120g butter, softened
75g light brown sugar
75g golden caster sugar
1 medium egg
1 tsp vanilla extract
180g plain flour
½ tsp bicarbonate of soda
150g dark chocolate, cut into chunks

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line two baking sheets with parchment. Cream the butter and sugars together until very light and fluffy, then beat in the egg and vanilla. Once combined, stir in the flour, bicarb, chocolate and ¼ tsp salt.
  • Scoop 10 large tbsps of the mixture onto the trays, leaving enough space between each to allow for spreading. Bake for 10-12 mins or until firm at the edges but still soft in the middle - they will harden a little as they cool. Leave to cool on the tray for a few mins before eating warm, or transfer to a wire rack to cool completely. Will keep for three days in an airtight container.

1 cup unsalted butter (room temperature)
1 cup brown sugar
1/2 cup granulated (white sugar)
2 eggs
1 teaspoon vanilla
1 3/4 cups all-purpose flour
1 1/4 cups unsweetened dark cocoa powder
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon kosher salt plus about 3 teaspoons more for sprinkling on top
2 cups dark chocolate chips

Steps:

  • Heat oven to 350 degrees Fahrenheit.
  • In the bowl of a stand mixer fitted with a paddle attachment or in a large bowl with a hand mixer, beat together the butter, brown sugar, and granulated sugar on medium speed until pale and fluffy, about 3 minutes. Add the eggs one by one until completely blended in, and then the vanilla.
  • In a medium bowl, sift together the flour, cocoa, baking powder, baking soda, and kosher salt.
  • Add the dry ingredients to the wet mixture and beat on low (or stir by hand) until the ingredients are incorporated. Add the chocolate chips. The batter will be very thick.
  • Scoop the cookies in approximately 2-tablespoon increments onto an ungreased non-stick cookie sheet or cookie sheet lined with silpat. I recommend a cookie scoop for this step - makes life so much easier.
  • Bake for about 7 minutes, until the cookies seem set but might still appear underdone (key to a soft, moist cookie). Remove from oven and let sit on baking sheet for about 5 minutes, then move to a wire rack to cool completely.

3 ounces (6 tablespoons) unsalted butter, softened

4 ounces dark chocolate (at least 70 percent cacao), finely chopped
1/2 cup heavy cream

Steps:

  • Preheat oven to 325 degrees. Make the cookies: Whisk together flour, cocoa, and salt in a bowl. In another bowl, cream butter and sugar until pale and fluffy. Beat in egg and vanilla. Gradually add flour mixture, beating to combine. Shape dough into 2 disks, wrap each in plastic, and freeze until firm, about 15 minutes.
  • Working with 1 disk at a time, roll out dough to 1/8-inch thickness on a lightly floured surface. Using a 1 1/2-inch biscuit cutter, cut out rounds. (Return dough to freezer if it softens.) Space rounds 1 inch apart on parchment-lined baking sheets. Freeze until firm, about 15 minutes. Brush off excess flour.

  • Meanwhile, make the filling: Place chocolate in a medium bowl. Heat cream, sugar, and salt in a small saucepan over medium heat, stirring until sugar and salt dissolve. Pour over chocolate. Let stand for 10 minutes. Gently stir until smooth. Let stand until firm enough to spread, about 15 minutes.
  • Spread 1 1/2 teaspoons filling on half the cookies. Top with remaining cookies.

1 & 1/2 cups dark brown sugar (packed)
1 large egg
1 teaspoon vanilla extract
1 cup all purpose flour (spooned and leveled)
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup old fashioned oats
1 & 1/4 cup quick oats
1 cup dried tart cherries (coarsely chopped)
4 ounces bittersweet chocolate (3/4 cup, chopped)
1 cup pecans (toasted and chopped)
dark chocolate chips (to top cookies)

Steps:

  • Preheat oven to 350 degrees F. Prepare baking sheets with parchment paper or silicone baking mats.
  • Let your butter sit out of the fridge for like 10-15 minutes.
  • In a large bowl or stand mixer, beat together the butter and brown sugar until lighter and fluffy, about 1-2 minutes. Scrape down the sides and bottom of the bowl.
  • Add the egg and vanilla extract. Beat well.
  • Add 1 cup of flour to the bowl but don't mix it in. Use a small spoon to stir the baking powder, baking soda, and salt into the flour. Then use the spoon or mixer to mix in the flour until it is not quite combined.
  • Add the old fashioned oats, quick oats, cherries*, chocolate, and chopped pecans.
  • Gently fold in the mix ins. Make sure all the flour streaks are gone. Don't over mix, once it comes together you're good to go.
  • Fill a 1/4 cup measuring cup with dough. Shape the dough into balls and place them on the cookie sheet. You can only fit about 8 cookies per sheet. Make sure there are about 2 inches in between the cookies.
  • Bake at 350 for about 12-13 minutes, or until the edges are set. There can be a little bit of shine in the center of the cookie, but it shouldn't look completely shiny.
  • Top immediately with dark chocolate chips.
  • Let the cookies cool on the rack for about 5 minutes, then remove them to a cooling rack.

1/2 cup unsweetened baking cocoa

Steps:

  • Melt chocolate chips; set aside to cool.

  • Beat with mixer at speed 2 for 2 minutes.

  • Move oven racks to upper- and lower-middle positions and preheat to 375 degrees F. Line 2 cookie sheets with silicone baking mat or parchment paper; set aside.
  • Whisk together flour, cocoa powder, baking soda, and salt in medium bowl. In large measuring cup whisk together corn syrup, egg white, and vanilla.
  • In stand mixer fitted with paddle attachment, beat together butter and sugars until light and fluffy, about 2 minutes. Reduce speed to medium low, and pour in corn syrup mixture in a slow, steady stream and beat until combined, about 20 seconds. Turn mixer off and add flour mixture, chocolate chunks, cherries, and almonds; pulse mixer on lowest speed about 10-15 times until flour is almost all mixed in. Increase speed to low and mix until chocolate chunks, cherries, and almonds are evenly distributed, about 10 seconds. Quickly stir dough with rubber spatula to make sure no flour pockets remain. Chill dough for 30 minutes to firm slightly (but NO LONGER THAN 30 MINUTES!).
  • Using 2-tablespoon cookie scoop, scoop dough onto prepared cookie sheet, spacing them 2 inches apart. Gently flatten cookies a little using palm of hand. Bake, switching baking sheet positions halfway through baking, until cookies are slightly puffed, cracked and edges have begun to set but centers are still soft (if you look between cracks of cookie, they will appear raw and seem underdone…this is EXACTLY what you want), 10-11 minutes. DO NOT OVERBAKE!
