Soft cut out sugar cookie recipe that keeps its shape and dough does not need to be chilled before baking- perfect edges every time!

Number Of Ingredients 8

1 Cup unsalted butter (226 grams)
1 Cup granulated white sugar (200 grams)
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1 egg
2 teaspoons baking powder
1/2 teaspoon salt
3 cups all purpose flour (360 grams)

Steps:

  • PREHEAT oven to 350° F.
  • In the bowl of your mixer, CREAM butter and sugar until smooth, at least 3 minutes
  • BEAT in extracts and egg. (PLEASE NOTE there is 1 egg in this recipe.)
  • In a separate bowl, COMBINE baking powder and salt with flour and add a little at a time to the wet ingredients.
  • IMPORTANT NOTE: If the dough looks crumbly keep mixing for 30 seconds to 1 minute longer. The dough should be pulling away from the sides of the mixer.
  • If the dough still looks too dry or stiff for your mixer, turn out the dough onto a countertop surface, flour surface as needed. Wet your hands and finish off kneading the dough by hand.
  • DO NOT CHILL THE DOUGH. Divide into workable batches (2-3 chunks), roll out onto a floured surface, and cut. You want these cookies to be on the thicker side (closer to 1/4 inch rather than 1/8).
  • Bake at 350 for 6-8 minutes. Let cool on the cookie sheet until firm enough to transfer to a cooling rack.

1 cup butter, softened
3 ounces cream cheese, softened
1 cup sugar
1 large egg yolk, room temperature
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
2-1/4 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking soda
1/8 teaspoon ground nutmeg
ICING:
3-3/4 cups confectioners' sugar
1/3 cup water
4 teaspoons meringue powder
Assorted colors of liquid food coloring

Steps:

  • In a large bowl, cream the butter, cream cheese and sugar until light and fluffy. Beat in egg yolk and extracts. Combine the flour, salt, baking soda and nutmeg; gradually add to creamed mixture. Cover and refrigerate for 3 hours or until easy to handle., On a lightly floured surface, roll out dough to 1/8-in. thickness. Cut with floured 2-1/2-in. cookie cutters. , Place 1-in. apart on ungreased baking sheets. Bake at 375° until edges begin to brown, 8-10 minutes. Cool for 2 minutes before removing from pans to wire racks to cool completely., For icing, in a small bowl, combine the confectioners' sugar, water and meringue powder; beat on low speed just until combined. Beat on high until soft peaks form, 4 minutes. Cover icing with damp paper towels or plastic wrap between uses., Working quickly, spread or pipe icing over cookies; let dry at room temperature for several hours or until firm. Use small new paintbrushes or toothpicks and food coloring to make designs on the cookies. Let stand until set. Store in an airtight container.

1/2 cup almond paste
4 egg yolks
2 cups butter, softened
1-3/4 cups sugar
1/2 teaspoon salt
3-3/4 cups all-purpose flour
FROSTING:
3-3/4 cups confectioners' sugar
3 tablespoons meringue powder
1/3 cup water
Food coloring, coarse sugar and assorted sprinkles, optional

Steps:

  • * In a large bowl, beat almond paste and egg yolks until crumbly. Add the butter, sugar and salt; beat until light and fluffy. Gradually add flour and mix well. Divide into four portions; shape each into a ball, then flatten into a disk. Wrap in plastic wrap and refrigerate for 1-2 hours or until easy to handle. * On a lightly floured surface, roll one portion of dough to 1/4-in. thickness. Cut with a floured 2-1/2-in. cookie cutter. Place 2 in. apart on ungreased baking sheets. Repeat with remaining dough. * Bake at 375° for 6-8 minutes or until edges begin to brown. Cool for 2 minutes before removing from pans to wire racks to cool completely. * For frosting, beat the confectioners' sugar, meringue powder and water until fluffy, about 5 minutes. Color frosting if desired. Frost cookies; decorate with coarse sugar and sprinkles if desired. Let stand until set. Store in an airtight container. I don't care for sugar cookies at all and I thought these really were the best darn sugar cookies ever! These cookies are so light and have a fabulous texture. Everyone is sure to love them.

Number Of Ingredients 9

1 cup sugar
1 cup butter
1 cup powdered sugar
1 cup vegetable oil (NOT olive oil!)
2 large eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
1 teaspoon cream of tartar
4 1/8 cups flour

Steps:

  • Cream sugar, butter, powdered sugar, and oil.
  • Then cream in eggs and vanilla.
  • In a separate bowl mix baking soda, cream of tartar, and flour.
  • Start adding dry ingredients to creamed ingredients less than 1 cup at a time.
  • Chill in refrigerator at least 2 hours.
  • Drop 1-2" balls on the cookie sheet.
  • If you would like, you can flatten the balls with the bottom of a drinking glass that has been dipped in sugar.
  • Bake at 350° for 10-12 minutes or until the edges are browned.
  • You can also sprinkle on cinnamon and sugar, colored sugar sprinkles, etc.
