 1 tablespoon of the salt and the asparagus and blanch until barely tender, about 1 minute for spears of average thickness, more for thicker spears and less for skinnier ones. Drain and rinse under cold water to stop the cooking. Pat the asparagus dry with paper towels.
  • Place the asparagus in a single layer on a rimmed baking sheet or, if necessary, two sheets. Sprinkle the spears with salt to taste, drizzle with 2 tablespoons of the oil, and turn to coat. Shower the asparagus with the Parmigiano-Reggiano cheese.
  • Bake until the spears are tender and the cheese is browned and almost bubbling (it won't actually melt), about 5 minutes.
  • Use a spatula to shimmy the asparagus from the baking sheet to a platter. Drizzle with 2 tablespoons of the reduced balsamic vinegar or a few drops of the really top notch stuff and the remaining 2 tablespoons olive oil. Serve immediately, with the remaining reduced balsamic vinegar on the side.

1- 1 1/2 lb ham steak
1 bunch fresh asparagus
1 large can of sliced pinapple rings in its own juice. (will be grilling so don't want the kind in syrup)
2 Tbsp balsamic vinegar
2 Tbsp maple syrup (the real stuff really makes a difference here)
2 Tbsp dijon mustard
3 Tbsp olive oil
salt and pepper

  • 1. Pre heat your indoor grill pan and coat with olive oil before preheating.(can use outdoor grill as well) Use Med high heat
  • 2. Pat dry Ham Steak with paper towel and place on grill for 7 to 8 minutes per side depending on thickness
  • 3. Place pineapple on grill with steak and turn same timing as ham steak. Preheat oven on broil
  • 4. The last 8 minutes of the ham cooking in a small saute pan place balsamic vinegar and cook on med high heat for several minutes to cook down. Add Maple syrup and dijon mustard and mix in mustard well cook another 3 min to thicken a bit
  • 5. Take ham and pineaple off grill put in serving dish and cover ham with glaze and let rest while asparagus is cooking
  • 6. bend one asparagus stalk until it breaks and cut other stalks to same length. Place on baking sheet and drizzle with olive oil salt and pepper. Place under broiler for 5 minutes and serve

Steps:

  • Preheat the grill to medium heat, about 350° to 400°F, and brush the grill grates clean.
  • Remove the woody ends of the asparagus by snapping the ends off. Bend each stalk gently about 2/3 of the way down the stalk until it naturally breaks where the woody part begins. If desired, use a knife to trim the ends of the stalks to tidy up the cuts. Discard the ends.
  • Place the asparagus spears in a shallow bowl or on a platter or baking sheet. Drizzle with the olive oil and toss the spears with your hands to coat. Season with kosher salt and freshly ground black pepper and toss again.

1 medium head garlic, unpeeled
5 tablespoons extra virgin olive oil, divided
salt and pepper to taste
2 tablespoons minced shallot
1 ½ teaspoons balsamic vinegar
½ teaspoon red wine vinegar
1 ½ pounds thick stemmed asparagus
4 slices sourdough bread

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Coat the head of garlic with 1 tablespoon olive oil, salt, and pepper. Place on a baking sheet, and roast 45 minutes in the preheated oven, until golden brown. Once the garlic is roasted, cut the head in half horizontally, exposing all the cloves. Squeeze both halves into a bowl, discarding any skin. Whisk in 2 tablespoons of olive oil, salt, and pepper. Set aside.
  • While the garlic is roasting, place the minced shallot in a bowl with the balsamic and red wine vinegars for about 30 minutes to let the flavors blend. Whisk in remaining olive oil, and season with salt and pepper. Place asparagus spears in the mixture until ready to grill.
  • Preheat grill for medium-high heat.
  • Place asparagus in a large skillet or directly on the grill. Grill the asparagus, turning over once, until tender, about 10 minutes. While asparagus is grilling, spread the roasted garlic mixture on the bread. Grill bread until toasted. 1/2 cup balsamic vinegar
1 garlic clove, smashed
1/2 lb medium asparagus (about 20 spears)
1 1/2 tablespoons hot pepper oil (I use my Hot Pepper Oil)
1/4 teaspoon kosher salt
1/8 teaspoon fresh ground black pepper

Steps:

  • In a small saucepan bring the vinegar to a simmer over medium heat.
  • Reduce the heat until just a few bubbles break through the surface.
  • Add the smashed garlic.
  • Cook at a slow simmer until about 1/4 cup of vinegar remains (about 20 minutes).
  • If you cook too quickly or it reduces too much, it will turn bitter rather than sweet.
  • Remove the sauce pan from the heat and let cool to room temperature (The syrup will continue to thicken as it cools).
  • Heat grill to medium heat.
  • Remove and discard all tough, woody ends from the asparagus spears.
  • Wash and pat dry.
  • Lightly coat the asparagus with the Hot Pepper Oil.
  • Season evenly with the salt and pepper.
  • Brush the cooking grate clean.
  • Lay the asparagus perpendicular to the bars on the grate.
  • Grill over direct medium heat with the lid closed as much as possible, until lightly charred and crisp-tender, 4-6 minutes, rolling the spears a couple of times and swapping their positions as needed for even cooking.
  • Arrange the asparagus on a platter or individual plates.
  • Remove the garlic from the syrup.
  • If the syrup is stiff, warm it briefly over medium heat.
  • Drizzle some of the syrup over the spears (you may not need all of it.).
  • Season with more salt, if desired.
  • Serve warm or at room temperature.

Simple Roasted Asparagus with Balsamic and Parmesan image

Adapted from the Canal House Cooks Every Day cookbook. Asparagus: The Canal House ladies, Christopher Hirsheimer and Melissa Hamilton, suggest purchasing fat asparagus and peeling them. Do this if you are able to or simply buy what is available. I never peel - lazy! - but do so if you wish. Balsamic: You can buy aged balsamic vinegar that's syrupy or you can simmer balsamic vinegar until it's reduced by half its volume. Simply simmer 1/4 cup vinegar in a small saucepan until it is thick and syrupy. Keep a close watch the entire time, and transfer the balsamic to a small bowl as soon as it starts to thicken because it will continue to reduce as it sits. This will give you 1 to 2 tablespoons of syrupy balsamic vinegar.

1 lb. asparagus spears, see notes above
2 tablespoons olive oil
salt, preferably flaky sea salt - I've been using Maldon for this one
freshly cracked black pepper to taste
Parmigiano Reggiano
1 tablespoon syrupy balsamic vinegar, such as this, or see notes above

Steps:

  • Heat your oven to 425ºF, convection roast if you have it.
  • To prepare the asparagus, snap off the end of each spear. Discard or compost the end. Cut the spears in half. Transfer to a 9×13-inch baking dish or a sheet pan or something similar.
  • Drizzle with the olive oil. Season with salt and pepper to taste. Toss with your hands to ensure each spear is nicely coated and seasoned. Transfer pan to the oven for 20-25 minutes or until the tips of the asparagus are just lightly beginning to char.
  • Remove the pan from the oven and transfer to a serving platter. Taste one spear. If it tastes under-seasoned, sprinkle the entire dish with more salt to taste. Using a peeler - this is my favorite - shave parmesan over top to taste.
  • Finish the dish by drizzling the syrupy balsamic over top.

1/2 cup balsamic vinegar
1 tablespoon olive oil
12 slices French bread baguette (1/4 inch thick)
2 medium nectarines, halved
1/4 cup fresh goat cheese, softened
1/4 cup loosely packed basil leaves, thinly sliced

Steps:

  • In a small saucepan, bring vinegar to a boil; cook 10-15 minutes or until liquid is reduced to 3 tablespoons. Remove from heat., Brush oil over both sides of baguette slices. Grill, uncovered, over medium heat until golden brown on both sides. Grill nectarines 45-60 seconds on each side or until tender and lightly browned. Cool slightly., Spread goat cheese over toasts. Cut nectarines into thick slices; arrange over cheese. Drizzle with balsamic syrup; sprinkle with basil. Serve immediately.

1/2 cup extra-virgin olive oil
1/2 cup balsamic vinegar
3 medium shallots, thinly sliced (about 1 cup)
2 cloves garlic, lightly smashed
2 sprigs fresh oregano
2 bunches medium asparagus (about 2 pounds), woody ends trimmed and discarded
Kosher salt and freshly ground black pepper
1/4 cup fresh flat-leaf parsley leaves, roughly chopped

Steps:

  • Stir together the olive oil, balsamic vinegar, shallots, garlic and oregano in a medium bowl. Pour the marinade into a 1-gallon resealable plastic storage bag, add the asparagus and seal the bag closed. Place the bag in a bowl or on a plate (just in case it leaks) and marinate in the refrigerator for 8 to 24 hours, flipping a couple of times.
  • Preheat an outdoor grill to medium heat. While the grill heats up, remove the asparagus from the marinade, allowing any excess marinade to drip off. Season liberally on all sides with salt and pepper.
  • Place the asparagus on the hot grill and cook, flipping as needed, until crisp-tender and charred in spots, about 8 minutes. Transfer to a platter, garnish with the chopped parsley and serve immediately.

2 bunches asparagus, trimmed, rinsed, and dried
2 tablespoons extra-virgin olive oil
kosher salt and pepper
2 tablespoons balsamic vinegar syrup (recipe below)
**Balsamic Syrup Instructions: While asparagus is cooking, prepare the balsamic syrup by cooking ½ cup balsamic vinegar on medium heat until it thickens and forms a syrup like consistency, about 3-4 minutes. Be careful not to let it thicken too much

Steps:

  • Preheat grill on medium-high heat. Coat the asparagus with olive oil using your hands. Season with salt and pepper. Coat the grill with olive oil. Spread asparagus across the grill and cook for 3 minutes. Turn the asparagus over and cook for an additional 3 minutes or until asparagus is slightly crunchy, not soft.
  • Remove from grill and transfer to a platter. Drizzle the balsamic vinegar syrup over the asparagus before serving. Season with additional salt and pepper to taste.
  • ***To roast the asparagus in the oven, follow the instructions above except cook the asparagus in a preheated 450 degree oven. Cook for 15-20 minutes.
