EASY CHICKEN CURRY WITH VEGETABLES



Easy Chicken Curry with Vegetables image

2 tablespoons vegetable oil
3 tablespoons red Thai curry paste
1 yellow onion, sliced with the grain
2 chicken breasts, cut into cubes
Salt and freshly ground black pepper
1 1/2 cups broccoli florets
1 1/2 cups chopped carrots
1 teaspoon dried basil
3 cloves garlic, minced
Zest of 1/2 lime
1 1/4 cups coconut milk
1/4 cup chicken stock
One 14-ounce can diced tomatoes
Lime wedges, for squeezing

Steps:

  • Cook 1 tablespoon of the oil, the curry paste and onions in a large saute pan over medium heat, stirring often and letting sizzle, 5 to 6 minutes. Pat the chicken dry, sprinkle with salt and pepper and add the remaining oil to the pan. Cook the chicken in the onion-curry mixture until golden on all sides. Add the broccoli, carrots, basil, garlic and lime zest and cook, stirring, until the vegetables are coated, about 2 minutes. Add the coconut milk, chicken stock and tomatoes and bring to a simmer. Let the chicken simmer until cooked through and the sauce begins to thicken, about 20 minutes. Squeeze with lime juice before serving.

1 pound Yukon Gold potatoes, peeled and cut into 1/2-inch chunks
Kosher salt
3 cloves garlic, finely chopped
1 tablespoon chopped fresh ginger
2 tablespoons curry powder
1/4 teaspoon cayenne pepper, or more to taste
One 13.5-ounce can unsweetened coconut milk
4 cups vegetable broth
Zest and juice of 1 lime (zest removed in strips with a vegetable peeler), plus lime wedges for serving
1/2 small head cauliflower, cut into small florets
One 15.5-ounce can chickpeas, rinsed and drained
1/2 cup cilantro leaves, coarsely chopped

Steps:

  • Heat the olive oil in a medium Dutch oven or heavy pot over medium heat. Add the leeks, carrots and potatoes. Season with 1 teaspoon salt. Cook, stirring occasionally, until the vegetables begin to soften, about 5 minutes. Add the garlic, ginger, curry and cayenne. Cook, stirring, until the mixture is sizzling, about 1 minute. Stir in the coconut milk, vegetable broth and 4 cups water. Add the lime zest. Bring the soup to a rarpid simmer and cook until reduced slightly and the vegetables are almost tender, about 10 minutes.
  • Add the cauliflower and chickpeas. Continue to simmer rapidly until the vegetables are very tender and the soup is thick and flavorful, about 20 minutes more. Remove the lime zest. Season with salt and additional cayenne as needed. Stir in the lime juice and cilantro and serve with lime wedges.

Steps:

1 medium onion, diced

1 teaspoon black pepper
2 centimeter pieces ginger, minced
14 oz diced tomato, 1 can

Steps:

  • Place potatoes into a large pot or dutch oven and cover with well-salted water. Bring to a boil, then reduce heat to a simmer, cover and let the potatoes cook until fork tender-about 12 minutes. Once cooked, drain the potatoes and set them aside.
  • Return the pot to the stove and add 1 tablespoon of oil. Add onion and garlic and sauté over medium heat until onion is tender and starts to turn translucent, about 3-5 minutes.
  • Add cumin, cayenne, curry powder, salt, pepper and ginger. Stir to combine before adding tomatoes, chickpeas, and peas.
  • Increase heat to medium-high and stir in the coconut milk. Bring to a simmer before adding the potatoes back to the pot. Reduce heat to low and cook everything together for 3-5 minutes before serving.

1 medium yellow onion, diced small

1 sweet potato (about 3/4 pound), peeled and cut into 1-inch pieces

Steps:

  • In a medium saucepan, heat 1 teaspoon oil over medium-high. Add mustard seeds and half the onion and cook, stirring often, until onion is soft, 3 minutes. Add rice and stir to combine. 1 (12.5-ounce) can chickpeas, drained and rinsed
2 chayote, peeled, and roughly chopped
2 cups large dice Yukon gold potatoes

Vegetable stock, to cover
1 head cauliflower, cut into florets
Cheryl's Hot Sauce, to taste, recipe follows
10 whole Scotch bonnet peppers, rinsed and stems removed
1 to 1 1/2 cups white vinegar
10 whole pimento seeds

Steps:

  • Heat a large braising pot over high heat. Add the oil and the onions, and saute for 2 minutes. Then, add the red peppers and saute 2 minutes more.
  • Then, add curry powder, and saute until fragrant. Add the garlic, ginger, a little salt and pepper to the saute.
  • Add the pumpkins, chickpeas, chayote, potatoes, carrots, thyme, and scallions, and stir the saute for about 6 minutes. Add enough vegetable stock to just cover the vegetables. Bring to a simmer, and then add the cauliflower and cover the pot.
  • Simmer for about 35 minutes. Then add Cheryl's Hot Sauce, salt, and pepper, to taste. Simmer for 5 minutes more.
  • To a blender, add peppers and 1 cup of vinegar and puree. Add remaining vinegar, if needed. Stir in pimento seeds. Store in a bottle or jar in refrigerator.
  • Yield: 2 cups

1 leek, diced

3 tablespoons honey

Steps:

  • Place lentils, rice, broth (I like chicken or vegetable broth), milk (we use soy milk), leek, garlic, carrots, and broccoli in large pot and bring to a boil. Reduce to a simmer and cover. Cook until veggies, lentils, and rice are tender. Add water or additional broth if necessary.
  • And salt, curry paste (add to your taste), mango chutney, and honey (only sweeten to your taste) and simmer for a few more minutes, until the liquid is absorbed.
  • We serve with olive oil (or canola) to drizzle over top and add a bit of salt.

4 cups hot water
1 onion, chopped
1 fresh green chili pepper, minced
3 tablespoons vegetable oil
4 cups diced sweet potatoes
1 tablespoon mild curry powder

2 tablespoons grated fresh gingerroot
2 cups water
4 cups cauliflower florets
1 green bell pepper, chopped
1 red bell pepper, chopped
10 ounces fresh Baby Spinach
2 -3 tablespoons fresh lemon juice
salt

Steps:

  • Rinse the lentils well.
  • In a saucepan, add water and lentils; cover pan and bring to a boil.
  • Lower the heat, uncover the pan, and simmer for 30 minutes or until tender.
  • In a big soup pot, heat vegetable oil over medium-high heat.
  • Add onion and minced chile; saute for several minutes.
  • Add the sweet potatoes, curry powder, cumin, and ginger; saute 2-3 minutes, stirring often.
  • Add in the 2 cups of water.
  • Add the cauliflower florets and bell peppers; cover and simmer for 10 minutes.
  • While the vegetables are simmering, pour the lentils and their cooking liquid into the container of an electric blender and puree for 2-3 minutes, to make a smooth dahl.
  • When the cauliflower is tender, add in the spinach, lentil puree, and lemon juice.
  • Simmer just until the spinach has wilted.
  • Add salt to taste and serve.

3 large potatoes
1 onion, sliced
4 tablespoons butter
2 cups vegetable broth
1 small zucchini, sliced thinly
1 cup green peas (drain liquid from a can)
1 cup cooked great northern bean (drain liquid from can)
1/2 cucumber, peeled and sliced
1/2 lemon, juice of (2 Tablespoons, fresh is best)
1 tablespoon curry powder
2 tablespoons flour

Steps:

  • Peel potatoes. Cut potato in half width wise and then slice length wise to make long strips
  • Melt 2 tablespoons butter in a large skillet, add potatoes and onions and fry over medium-high heat until vegetables are tender.
  • Add broth, zucchini, peas, beans, cucumber, lemon juice and curry powder to skillet. Simmer until vegetables are tender, if most of the liquid has evaporated, you can add more broth or water. You don't want to much liquid, but just enough to simmer veggies.
  • While vegetables are simmering, melt remaining 2 tablespoons butter in a small saucepan. Add flour, mix well and simmer on low until mixture is browned (Don't let it burn)
  • When vegetables are tender, add flour and butter mixture to skillet. Stir in well and continue to simmer until mixture thickens, about 5 minutes.
  • Season with salt and pepper if desired.

The UK has a large Indian/Pakistani population, so curry is a popular meal where I live. I don't like hot curries, but mild ones are a nice change. This is a mild curried beef recipe with root vegetables. It's very filling and goes nicely with brown basmati rice. Chinese Five Spice is a mixture of aniseed, cinnamon, fennel, pepper, and cloves.

½ pound beef for stew, such as beef chuck roast, cut into 1-inch chunks
3 tablespoons olive oil
2 (3 inch) pieces fresh ginger root, peeled and diced
3 cloves garlic, minced
2 onions, peeled and diced
2 celery ribs, chopped
2 tablespoons curry powder, or to taste
2 teaspoons coriander powder
1 teaspoon Asian five-spice powder
1 teaspoon ground turmeric
2 carrots, peeled and sliced
parsnips, peeled and sliced
2 potatoes, peeled and cubed
1 zucchini, sliced
2 apples - peeled, cored and chopped
1 cup raisins
1 cup cashews
½ cup water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a roasting pan with aluminum foil.
  • Place the beef into a pan with enough water to cover. Bring to a boil, reduce heat and simmer for 30 minutes.
  • Meanwhile, heat the olive oil in a deep pot over medium-high heat. Stir in the ginger, garlic, onions, and celery, and cook until vegetables soften, about 5 minutes. Mix in the curry powder, coriander powder, five-spice powder, and turmeric, and toss to evenly coat the onion mixture. Cook about 5 minutes more, and stir in the carrots, parsnips, potatoes, zucchini, and apples. Stir in the beef with its cooking liquid, raisins, and cashews, and toss to evenly blend the spices.
  • Pour the beef and vegetable mixture into the prepared roasting pan. Drizzle 1/2 cup water over the mixture. Cover the pan with aluminum foil.
  • Bake in preheated oven until heated through, about 1 hour.

A great curry dish that you can make as hot or as mild as you like, and choose your favorite veggies for taste perfection! For a gluten-free version-ensure the curry powder and soy sauce used are both gluten-free

2 teaspoons olive oil
5 garlic cloves
1 -2 tablespoon curry powder (the amount depends on your preference and propensity for curry, the heat of your curry powder)
2 tablespoons dried basil
1 tablespoon paprika
1 tablespoon soy sauce
1/4 teaspoon ground pepper
1/4 teaspoon salt
1 tablespoon lime juice
540 ml chickpeas (one can)
2 -3 cups frozen mixed vegetables, diced (Choose your favorite! You can use broccoli, cauliflower, peppers, corn, peas, carrots, you name it! )
1 cup yogurt (Plain or Vanilla, Both work! The vanilla adds that creamy sort of flavour that you would get if addi)

Steps:

  • Heat oil in a saucepan on medium-low heat.
  • While the pan warms, squash the garlic cloves with a wooden meat mallet or the broad side of a butcher knife. Make sure your fingers are out of the way and the blade is pointed away from you!
  • Chop garlic into slightly smaller pieces (does not need to be minced) and add to the heated pan.
  • Add curry powder, basil, paprika, soy sauce, ground pepper, salt, and lime juice to pan.
  • Turn heat up to medium-high, and add the whole can of chickpeas, juice and all.
  • Add frozen/fresh vegetables and stir until well mixed.
  • Bring mixture to a low boil and simmer at medium-high heat for 10 minutes.
  • Turn off heat and stir in the yogurt.
  • Serve hot with bread, buns, naan, or similar things.
