7 (16 ounce) cans black beans, drained
2 (4 ounce) jars capers, drained
1 large raw yellow onion, grated
1 small raw yellow onion, grated
3 (4 ounce) jars sliced pimientos, drained, rinsed
3 teaspoons cumin
4 tablespoons cilantro
3 limes, juice of
3 (8 ounce) cans green chilies, chopped variety
13 cups regular flavor V8 vegetable juice
6 tablespoons extra virgin olive oil
6 tablespoons Worcestershire sauce
1 1/2 cups garlic
3 tablespoons balsamic vinegar
2 (12 ounce) jars medium heat salsa
1 (6 ounce) jar bottle hot salsa
3 large chopped cucumbers

Steps:

  • Combine beans and V8 juice, oil, lime juice, cucumber, onion, Worcestershire Sauce, and garlic, etc, etc, hand blend until only till a bit chunky NEED TO PUT IN 2 LARGE POTs TO BLEND.
  • Chill at least three+ hours. SERVE cold!
  • Serve with: COBBETTES & corn tortillas.

6 slices baguette, sliced on severe angle to yield long angled 1/4 inch thick pieces
2 plum tomatoes, seeded and finely diced
1/2 European or seedless cucumber, 1/4 finely diced, 1/4 cut in larger chunks
2 ribs celery, 1 finely diced, 1 cut in chunks, leafy green tops in tact
1 green bell pepper, seeded, 1/2 finely diced, 1/2 chunked
1 small white onion, half finely chopped, half chunked
The juice of 1 lime
1 can crushed tomatoes, 15 ounces
1 tablespoon extra-virgin olive oil
1 teaspoon to tablespoon hot sauce, such as Tabasco, to your taste
Salt, to your taste
2 sprigs fresh oregano
A handful flat leaf parsley leaves

Steps:

  • Toast bread lightly under hot broiler on both sides. Let cool.
  • Combine chopped fresh tomatoes with finely diced cucumber, celery, pepper, and onion in a bowl. Dress with the juice of 1/2 lime. Set aside.
  • Place remaining chunked veggies in food processor with the juice of remaining half lime, crushed tomatoes, extra virgin olive oil, hot sauce, a little salt, the leaves of 1 sprig of oregano and a few leaves parsley. Process until smooth. Adjust salt and hot sauce to your taste. Chop remaining parsley and oregano and add to diced veggies. Season veggies with salt, to taste.
  • Pour puree into shallow bowl or dish, just enough to coat the bottom. Set a toast on each dish and top with equal amounts of diced vegetables. Serve.

MARGARITA GRILLED TUNA & BLACK BEAN SALAD TORTILLA BOWLS

I love Margarita grilled tuna and this is my take on a popular restaurant version made into a salad. Now, you can buy the pre-made tortilla bowls these days at specialty markets or even right in the grocery store; however they are pretty easy to make as well. This takes a few steps but it is well worth it for a very unique salad which you can easily entertain with. Take advantage of making the beans and sour cream the day before to really help save time. This is a great twist on Mexican salad. Save yourself some steps. Make the beans ahead and the sour cream and just put in the fridge. Then just prepare your veggies, make the bowls and grill the tuna which doesn't take any time. Reheat the beans in the microwave and you can put it together in minutes.

4 tuna steaks
1 1/4 cups margarita mix with tequila (minus 1 tablespoon for the beans)

pepper
4 flour tortillas (I use the smaller ones, or just buy the premade tortilla bowls)
1 medium onion, cut in quarters and thin sliced
1/2 head iceberg lettuce, shredded
2 cups monterey jack pepper cheese (or your favorite brand shredded)
black olives, sliced
2 avocados, sliced
2 (15 ounce) cans black beans (rinsed and drained)
1 small onion, chopped fine
1 -2 tablespoon garlic, minced (more or less to taste)
1 tablespoon salsa
1 chipoltes in adobo sauce, diced fine
1/2 lime, juiced
1 tablespoon margarita mix
1 tablespoon cumin
1 tablespoon olive oil
salt
pepper
8 ounces sour cream
1/2 chipotle chile in adobo, minced
1/2 lime, juiced
1 tablespoon fresh cilantro, minced fine

Steps:

  • Marinade -- Marinate the tuna steaks. Add the tuna in a large baggie with the margarita mix (minus 1 tablespoon for the beans). Let marinate 1-2 hours, no longer.
  • Tortilla Bowls -- Make the tortilla bowls. Preheat a oven to 375 degrees. Make sure the shelf is in the middle. Spray a oven proof stainles or glass bowl with a non stick spray. Push the tortilla in the bowl and bake on a cookie sheet for 15-20 until golden brown, remove and let cool 5-10 minutes. It will crisp up. Also many grocery stores and specialty markets also carry the pre-made bowls. Old El Paso and Taco Bell are 2 brands that make them.
  • Beans -- Add the olive oil to a small saute pan on medium heat. Add the garlic and onion and cook 3-4 minutes until tender. Then add the beans, salsa, chipotle, lime juice, margarita mix and cumin and continue to cook on medium heat for about 5 minutes. Season with salt and pepper if necessary and cook on low another 5 minutes. These are good made ahead and then just reheated when ready to use.
  • Sour Cream Sauce -- Mix the sour cream, chipotle, lime juice and cilantro together and refrigerate until ready to use.
  • Salad -- Prepare your lettuce, onions and avocado and set to the side.
  • Tuna -- Remove from the marinade and season with salt and pepper. The tuna is best on an outside grill, but it also can be done on a inside grill pan, or just saute pan, Just a little olive oil on the pan or spray with a non stick spray and grill on high heat until you get nice grill marks. You want the tuna medium to medium rare, so just 3-4 minutes on the first side and even less on the second side. Your cooking time will depend on the thickness of your tuna steaks. Remove from the pan and cover with foil as you make the salad.
  • Salad -- Take one of your salad bowls and fill the bottom with some of the shredded lettuce, onion slices; then the beans, cheese, a little more lettuce. Top with the sliced tuna and avocado slices. Finish by garnishing with the olives and sour cream sauce. ENJOY!

3 cups chopped peeled and seeded tomatoes
1 (12 ounce) can spicy vegetable juice
1 cup cubed cooked ham
1 (15 ounce) can black beans or 1 (15 ounce) can garbanzo beans, rinsed and drained
1/2 cup summer squash or 1/2 cup zucchini (or combination)
1/2 cup chopped green sweet peppers or 1/2 cup yellow sweet pepper
1/4 cup thinly sliced green onion
2 tablespoons Italian salad dressing
bottled hot pepper sauce (optional)

Steps:

  • In a large mixing bowl combine tomatoes, juice, ham, beans, cucumber or squash, chopped pepper, green onions, and dressing.
  • Cover and chill for 2 to 24 hours.
  • If desired, serve with bottled hot pepper sauce.
  • Makes 4 main-dish servings.
  • *Note:If you're not so hot about hot and spicy food, you can use regular vegetable juice, or even the reduced-sodium version.
  • Make-Ahead Tip: Combine ingredients; cover and chill for 2 to 24 hours.

I absolutely love the flavors in guacamole, so I thought I'd try to find a way to use all the flavors in a different way. This recipe served two, but it would be easy to adapt to a larger crowd. I topped mine with sliced grilled chicken, but I think I'm going to try grilled shrimp next time.

1 avocado
2 cups spring greens
1/4 large red onion
1 green onion
2 tablespoons cilantro
1 lime
1/4 teaspoon freshly ground sea salt
10 grape tomatoes
1/2 cup garlic vinaigrette

Steps:

  • Place 1 cup of the spring mix in the bottom of two serving bowls.
  • Cut red onion into rings and arrange a layer of on each bed of greens.
  • Separate avocado from skin and remove pit.
  • Cut into slices and arrange on salads.
  • Sprinkle salads with sea salt and the juice of the lime.
  • Chop fresh cilantro and distribute evenly over the two salads.
  • Thinly slice green onion and add to salads.
  • Arrange the tomatoes on the salads.
  • Dress liberally with the vinaigrette.
  • Top with slices of steak or chicken (or grilled shrimp or salmon), if desired.
