CORN AND BEAN SALAD WITH CURTIS' CHILI DRESSING



Corn and Bean Salad with Curtis' Chili Dressing image

Number Of Ingredients 16

Whole kernels from 4 ears of corn
1 cup cooked red beans
1 cup cooked black beans
1 cup cooked pinto beans
1 cup cooked garbanzo beans
2 medium tomatoes, diced
1 bunch green onions, chopped
1/2 red bell pepper, diced
1/2 yellow bell pepper, diced
1/2 small head lettuce, shredded
1/4 cup rice wine vinegar
1 teaspoon olive oil
1 teaspoon chili powder
1/2 teaspoon ground cumin
2 cloves garlic, minced
1/2 Vidalia onion, chopped fine

Steps:

  • In a large bowl combine salad ingredients. In a small bowl whisk together dressing ingredients, toss with salad. Refrigerate for at least 2 hours before serving.

One peeled avocado, with pit removed
Pinch of chile powder
Juice of one lime
Salt and pepper to taste
Non-fat yogurt
Ice water
Accompaniments: Mesclun greens, pink grapefruit segments and diced red pepper

Steps:

  • In a blender place peeled avocado, add a pinch of chile powder, juice of one lime, salt and pepper, and add some non-fat yogurt. Thin with ice water if necessary. Blend to a pouring consistency. Serve over mesclun, pink grapefruit segments and diced red pepper.

  • Mix all ingredients together in a bowl. Serve with choice of salad.
  • TIP: CHOPPED SALAD IN ENDIVE LEAVES
  • Finely chop your favorite salad fixings such as peppers, cucumbers, onion, blue cheese and mix with your favorite vinaigrette. Separate endive leaves to equal lengths and fill for hors douevres, right before serving
