DAIRY-FREE, SUGAR-FREE MANGO GELATO
The best birthday present I've had in recent years is my super cool gelato machine. We can have the best gelato ever in usually 30 minutes. No pre-freezing of bowls, no salt or ice required. And we can do it again after a 5 minute rest for the machine (about the time it takes to serve up, wash the bowl, and mix up more gelato). We also discovered that most of the best recipes are between 3-5 ingredients. Oh, and one IMPORTANT tip: You can swap sugar for almost any sugar substitute but generally you want to use HALF the amount of sugar substitute (xylitol, erythritol) for any frozen dessert. I don't know why but I picked that tip up when I did my initial recipe search and I can confirm that forgetting to half the sugar creates something mostly inedible.

- Peel mango and remove from the seed.
- Puree mango in a food processor. (We keep it chunky but blend as much as you want. ).
- Add all the other ingredients. (A splash of some complementary alcohol will keep the gelato from sticking to the freezer bowl but is entirely optional.).
- Scoop the mixture into the gelato bowl and turn it on.
- Gelato should be ready in about 20-30 minutes.
- Portion out the gelato and sprinkle the chocolate chips on top. (Well, some of us enjoy the chips. Others prefer their gelato without the distraction of chocolate.).

- In a medium saucepan, whisk together the coconut milk, sugar, and cornstarch. Set over medium-high heat and bring to a boil, whisking constantly. Lower the heat and simmer until the mixture thickens slightly, about 5 minutes.
- Remove from the heat. Let cool to room temperature, then refrigerate for 4 hours, or preferably overnight. The vegan gelato base must be thoroughly cool before churning: this will produce the smoothest, silkiest texture.
- Once cool, whisk the vegan gelato base with the fruit puree(s) of your choice. You need 2 cups/500 ml) fruit puree to produce a flavorful fruit-based vegan gelato.
- Strain the vegan gelato to make sure it is silky smooth. Pour into the bowl of an ice cream maker and churn according to the manufacturer's instructions. Stop the machine when the gelato is thick and icy but still easily spoonable.

- Add frozen mango to a high-speed blender and blend on low speed. Use the blender‘s tamper (also known as a plunger) with the blender lid on to push the ingredients into the blades as they move slowly on low speed. Continue to push the frozen mango into the blades until the mixture is smooth and creamy.
- If your blender is having trouble wait a couple minutes for your frozen mango to thaw a bit more.
- Once the sorbet is smooth and creamy and no chunks remain, scoop it out of the blender using a spoon or an ice cream scooper. Divide into bowls and garnish with fresh mint if you are feeling fancy. Serve and enjoy immediately.
- You can store leftovers covered in the freezer for 1-2 hours. Any longer and it will start to freeze solid and be difficult to scoop. If stored for longer than 2 hours you will want to let the mango sorbet sit at room temperature until soft again. I find the texture is best when fresh.

- Pour the mixture into a freezer-safe, air-tight container. Freeze until completely frozen. (The time it will take to freeze the mixture will depend on how wide vs tall container you use. The wider the container, the shorter the freezing time).
- Once frozen, cut the frozen mixture into cubes (so it's easier to blend). Add it into a food processor and blend until all the frozen pieces are broken down (it should have a consistency of soft serve).
