THE BEST MEAT AND POTATOES
This recipe will please not only the meat-and-potato lover in your house but will also please the cook. It comes together in just 30 minutes with minimal cleanup! We seared tender, juicy strip steaks in a hot cast-iron skillet, then made a fast pan sauce with mustard, wine and herbs. Mashed potatoes are kicked up with sour cream, horseradish and spinach for a stick-to-your-ribs side dish that's a cinch to prepare in the microwave.

Steps:
- Put the potatoes and 2 tablespoons water in a large microwave-safe bowl. Cover tightly with plastic wrap and poke a few holes in the top. Microwave until the potatoes are tender and can be easily broken apart with a fork, about 15 minutes.
- Carefully remove the plastic (watch out for hot steam) and add the sour cream, horseradish, 4 tablespoons butter, 1 teaspoon salt and some black pepper to the bowl and mash until creamy. Fold in the spinach until wilted and well combined.
- Rub both sides of each steak with the garlic clove, then put the clove in a large cast-iron skillet. Season the steaks on both sides with 2 teaspoons salt and a generous amount of black pepper.
- Add the olive oil to the skillet and heat over medium-high until shimmering. Add the steaks and cook, undisturbed, until deep golden-brown and no longer sticking to the pan, about 5 minutes. Flip the steaks and continue cooking until golden-brown and an instant-read thermometer registers 125 degrees F when inserted into the center for medium-rare. Remove the steaks to a cutting board to rest for 10 minutes before slicing. Discard the garlic clove.
- Meanwhile, turn off the heat and let the pan cool for about 2 minutes. Turn the heat to medium-low and add the shallots. Cook, stirring occasionally, until softened and golden-brown, about 2 minutes. Stir in the Dijon and thyme leaves until well combined. Pour in the white wine and simmer until thickened and reduced by half, 4 to 5 minutes. Swirl in the remaining 2 tablespoons butter until melted and silky.
- Thinly slice the steaks crosswise and divide among plates. Spoon sauce over the steak and serve with the potatoes.
DEBBIE'S TWICE BAKED POTATOES
Steps:
- Preheat oven to 450 degrees F. Rinse potatoes. Place potatoes directly on the center rack inside the oven and bake for approximately 50 minutes or until you can easily stick a fork inside the potatoes with little resistance.
- Cut the potatoes in half lengthwise. Scoop the white portion of the potatoes out until all that's left is the brown outer portion of the skin (you may have to leave a little of the white part on the skin so they don't collapse). When all of the potatoes have been hollowed out, combine all of the potato meat in a large bowl and mash until there aren't any lumps. Add the bacon bits, shredded cheese and butter into the bowl and mix until blended (you may also choose to add chives, etc. or whatever else you want at this point).
- Divide mixture among the skins (you will not use all of the skins) and then sprinkle an extra bit of cheese on top of each. Place potatoes onto a 13x9 inch baking pan. Cover with aluminum foil and return to oven to bake for approximately 14 more minutes.

Steps:
- Wash potatoes and microwave until done about 10 minutes.
- Cut in half lengthwise.
- Scoop out inside, leaving small amount of white.
- Brush with butter. Sprinkle with garlic salt and pepper and paprika.
- Bake on cookie sheet in 475 degree oven 8 minutes or until brown turn over and cook another 8 minutes.
- Top with cheese and crumbled bacon.
- Bake another 5 minutes.
- Serve with sour cream and green onions.

DEBBIE'S MEAT PIE
Steps:
- Pie Crust: Stir together flour and salt. Using a pastry blender, cut shortening till pieces are pea sized. Add water 1 tablespoon at a time mixing in each time. Divide in half, forming each half into a ball. On a lightly floured surface roll dough into a 12 in. circle. To transfer pastry, wrap it around the rolling pin; unroll into a 9-inch pie plate being careful not to stretch dough. Crimp pastry around the edge of pie plate.
- Brown and season meat. Add onions, garlic, and veggies. Cook slightly. Add soup, parmesan cheese, and seasonings. Divide evenly in pie crusts and top with mashed potatoes.
- Bake for 35-45 minutes at 350 degrees F.

DEBBIE'S POTATOES AND MEAT
Steps:
- Brown pork steak in oil. When done put pork steak in a 9 x 13 baking pan. Add salt and pepper.
- Peel and slice potatoes and put on top of pork. Slice green pepper, mushrooms and onion, and put on top of pork.
- In a bowl put in cream of mushroom soup with same amount of water, stir, and pour on top of meat, potatoes, and vegetables. Sprinkle paprika and cover with aluminum foil.
- Bake at 350 degrees F for about 1 1/2 hrs. Remove foil, and allow potatoes to brown.
