CRISPY PARMESAN FRIES WITH ROASTED GARLIC AIOLI



Crispy Parmesan Fries with Roasted Garlic Aioli image

[i]Amazingly crispy and creamy all in one bite! Crispy Parmesan Fries have a crunchy exterior and a buttery interior and pair perfect with the roasted garlic aioli![/i]

Number Of Ingredients 18

[i]Fries:[/i]
1 pound russet potatoes
2 tablespoons olive oil
2 1/2 teaspoons dried basil
11/2 teaspoons dried thyme
4.5 teaspoons garlic powder
11/2 teaspoons salt
1/ 1/2 teaspoons pepper
1/2 cup grated parmesan
[i]Roasted Garlic Aioli:[/i]
1 cup non fat plain greek yogurt
1 head garlic
4 teaspoons garlic powder
1 teaspoon salt
1 teaspoon pepper
1/2 lemon, juiced
1/4 cup almond milk
1/4 grated parmesan

Steps:

  • Preheat oven to 415 degrees F.
  • Cut the top part of the garlic off. Place in foil and sprinkle with salt, pepper and a drizzle of olive oil. Wrap up and place in oven. Roast for 40-45 minutes, or until soft and fragrant. Remove from oven and let cool.
  • Meanwhile, Line a baking sheet with foil (for easy clean up).
  • Wash and dry the potatoes. Cut in half, then each half into 4 wedges. So you will have 8 wedges from each potato.
  • Toss the potatoes into a mixing bowl. Add the olive oil, and toss to coat the potatoes well.
  • Add the herbs, salt, pepper and parmesan. Toss well to ensure all sides are evenly coated.
  • Add the potatoes to the foil lined baking sheet, in an even layer and place in the oven.
  • Cook for 10 minutes then flip potatoes onto other side.
  • Let bake for 15 - 20 or so more minutes, or until potatoes or tender. This cooking time may vary depending on how large or small you cut your potatoes.
  • Remove from oven and serve immediately.
  • [i]Aioli:[/i]
  • When garlic is cooled enough, place in a bowl with the remaining ingredients. Mix well. Serve with fries.

5 cups frozen French-fried potatoes
2 tablespoons olive oil
3 to 4 garlic cloves, minced
1/4 teaspoon salt

Steps:

  • Preheat oven to 450°. Place potatoes in a large bowl. Mix oil, garlic and salt; toss with potatoes. Arrange in a single layer on a large baking sheet., Bake 15-20 minutes or until golden brown, stirring once. Sprinkle with cheese; toss lightly. Serve immediately.

4 large unpeeled russet potatoes, cut into 1/4-inch strips
¼ cup olive oil
3 cloves garlic, minced
½ teaspoon ground dried thyme
¼ teaspoon seasoned salt
½ cup grated Parmesan cheese, divided
¼ cup chopped fresh parsley
¼ cup grated Parmesan cheese
¼ teaspoon seasoned salt

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Place the potatoes in a mixing bowl and drizzle with olive oil. Season with garlic, thyme, and 1/4 teaspoon seasoned salt. Toss until evenly coated. Lift the fries out of the bowl and spread onto a nonstick baking sheet in a single layer. Save the remaining oil in the bowl.
  • Bake in the preheated oven 30 minutes, flipping the fries halfway through baking. Return the fries to the bowl with the olive oil, sprinkle with 1/2 cup Parmesan cheese and parsley. Toss to coat, then spread again onto the baking sheet. Return to the oven, and bake until the Parmesan cheese melts, about 10 minutes. Sprinkle the fries with the remaining 1/4 cup Parmesan cheese and 1/4 teaspoon seasoned salt to serve.

These Garlic Parmesan Fries are BAKED, so you can feel a lot better about eating half the pan!

4 Russet Potatoes (sliced into ¼ inch slices)
¼ cup olive oil
3 cloves garlic (minced)
2 teaspoons garlic powder
1 teaspoon seasoned salt
½ cup grated Parmesan cheese
¼ cup fresh parsley (chopped)
⅓ cup mayonnaise
1 clove garlic (minced)
1 ½ teaspoons lemon juice
½ teaspoon Dijon mustard
¼ teaspoon cayenne pepper

Steps:

  • Preheat oven to 425 degrees.
  • In a gallon-size Ziploc bag, place potatoes, olive oil, garlic, garlic powder and seasoned salt. Zip up the bag and shake it vigorously to evenly coat the potatoes.
  • Place potatoes in a single layer on a foil-lined baking sheet, setting the ziploc bag to the side for later.
  • Bake for 30 minutes (flipping halfway through).
  • Remove from oven and return to the ziploc bag (be careful! They are hot!). Add in the parmesan cheese and fresh parsley, close, and shake it again to coat.
  • Dump the potatoes back on the foil-lined baking sheet, still in a single layer, and bake for an additional 10 minutes until parmesan cheese has melted and starts to turn golden.
  • Remove from oven and top with additional parmesan cheese, fresh parsley, and garlic salt. Serve warm.
  • In a small bowl, mix all ingredients together. Chill before serving.
