1 cup yellow curry paste
2 cups olive oil
1 organic firm tofu, cut into strips
1 red bell pepper, diced into 2-inch pieces
1 red onion, diced into 2-inch pieces
1/2 baby shiitake mushrooms, cleaned, stems discarded
1 Japanese eggplant diced into 2-inch pieces

Steps:

  • Mix white wine and curry paste, while mixing slowly add oil to emulsify. Skewer the rest of the ingredients and marinate in curry marinade, let sit 1 hour to overnight.
  • Grill until all vegetables are cooked.

1 1/2 cups boiling water
1/4 cup plain yogurt
1/4 cup good olive oil
1 teaspoon white wine vinegar

1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1/2 cup small-diced carrots
1/2 cup minced fresh flat-leaf parsley
1/2 cup dried currants or raisins
1/4 cup blanched, sliced almonds
2 scallions, thinly sliced (white and green parts)
1/4 cup small-diced red onion

Steps:

  • Place the couscous in a medium bowl. Melt the butter in the boiling water and pour over the couscous. Cover tightly and allow the couscous to soak for 5 minutes. Fluff with a fork.
  • Whisk together the yogurt, olive oil, vinegar, curry, turmeric, salt, and pepper. Pour over the fluffed couscous, and mix well with a fork. Add the carrots, parsley, currants, almonds, scallions, and red onions, mix well, and season to taste. Serve at room temperature.

1 (12 ounce) package extra-firm tofu
1 (15 ounce) can pineapple chunks in juice
1 (13.5 ounce) can light coconut milk
2 tablespoons liquid aminos (such as Bragg®)
1 tablespoon minced fresh ginger
2 ½ teaspoons red curry paste
2 ½ teaspoons chili powder
2 teaspoons yellow curry powder
3 cloves garlic, minced
1 tablespoon cornstarch
1 tablespoon water
¼ cup minced fresh basil
1 tablespoon minced jalapeno pepper
1 ½ cups chopped bok choy
1 ½ cups chopped fresh spinach
1 bunch green onions, diced
5 medium mushrooms, chopped
2 large Anaheim chile peppers, diced
2 small Roma tomatoes, diced
salt to taste

Steps:

  • Wrap tofu in 2 to 3 layers of paper towels and place on a plate. Place a second plate on top to encourage fluid out of the tofu. Let sit until paper towels are saturated, 3 to 5 minutes.
  • Meanwhile, preheat the oven to 200 degrees F (95 degrees C). Lightly grease a baking tray.
  • Discard wet paper towels and cube tofu. Place on the prepared baking tray.
  • Bake in the preheated oven until adequately dry, about 20 minutes.
  • While the tofu is baking, drain pineapple chunks, reserving juice.
  • Combine coconut milk, liquid aminos, ginger, curry paste, chili powder, curry powder, and garlic in a large skillet over medium heat. Add reserved pineapple juice and bring to a boil. Reduce temperature to a simmer and cook for 5 minutes.
  • Mix cornstarch and water together in a small bowl; add to the coconut milk mixture and whisk until slightly thickened.
  • Stir in basil and jalapeno; cook for 1 minute. Add bok choy, spinach, green onions, mushrooms, chile peppers, tomatoes, and pineapple chunks; stir to coat. Cook over medium heat until vegetables are crisp tender, about 5 minutes.
  • Add tofu and stir to coat. Season with salt. Transfer to a covered dish for 10 minutes to let flavors mix, or serve immediately.

2 tablespoons olive oil, divided, or as needed
1 teaspoon curry powder, or to taste
salt and ground pepper to taste
1 head broccoli, cut into florets
1 carrot, sliced
8 cups fresh spinach
1 onion, diced
½ cucumber, sliced
1 radish, sliced
1 pinch ground nutmeg, or to taste
2 tablespoons soy sauce, divided, or to taste
1 tablespoon honey, or to taste
1 tablespoon peanut butter
1 pinch ground ginger, or to taste
1 pinch ground black pepper to taste
1 cup water
1 cup couscous
1 tablespoon vegan margarine
1 clove garlic, minced
1 tablespoon pistachio nuts, or to taste

Steps:

  • Mix tofu, 1 tablespoon oil, curry powder, salt, and pepper together in a bowl. Let stand for 30 minutes.
  • While tofu is marinating, place broccoli and carrot in a microwave-safe bowl with 1 tablespoon water and 1 pinch salt. Cover and cook in the microwave for 2 1/2 minutes.
  • Heat 1 tablespoon oil in a wok over high heat. Saute spinach, onion, cucumber, radish, nutmeg, and 1 pinch salt until spinach is wilted, about 1 minute. Add 1 tablespoon soy sauce, honey, peanut butter, ginger, and black pepper. Add cooked broccoli and carrot. Reduce heat to low and cover the wok.
  • Place marinated tofu in a pan over medium heat. Add 1 tablespoon soy sauce. Cook until heated through, about 3 minutes. Add to vegetable mixture in the wok.
  • Bring water to a boil in a saucepan. Add couscous, margarine, and garlic. Mix well, cover the saucepan, and let rest until water is absorbed, about 10 minutes.
  • Serve couscous in a bowl topped with tofu mixture and pistachios.

1 medium-size onion, chopped
1 medium-size red bell pepper, coarsely chopped
1/2 cup water
3/4 cup chopped fresh cilantro, divided

Steps:

  • Following package directions, prepare curried couscous. Add currants while couscous steams.
  • Heat olive oil in very large heavy skillet over medium heat. Add tofu in single layer and cook without stirring until just golden, about 4 minutes. Turn tofu over and cook 2 minutes longer. Transfer tofu to couscous. Add broccoli, onion, and bell pepper to skillet; cook over medium-high heat 2 minutes without stirring. Continue to cook vegetables until crisp-tender, stirring constantly, about 4 minutes. Add 1/2 cup water; increase heat to high and bring to boil, stirring to scrape up browned bits. Mix in 1/2 cup cilantro. Season vegetables to taste with salt and pepper. Mix couscous, vegetables, and cooking liquid in large serving bowl. Garnish with remaining 1/4 cup cilantro and serve.

Tofu With Couscous, Peas and Carrots image

I adapted this from Dancer's Curried Chicken and Couscous for nights when I'm not in the mood for rice or pasta, and need a quick non-meat main dish to go on the table. I use the Whole Foods frozen peas and carrots (the carrots are shredded, not coined, take the same time to cook as the peas). I store the whole wheat couscous in the freezer once it's opened to keep it from getting stale. By stir frying the tofu, it changes it to a firmer, chewier, more meat-like texture. To make it completely vegan, vegetable broth can be substituted for the chicken broth.

2 (28 ounce) packages extra firm tofu
2 tablespoons reduced sodium soy sauce
2 cups reduced-sodium chicken broth
1 teaspoon curry
1/4 teaspoon cumin
3 cups frozen peas and carrots (16 oz pkg)
1 cup whole wheat couscous
1/3 cup dried cranberries
1/3 cup raisins
1/3 cup chopped pecans

Steps:

  • Drain tofu well and cut into small, ½ inch cubes.
  • Stir fry to drive off much of liquid and until browned in ~ 2 T oil.
  • Add Soy sauce toward end of frying.
  • Bring chicken broth and spices to a boil over medium-high heat in a medium sauce pan.
  • Add frozen peas & carrots and stir.
  • Once broth returns to a boil, add raisons, cranberries and couscous, stir and cover, remove from heat.
  • Wait 10 minutes and then stir well to combine.
  • Serve with tofu and chopped pecans, either on the side or mixed together.

I saw a recipe in a cook book and made a bunch of changes to my liking. This is what I ended up with. Because cardamom is so expensive I used ground cinnamon instead. I also use extra-firm lite tofu to reduce fat. You could probably substitute apple juice for wine. My husband loved it. So did I.

4 medium carrots, cut into 1/4 inch slices (2 cups)
1 large red onion, cut into strips (1 cup)

1/2 cup white wine
1 cup water
1 vegetable bouillon cubes or 1 chicken bouillon cube
2 tablespoons quick-cooking tapioca
2 tablespoons curry powder
1 teaspoon fresh grated ginger
1/2 teaspoon salt
1/2 teaspoon ground cardamom
1 (12 1/3 ounce) package extra firm tofu, drained and cut into 3/4 inch cubes
1 medium zucchini, halved lengthwise and cut into 1/2 inch slices
1 cup frozen peas
1/3 cup golden raisin
5 cups prepared couscous

Steps:

  • In a 4 quart crockpot combine potatoes, carrots, red onion, apple cubes, spices, tapioca, wine, water and bouillon cube.
  • Cover and cook on low-heat setting 8 to 10 hours or on high-heat setting for 4 to 5 hours.
  • At the end of cooking time if using low-heat setting, turn to high and add tofu, zucchini, peas and raisins.
  • Cover and cook for 30 minutes more. Serve over hot couscous.
