Welsh Rarebit (Welsh Rabbit) image

Welsh rarebit or Welsh rabbit is a Welsh dish prepared with cheddar, mustard and beer, that is traditionally served on a slice of grilled toast.

Provided by Renards Gourmets

Categories     Appetizer

Time 45m

Number Of Ingredients 8

½ cup flour (, sifted)
4 tablespoons butter
1 cup beer ((warm))
8 oz. cheddar (, grated)
2 tablespoons English mustard

Black pepper (, freshly ground)
8 large slices rustic bread ((or whole grain bread))

Steps:

  • In a small, non-stick saucepan, melt the butter and make a roux with the flour.

  • Add the grated cheese and stir until melted, until you get a thick sauce.
  • Stir in the mustard and Worcestershire sauce and season with black pepper.
  • Lightly toast the bread on both sides and spread butter.
  • Place the bread slices in a large baking dish.
  • Pour the cheese mixture on each slice.
  • Bake under a moderately hot grill for a few minutes, until golden and bubbling.

WELSH RAREBIT

Welsh Rarebit image

Welsh rarebit, perhaps the most famous Welsh dish of them all and one which, along with Irish Stew and Scottish Haggis, travelled the world over.

Provided by dnorriss

Time 20m

Yield Serves 2

Number Of Ingredients 0

Steps:

  • Put the cheese, butter, Worcestershire sauce, mustard, flour and pepper into a saucepan.
  • Mix well and then add the beer, Guiness or milk to moisten. Do not make it too wet!!
  • Stir over a gentle heat until all is melted, and when it is a thickish paste, stop stirring, and swivel it around the saucepan, which it will do quite easily.
  • Leave to cool a little, and meanwhile toast the bread on one side only.
  • Spread the rarebit over the untoasted side and brown under a hot grill.
  • This mixture can be made and kept in the refrigerator for several days if required. Sweet white wine can be used instead of beer and gives a good flavour.

WELSH RAREBIT

Welsh Rarebit image

Anyone can lay a few slices of cheese on toast and melt them, but creating a thick sauce of cheese, beer and spices and then spreading it on toast creates one of the best late-night snacks I know. This is Welsh rarebit, or rabbit, a traditional British dish whose name has a long and complicated history, one we will not go into here.

Provided by Mark Bittman

Categories     easy, appetizer

Time 20m

Yield 4 or more servings

Number Of Ingredients 8

2 tablespoons butter
2 tablespoons flour
1 tablespoon mustard powder, or to taste
1/2 teaspoon cayenne, or to taste
3/4 cup strong dark beer, like Guinness
2 tablespoons Worcestershire sauce, or to taste
1 pound Cheddar, Double Gloucester or other English cheese (or other good semi-hard cheese, like Comté or Gruyère, or a mixture), grated
4 to 8 pieces lightly toasted bread

Steps:

  • Put butter in a saucepan over medium heat and, as it melts, stir in flour. Continue to cook, stirring occasionally, until golden brown and very fragrant, 3 to 5 minutes. Stir in mustard and cayenne, then whisk in beer and Worcestershire sauce.
  • When mixture is uniform, turn heat to low and stir in cheese, again stirring until smooth. Remove from heat and pour into a broad container to set (you can refrigerate for up to a day at this point).
  • Spread mixture thickly on toast and put under broiler until bubbly and edges of toast are crisp. Serve immediately.

Nothing is more delicious that a well-made Welsh Rabbit, or 'rarebit'. It is easy to make but you do need to keep your eye on it! WELSH RABBIT VERSUS WELSH RAREBIT: WHICH NAME IS CORRECT?
Regardless of the origin of rarebit, written evidence clearly demonstrates that the original name of the dish was Welsh Rabbit. Many written works by etymologists, and dictionaries of the 1800’s and beyond claim that the rabbit version was a vulgar derivation of the “proper” rarebit, without any proof whatsoever.
