Healthy Turkey Chili with Pintos Beans image

Here's the best way to make Turkey Chili from scratch with lean ground turkey (or chicken if you prefer), lots of fresh vegetables (including bell peppers), onions, scallions and jalapeno and a little cornmeal to thicken it! Serve topped with avocado and toasted pepitas for a healthy winter meal.

2 tablespoons extra-virgin olive oil
1 pound ground turkey or chicken
3 cloves garlic, minced
2 small green bell peppers or anaheim peppers, diced
1 large onion, diced
1 bunch scallions, sliced, white and green parts separated
1 jalapeno pepper, minced, seeds to taste
2 tablespoons chili powder
2 teaspoons ground cumin
1 ½ teaspoon salt
2 tablespoons cornmeal
1 28-ounce can peeled tomatoes , crushed by hand or cut into chunks
2 cans pinto beans, drained and rinsed
1 cup chicken broth
1 lime, juiced
1 tablespoon plus 1 teaspoon chopped fresh oregano
Garnishes: diced avocado, toasted pine nuts or pepitas, minced red onion, chopped fresh cilantro

Steps:

  • Heat oil in a large heavy-bottom soup pot or Dutch oven over medium-high heat. Crumble in turkey or chicken and cook, breaking up large pieces until no longer pink, 5 to 7 minutes.
  • Stir in garlic, peppers, onion, scallion whites and jalapeño and cook, stirring often until the vegetables are cooked down and mostly softened, about 10 minutes.
  • Stir in chili powder, cumin and salt and cook until the spices are fragrant 30 seconds to 2 minutes. Sprinkle the cornmeal over the vegetable mixture and stir to coat.
  • Stir in tomatoes, beans and broth and bring to a simmer, stirring often. Reduce heat to maintain simmer and cook, stirring occasionally until the chili is thick and the onions and peppers are tender, 10 to 15 minutes.
  • Stir in lime juice, oregano and the remaining scallion greens. Serve with garnishes if desired.

1 lb fresh ground turkey
2 (14 ounce) cans Mexican-style diced tomatoes (we use Rotel and switch between mild and hot flavors)
2 (15 ounce) cans black beans, rinsed and drained
1 (1 1/4 ounce) package dried chili seasoning mix (your favorite brand)
2 (15 ounce) cans sweet whole kernel corn, drained
1 cup water, room temperature
salt and pepper, to taste

Steps:

  • Heat skillet to medium-high heat and spray with non-stick cooking spray.
  • Brown ground turkey, stir occasionally to ensure it cooks evenly.
  • Remove from skillet, putting directly in to Crockpot.
  • Open and drain cans of corn and black beans.
  • Open Rotel cans, keep juice in can.
  • Put canned ingredients in Crockpot with browned turkey and mix well.
  • In mixing bowl, combine 1 cup water with pre-packaged chili mix. Mix with whisk until well blended and add to Crockpot.
  • Cook on low in Crockpot for 2 hours and then serve.
  • Serve in a bowl alongside tortilla scoops or over steamed white or brown rice and enjoy!

4 slices bacon cut into 1/2-inch pieces
3 pounds ground dark-meat (7% fat), turkey
4 cups chopped onions
1/4 cup minced garlic cloves
2 medium fresh jalapeno chiles, ribs and seeds removed for less heat, if desired, minced
3 tablespoons chili powder
3 tablespoons unsweetened cocoa powder
4 teaspoons ground cumin
2 cans (28 ounces each) whole tomatoes in puree
2 tablespoons unsulfured molasses
Coarse salt
3 cans (15 1/2 ounces each) pinto beans, drained and rinsed
Fresh cilantro leaves, sliced pickled jalapeno chiles, reduced-fat sour cream, crumbled cornbread, grated cheddar cheese

Steps:

  • Heat a Dutch oven (or other heavy 5-quart pot) over medium heat. Add bacon; cook until crisp and brown, 6 to 8 minutes. Raise heat to high; add turkey. Cook, stirring and breaking up meat with a spoon, until no longer pink, 8 to 10 minutes.
  • Add onion, garlic, and jalapenos; cook until soft, stirring often, about 5 minutes. Stir in chili powder, cocoa powder, and cumin; cook, stirring, until fragrant, 1 minute.
  • Break up tomatoes with a spoon or your hands, and stir them in along with the puree. Add molasses, 1 cup water, and 4 teaspoons salt; bring to a boil. Reduce heat to a simmer; cook, partially covered, 30 minutes.
  • Add beans; continue cooking, uncovered, until meat and beans are very tender, and chili is thick, about 30 minutes more. Serve with desired toppings.

1 tablespoon olive oil
1 lb lean ground beef
1 (1 1/4 ounce) envelope taco seasoning
2 teaspoons cumin
6 ounces tomato paste
22 ounces chili beans
15 1/2 ounces diced tomatoes
7 ounces chopped green chilies
1 (12 ounce) can beer (or beef broth or water)
salt and pepper
chopped raw onion
grated cheddar cheese
sour cream

Steps:

  • Saute onions and garlic in oil.
  • Add ground beef and brown. Drain.
  • Add taco seasoning and cumin. Mix well.
  • Add remaining ingredients, salt and pepper to taste.
  • Cook 20-30 minutes.
  • Serve hot with garnishes of your choice.
  • NOTE: For FRITO PIE serve over a bed of fritos and topped with grated cheddar.

Nonstick olive oil spray
1 large onion, chopped
2 medium-size red bell peppers, chopped
6 garlic cloves, chopped
2 pounds ground turkey
3 tablespoons chili powder
1 1/2 teaspoons ground cumin
1 1/2 teaspoons dried oregano
3 15-ounce cans pinto beans, drained
1 28-ounce can diced tomatoes in juice
3 cups canned low-salt chicken broth
1 ounce semisweet chocolate, chopped

Steps:

  • Generously spray bottom of heavy large pot with nonstick spray. Add onion, bell peppers and garlic and sauté over high heat until vegetables begin to soften, about 8 minutes. Add turkey and sauté until no longer pink, breaking up large pieces with back of fork, about 5 minutes. Mix in chili powder, cumin and oregano and stir 1 minute. Add beans, tomatoes with juices, broth and chocolate. Bring chili to boil. Reduce heat to medium and simmer uncovered until chili thickens, stirring occasionally, about 1 hour. Season with salt and pepper.

Add the beans, with their liquid, and the tomatoes; bring to a simmer. Cook, stirring occasionally, until thick, about 15 minutes. Season with salt and pepper.

2 pounds ground beef
1 medium onion, chopped
3 celery ribs, chopped
3 tablespoons all-purpose flour
4 cups water

1 can (28 ounces) crushed tomatoes
2 teaspoons cider vinegar
1-1/2 teaspoons salt
CHILI CHEESE QUESADILLAS:
2 cans (4 ounces each) chopped green chilies
12 flour tortillas (6 inches)
3 cups shredded cheddar cheese
3 teaspoons canola oil

Steps:

  • Place beans in a Dutch oven or soup kettle; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour. Drain and rinse beans, discarding liquid. , In a Dutch oven, cook the beef, onion and celery over medium heat until meat is no longer pink; drain. Stir in flour until blended. Pinto beans are simmered with onion, tomatoes, chili powder, cumin and garlic. I love making these beans just because they make the whole house smell so good, and the longer they simmer the better they taste. You could add 1/2 can of beer to make 'borracho' beans. I personally taste-test throughout the entire cooking process and add extra seasoning as I feel it needs it. These beans could simmer all day long; just make sure they have plenty of water to keep the beans covered.
