Serve this chilled green soup as part of a summer menu. No cooking is required - simply whizz up the ingredients to make a refreshing, nutrient-packed meal

70g vegetarian feta , crumbled
3 tbsp olive oil
1 tsp coriander seeds , crushed
1 large red chilli , deseeded and finely chopped
1 lemon , zested and juiced
200g baby spinach
2 large ripe avocados , stoned and cubed
1 large cucumber , chopped
1 small garlic clove , crushed
250g natural yogurt
small bunch basil
2 tbsp toasted mixed seeds , to serve

Steps:

  • Put the feta in a bowl and pour over the olive oil, coriander seeds, chilli and lemon zest. Set aside.
  • Tip the remaining ingredients (except the seeds) into a food processor and blitz until smooth. Season. Add 50-100ml cold water and blitz again to loosen. Chill for up to 1 hr.
  • Pour into four bowls and top with the feta, marinating liquid and seeds.

1 small red onion, diced
2 medium carrots, diced
1 red bell pepper, diced
1 teaspoon chopped fresh garlic
1/4 cup olive oil
2 tablespoons white sambuca liqueur
1 lemon, juice of
2 quarts chicken broth
2 cups shredded cooked chicken
1/2 teaspoon crushed peppercorn
1/4 teaspoon white pepper
2 dashes hot pepper sauce
1/4 teaspoon celery salt
3 cups washed and chopped fresh spinach
2 cups cooked wild rice
8 -10 tablespoons crumbled feta cheese (to garnish)

Steps:

  • In 4-quart saucepan, saute onion, carrots, bell pepper and garlic in oil over medium heat until vegetables are tender.
  • Add Sambuca and lemon juice and saute 5 minutes.
  • Add broth, chicken, peppercorns, white pepper, hot pepper sauce, celery salt and spinach. Simmer 20 minutes.
  • Add cooked rice.
  • Before serving, sprinkle each serving with about 1 tablespoon cheese.

Number Of Ingredients 8

1 medium leek, white and light green partd only, sliced
5 cups small cauliflower florets (about 1 small head)
1 cup peeled diced potato (about 1 medium)
2 cups chicken stock
1 cup 10% cream or 1 cup milk
2 tablespoons chopped fresh dill or 2 tablespoons flat leaf parsley, plus extra for garnish
salt & freshly ground black pepper
1/2 cup crumbled feta cheese

Steps:

  • Cut off the dark green top of the leek, cut down the centre almost to the root end, slice and immerse in cold water to remove any dirt.
  • Drain in a colander or dry in a salad spinner.
  • Combine leek, cauliflower, potato and stock in a large saucepan and heat to boiling over medium-high heat, then lower heat to low, cover and simmer for 25 minutes or until vegetables are tender.
  • Let cool slightly, then puree in batches until smooth in food processor or blender.
  • Return to saucepan, stir in cream and dill, and season with salt and pepper.
  • Reheat until hot, but do not let boil or soup may curdle.
  • Serve in heated bowls, each topped with some of the cheese and dill.
