HOTDISH (TATER TOT CASSEROLE)
Hotdish is an easy, one-dish dinner often served in Minnesota at such large gatherings as family reunions, potlucks or church suppers. Don't be turned off by its humble appearance; the combination of cream of mushroom soup, corn, green beans, beef and a delightful crispy potato topping (the more taters, the better!) is universally likeable.

Steps:
- Preheat the oven to 350 degrees F.
- Add the oil to a large skillet over medium heat. Add the onions and cook until soft and beginning to brown, about 15 minutes. Add the beef to the onions and cook until the meat is brown, stirring and scraping the bottom of the skillet to release the yummy brown bits, about 10 minutes. Season with salt and pepper.
- Transfer the beef and onion mixture from the skillet into a 9-by-13-inch baking dish. Scatter the green beans and corn evenly on top. Spread the cream of mushroom soup over top and top with frozen potato tots. Bake uncovered for 1 hour; the potato tots should be golden brown. Serve.
TURKEY TATER-TOT CASSEROLE
A quick and easy variation of the classic casserole. By substituting a few things in the recipe, it becomes more nutritious and less fat.

- Cook and drain the ground turkey and place it into a 2-quart casserole dish.
- Layer the green beans on top of the ground turkey.
- Spread the cream of mushroom soup on top of the green beans.
- Place the sliced cheese in a layer over the top of the soup.
- Scatter the tater tots over the top of the casserole, making sure to cover the surface.
- Cover with a lid and cook at 400°F for 45 minutes or until the tater tots are browned.

- Put turkey into a 9x13-inch pan.
- Saute onions in olive oil until tender.
- In a bowl, combine soup, milk, miracle whip, sauted onions and salt & pepper. Mix well. Pour over turkey.
- Sprinkle with cheese.
- Top with tatertots.
- Bake 350 for 60 minutes.
- Enjoy!
- Update: Made this with cooked chicken instead of turkey and my family loved it!

- Bake the tater tots per package directions.
- while tots are baking cube 2 cups+ of leftover ham, or use 1 lb package of cubed ham.
- Cover bottom of a 9 inch baking dish with tater tots.
- Cover the base layer with the cubed ham, then the green beans, then pour/spread the cheese sauce over it.
- Place the remaining tater tots over the top, then sprinkle the shredded cheese over it.
- Bake at 375 • for 30 minutes.

- Pre-heat oven to 400.
- Brown ground turkey.
- Add spices as turkey is cooking.
- In skillet add cream of mushroom soup and milk. Mix thoroughly.
- Add peas and carrots and then simmer for about 5 minutes.
- Spray casserole dish with cooking spray, and add turkey mixture to dish.
- Spread tater tots evenly over turkey mixture.

ELEGANT TATER TOT HOTDISH
Okay...so Tater Tot Hotdish isn't usually considered "elegant", but I think this recipe is extra rich and special because of the addition of butter and half and half. This is a favorite at our house, especially on a cold winter evening. And yes, I too live in the land of hotdishes...Minnesota!

- Brown the hamburger in a large skillet. Drain off any grease.
- Into same pan, add the soups, butter, half & half, and the bag of vegetables.
- Bring to a boil while stirring to mix all the ingredients. Add salt and pepper to taste.
- Pour into a buttered casserole dish and top with the tater tots. You may not need all the tater tots, it depends on the casserole dish size.
- Bake at 400 degrees until bubbly and the tater tots are crisp. about 30-35 minutes.

- In a pan, Brown Hamburger, add chopped onion, add sliced mushrooms, add season all, salt and pepper to taste.
- In baking dish add three cans soup, milk, soy sauce and worcestershire sauce and mix well.
- Put frozen tator tots into that mix.
- Top with Hamburger mix from pan (Drain fat first).
- Layer on can of drained green beans.
- Layer cheese slices on top.
- Garnish with parsley flakes.
- Bake, covered with foil at 375 for 30 minutes
- Remove foil and bake 15 minutes or until cheese is slightly browned.

- In a large saucepan, combine the turkey legs with the chicken stock and, if necessary, water to cover. Bring to a boil, then reduce the heat to moderately low and simmer until the meat is cooked through, about 1 hour. Using tongs, transfer the turkey to a cutting board and let cool. - In a large skillet, melt the remaining 3 tablespoons of butter. Add the mushrooms and cook over moderately high heat, stirring occasionally, until browned, about 5 minutes. Add the leeks and cook, stirring occasionally, until softened, about 5 minutes. Stir in the tarragon. Spread the mushroom mixture over the turkey in the baking dish.
- Spread the tots over the mushroom mixture. Bake for 45 minutes, until bubbling and golden. Sprinkle with sea salt and serve with hot sauce, if desired.
