SHRIMP EN PAPILLOTE WITH COUSCOUS

2 tablespoons white wine
1 tablespoon grape seed oil
1 lemon, juiced
1 tablespoon freshly minced parsley leaves
1 tablespoon minced garlic
1 tablespoon freshly minced cilantro leaves
1/4 cup grated Parmesan
1 teaspoon curry powder
1/2 pound Israeli couscous, cooked according to package directions
1 1/4 pounds raw shrimp, peeled, deveined and tails removed (21/25 count)
1 teaspoon powdered ginger
2 tablespoons grapeseed oil
2 lemons, juiced
1 tablespoon minced thyme leaves
1 tablespoon minced parsley leaves

Steps:

  • Preheat the oven to 375 degrees F.
  • In a medium bowl, whisk together the wine, grapeseed oil, lemon juice, parsley, garlic, cilantro, cheese and curry. Add the cooked couscous and toss well.
  • Fold and crease the parchment in half and lay the folded sheets on a flat surface. Open and divide the couscous into center of each paper, leaving 3-inch edge clean and free of couscous. Portion the raw shrimp* over the couscous, making sure that the shrimp is not stacked on top of each other, because this would prevent even cooking. In separate bowl, whisk together the ginger, grapeseed oil, lemon juice, thyme and parsley. Drizzle the sauce over the shrimp.
  • To seal the paper, crimp the edges, in circular motion, folding each flap over half of previous fold until completely sealed. Repeat this process with each papillote. Arrange the packets on a cookie sheet and bake for 14 to 16 minutes. Remove the pan from the oven and allow to rest for 2 to 3 minutes. Once rested, carefully remove the packets from the pan, put on serving plates and "open" the papillote with knife or scissors.

I'm doing a clean-up in all my magazines and I'm posting some recipes for safe-keeping. This one is from Coup de Pouce.

4 teaspoons olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
3 cups cherry tomatoes, halved
1/3 cup black olives, roughly chopped (kalamata)
4 garlic cloves, finely chopped
2 teaspoons lemon zest, grated
1 lb shrimp, peeled, tail on
1/4 cup Italian parsley, chopped

Steps:

  • Set the barbecue to medium-high heat. Cut 4 pieces of foil paper of 32 inch x 12 inch. Fold each piece in 2 in a way to obtain 4 rectangles of 16 inch x 12 inch. Generously, put oil on the foil or spray with Pam.
  • In a large bowl, mix half oil, salt and pepper. Add cherry tomatoes and olives and stir. Distribute this mixture on the rectangles of foil paper, leaving each half of rectangle empty. In the same bowl, mix garlic, lemon zest and remaining oil, salt and pepper. Add shrimps and stir to coat well. Distributes the shrimps on the tomatoes. Fold the foil paper on the shrimps in a way to form a papillotte and seal hermeticaly.
  • Put the papillottes on the grill of the barbecue and cook 12 to 15 minutes or until shrimps are pink. Slowly open the papillottes and pour in plates. Sprinkle each serving with parsley.

  • FOLD over other half of each parchment sheet to enclose ingredients. To seal edges together, start at the top corner, making small overlapping folds down entire length of package. At the end of the package, twist the last fold several times to make a tight seal. Repeat to make 4 packages. Place parchment packages on a large cookie sheet.
