MEXICAN STYLE CORNBREAD



Mexican Style Cornbread image

A new spicy twist on cornbread. Very rich and flavorful with a crisp topping of cheese.

2 eggs
¼ cup corn oil
1 cup buttermilk
1 ½ cups shredded Cheddar cheese
1 (8 ounce) can cream-style corn
1 large onion, chopped
2 fresh jalapeno peppers, seeded and minced
1 cup cornmeal
½ cup all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8 inch square baking dish or a cast iron skillet.
  • In a small bowl, beat eggs. Mix in corn oil and buttermilk. Stir in 1 cup shredded cheese, creamed corn, onion, and jalapenos.
  • In a large bowl, whisk together cornmeal, flour, baking powder, soda, and salt. Stir the egg mixture into the dry ingredients. Mix well. Pour batter into prepared pan. Sprinkle remaining 1/2 cup cheese on top.
  • Bake for 30 to 35 minutes until center is set and top is golden brown.

LA BETH'S VANILLA CORNBREAD

1 cup yellow cornmeal, preferably stone-ground
1 cup unbleached all-purpose flour
3/4 cup powdered sugar
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
2 large eggs
1 1/4 cups cultured buttermilk
1 tablespoon pure vanilla extract
6 tablespoons unsalted butter, melted

Steps:

  • Preheat oven to 350 degrees F.
  • Combine the cornmeal, flour, sugar, salt, baking powder, and baking soda in a large bowl.
  • In a small bowl, mix the eggs, buttermilk, and vanilla with a wooden spoon or dough whisk. Add to the dry ingredients and pour the melted butter over the top of the batter. Stir just until all ingredients are moistened yet thoroughly blended; take care not to overmix.
  • Pour the batter into a greased 8-inch round springform pan or square Pyrex pan.
  • Bake in the preheated oven about 40 to 45 minutes, until golden around the edges and a cake tester inserted into the center comes out clean. Let stand 15 minutes before cutting to serve.

HOT CORNBREAD



Hot Cornbread image

8 slices bacon, finely chopped
1 1/2 cups coarse cornmeal
1/4 cup flour
1 teaspoon salt
1 teaspoon baking soda
1 egg
1/4 cup chopped green chilis
1 cup buttermilk or plain yogurt
1/2 cup milk

Steps:

  • Preheat oven to 450 degrees. Heat bacon in a 9 or 10" cast iron skillet. Saute until rendered. Remove crisp bits with a slotted spoon and discard all but 2 tablespoons of fat. Stick skillet in oven to preheat it while you make the batter.
  • In a bowl whisk together the cornmeal, flour, salt and baking soda. In another bowl whisk together egg, chilis, buttermilk or yogurt and milk. Add reserved bacon fat and crisp bacon and pour wet ingredients into dry ingredients and stir to blend. Remove skillet from the oven and pour in the batter. Return to oven and bake until deep golden brown, about 20 minutes. While this is baking, make your stew of white beans.

1/3 cup brown sugar
2 cups creamed corn
2 cups sour cream
1 cup canola oil
4 ounces green chiles
2 cups cornmeal
2 tablespoons baking powder
2 teaspoons salt (no more)!

Steps:

  • Preheat the oven to 350 degrees F. Line a 12-by-20-inch hotel pan with parchment paper (see Cook's Note).
  • Whisk eggs with brown sugar in a bowl, then add the corn, sour cream, oil and chiles and mix thoroughly. Gently fold in cornmeal, baking soda and salt. Pour into prepared hotel pan. Bake until browned on top, about 20 minutes.

Mexican Cornbread is almost a meal within itself. This recipe is really easy and versatile. Other than a few basic ingredients you can add just about whatever you'd like or leave out what you don't like or have on hand. This dish is actually better the next day so it's great for potlucks or make-ahead meals. It freezes well, too. Variations: Grated cheese, browned hamburger or sausage, green enchilada sauce, green chiles, dried tomatoes.

2 (8 1/2 ounce) boxes Jiffy cornbread mix
2 eggs
2/3 cup skim milk or 2/3 cup half-and-half cream
1 (15 ounce) can cream-style corn
1 small onion, caramelized
2 teaspoons oil
1 (10 ounce) can diced tomatoes with green chilies, drained
1 (2 ounce) jar diced pimentos, drained
cooking spray

Steps:

  • Caramelize the onion in a pan with 2 teaspoons of oil. While it is cooking:.
  • Preheat oven to 350°.
  • Generously spray a 9"X13" pan with cooking spray, or grease with oil or butter.
  • Pour the diced tomatoes and pimentos into a sieve to drain.
  • In a bowl combine 2 boxes of cornbread mix, 2 eggs, and 2/3 cup of milk. I use fat-free half-n-half instead of milk.
  • Pour half of the batter into the greased pan.
  • Over the layer of batter, add the cream style corn. It won't make a perfect layer from edge to edge. Just do the best you can to make some semblance of a layer. I try to get a little more closer to the outer edges of the pan than in the center. This helps it cook more evenly.
  • Over the corn layer, add the drained diced tomatoes and pimentos. Again just do the best you can. It doesn't have to be perfect.
  • Over the tomatoes and pimentos, add the caramelized onions.
  • Last, dollop on the remaining half of the batter, in some semblance of a top layer.
  • Place on center rack of oven, or lower.
  • Bake 40 minutes. Check to see if done in center--it will be very moist but shouldn't be doughy.
  • If not done at 40 minutes, bake a little longer, under foil if you are afraid the top will over brown. Let stand 15 minutes before serving.

1/2 cup butter, melted
3/4 cup white sugar
4 eggs
1 (15 ounce) can cream-style corn
2 ounces cans chopped green chili peppers, drained
1/2 cup shredded monterey jack cheese
1/2 cup shredded cheddar cheese
1 cup all-purpose flour
1 cup yellow cornmeal
1/4 teaspoon salt
4 teaspoons baking powder

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Lightly grease a 9x13 inch baking dish.
  • In a large bowl, beat together butter and sugar.
  • Beat in eggs one at a time.
  • Blend in cream corn, chiles, Monterey Jack and Cheddar cheese.
  • In a separate bowl, stir together flour, cornmeal, baking powder and salt.
  • Add flour mixture to corn mixture; stir until smooth.
  • Pour batter into prepared pan.
  • Bake in preheated oven for 1 hour, until a toothpick inserted into center of the pan comes out clean.
