ITALIAN SFINGI (ITALIAN DOUGHNUTS)

These Sicilian doughnuts are delicious served warm! The recipe comes from one of my favorite cookbooks titled "Cucina Deliziosa", which was compiled by the Charity Guild of Saint Joseph in Houston, Texas.

Number Of Ingredients 9

3 cups flour
3 tablespoons sugar
6 teaspoons baking powder
3 eggs, beaten
1 1/2 cups water
1 teaspoon vanilla
corn oil (for frying)
1 cup powdered sugar
1 tablespoon cinnamon

Steps:

  • Mix flour, sugar, and baking powder.
  • Add eggs, water, and vanilla; mix well.
  • Drop batter by tablespoons in hot, deep oil.
  • If oil is hot enough, sfingi will cook and turn over without help.
  • If not, turn with a large spoon to brown on both sides.
  • Add as many sfingi that will fit in skillet or deep-fryer.
  • Fry until golden brown.
  • Drain on paper towels.
  • Combine powdered sugar and cinnamon.
  • Sprinkle warm sfingi with powdered sugar and cinnamon mixture.
  • Delicious served warm!

Sfingi are also called zeppole. You'll never realize you're eating ricotta cheese! These are very good - be sure to eat them while they're warm.

1 pound ricotta cheese
2 eggs
2 tablespoons white sugar
1 ½ teaspoons vanilla extract
1 ½ tablespoons baking powder
1 cup all-purpose flour
2 quarts vegetable oil for frying
¼ cup honey
¼ cup confectioners' sugar for dusting

Steps:

  • In large bowl, combine ricotta, eggs, sugar and vanilla. Mix together baking powder and 1/2 cup flour. Fold into ricotta mixture. Add enough of remaining flour to make a thick batter. Let rest 1 hour.
  • Heat oil in large heavy saucepan over high heat until a small amount of batter dropped in oil sizzles and starts to color. Drop batter by teaspoons into hot oil and deep fry until golden. Remove with slotted spoon and drain on paper towels.
  • Stack sfingi on serving platter in a pyramid. Drizzle stack with honey and dust with confectioner's sugar.

Topping a thick-crust pizza with bread crumbs might sound like a strange idea, but it really is the crispy, cheesy secret sauce behind this Sicilian Christmas Pizza. Well, that and the actual sauce of onion and anchovies--ingredients you might want to keep secret from guests. Also key is the extremely sticky dough, which bakes into a feather-light, spongy crust that contrasts perfectly with the crumbly topping. Garnish with the customary dried oregano if desired.

2 cups warm water (100 to 110 degrees F (40 to 45 degrees C))
1 (.25 ounce) package active dry yeast
1 ½ teaspoons kosher salt
1 teaspoon white sugar
3 tablespoons olive oil
4 ⅔ cups all-purpose flour, or more as needed
2 tablespoons olive oil
2 large yellow onions, diced
salt to taste
1 teaspoon red pepper flakes
1 teaspoon freshly ground black pepper
1 tablespoon tomato paste
1 teaspoon dried oregano
9 oil-packed anchovy fillets, drained and 1 tablespoon oil reserved
1 ½ cups marinara sauce
¼ cup water
¾ cup fine plain dry bread crumbs
1 cup grated Pecorino Romano cheese
6 tablespoons olive oil, divided
3 ounces shredded mozzarella cheese
3 ounces shredded aged provolone cheese

Steps:

  • Pour warm water into the bowl of a stand mixer fitted with the dough hook. Sprinkle yeast on top and let bloom. Add salt, sugar, olive oil, and flour. Knead, scraping down sides as necessary, until dough is very elastic and sticky, 6 to 7 minutes. Cover and let rise in a warm place until doubled in size, about 90 minutes.
  • Heat olive oil over medium heat. Add onions and salt. Saute, stirring occasionally, until onions soften, sweeten, and turn translucent, 6 or 7 minutes. Add red pepper flakes, black pepper, tomato paste, oregano, and anchovies; mix until anchovies dissolve. Add marinara sauce, rinse out the container with water, and add the water. Stir and let simmer on medium-low heat until flavors come together, about 20 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine bread crumbs and Pecorino Romano cheese in a bowl; toss together with a fork. Add the reserved anchovy oil and 2 tablespoons olive oil. Mix until bread crumbs are well moistened.
  • Generously coat a rimmed 13x18-inch sheet pan with up to 3 tablespoons olive oil. Oil your hands and turn dough out onto pan. Pull, stretch, and press it to the sides of the pan, pausing to let dough rest whenever it shrinks back too quickly.
  • Spoon sauce over the dough and spread up to about 1/2 inch from the edges. Add mozzarella and provolone cheeses. Sprinkle bread crumb mixture evenly on top; do not press down. Drizzle remaining olive oil on top.
  • Bake in the preheated oven until pizza is well browned is bottom is cooked, about 35 minutes. Bake for as as long as you can without the crumbs on top burning so that the crust cooks as much as possible.
  • Slide pizza onto a cooling rack to prevent the bottom from getting soggy. Transfer to a cutting board once cooled.

A variation of the traditional sfinge recipe. A simple batter similar to Zeppoli, dropped into hot oil, fried crisp and dusted with powdered sugar.

1 lb ricotta cheese
1/2 cup sugar
1 teaspoon vanilla
6 eggs
2 cups self-rising flour

Steps:

  • Mix ricotta cheese with sugar, vanilla and eggs.
  • Mix in Self-Rising flour and beat until smooth.
  • Heat oil to 370 degrees.
  • Drop mixture by tablespoons a few at a time into oil.
  • Remove from oil when they reach a golden brown.
  • Drain on absorbent paper.
  • Sprinkle with confectioner's sugar, cinnamon sugar or honey.
  • Serve Warm.

Fried Dough / Sfingi Recipe - (4.2/5) image

Number Of Ingredients 6

1 tablespoon yeast
1 3/4 cups warm water
1 teaspoon salt
4-5 cups all purpose flour (use 1-2 cups for thinner dough)
1 cup sugar
1 tablespoon cinnamon

Steps:

  • Mix the yeast into 1/4 cup of warm water and let sit for 10 minutes until foamy. Add the rest of the water and the salt. Mix. Add the flour one cup at a time. You can use your hands or a food processor to mix it, but I prefer my big standing mixer with a dough hook. Mix in the flour until it forms a ball, then knead for 5-10 minutes (3-4 minutes in the mixer). Take balls of dough about the size of a small lemon and flatten them until they're about 3″ in diameter. Place on a floured towel or cookie sheet and cover with another clean towel. Let rise in a warm spot for 30 minutes. Heat vegetable oil in a deep fryer or a large pan until it's about 375 degrees fahrenheit. To test, drop a small piece of dough in. It should puff up and sizzle. While you're waiting, mix together sugar and cinnamon. Put this in a paper bag and mix together. Fry the dough about 3-4 minutes, until lightly browned. Drain on brown bags or paper towels, then shake in the bag with the cinnamon and sugar. Mmmmmm!

A recipe that was from my Sicilian grandmother (Nana). I don't know if it is original, but I cooked this as a child and now for my grandchildren. I hope it gets passed on to my great-grandchildren.

4 eggs
1 c water
2 Tbsp sugar
2 c flour
2 tsp baking powder
1 tsp salt
MIXTURE TO ROLL SFINGE IN:
1/2 tsp cinnamon
3/4 c sugar

Steps:

  • 1. Beat Eggs and Water, blend well and set aside.
  • 2. Combine dry ingredients together (sugar, flour, baking powder, salt). Stir into egg mixture. Cover and set in warm place for 30 minutes.
  • 3. Drop 1 tbsp of batter in oil (3 at a time) or you can also use some oil in a pan to cook the sphinge. Drain on paper towel.
  • 4. On wax paper combine sugar and cinnamon together. Roll the sphine in the mixture
