I made these up years ago and have been making them ever since. They are always a big hit. These potatoes make a wonderful side dish for any meal and are terrific heated up the next day for lunch.

4 large baking potatoes
8 slices bacon
1 cup sour cream
½ cup milk
4 tablespoons butter
½ teaspoon salt
½ teaspoon pepper
1 cup shredded Cheddar cheese, divided
8 green onions, sliced, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake potatoes in preheated oven for 1 hour.
  • Meanwhile, place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • When potatoes are done allow them to cool for 10 minutes. Slice potatoes in half lengthwise and scoop the flesh into a large bowl; save skins. To the potato flesh add sour cream, milk, butter, salt, pepper, 1/2 cup cheese and 1/2 the green onions. Mix with a hand mixer until well blended and creamy. Spoon the mixture into the potato skins. Top each with remaining cheese, green onions and bacon.
  • Bake for another 15 minutes.

For a special dinner side, load these Twice-Baked Potatoes from Food Network Kitchen with butter, sour cream and cheese.

4 large russet potatoes, each about 3/4 pound each, scrubbed and dried
2 to 4 tablespoons unsalted butter
1/3 cup sour cream
1 scallion, finely chopped
Freshly grated nutmeg, optional
1/2 cup shredded sharp cheddar
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the potatoes directly on the rack in the center of the oven and bake for 30 minutes. Pierce each potato in a couple spots with a fork and continue to bake until tender, about 30 minutes more. Remove potatoes from the oven, and turn the heat down to 375 degrees F.
  • Hold the potato with an oven-mit or towel, trim off the top of the potatoes to make a canoe-like shape. Reserve the tops. Carefully scoop out most of the potato into a bowl. Take care to leave enough potato in the skin so the shells stay together. Mash the potato lightly with fork along with 2 to 3 tablespoons of the butter and sour cream. Stir in the scallion, nutmeg, and season with salt and pepper, to taste. Season the skins with salt and pepper. Refill the shells with the potato mixture mounding it slightly. Sprinkle the cheese on top of the potato filling. Brush the reserved top with the remaining butter and season with salt and pepper.
  • Set the potatoes and lids on a baking sheet, and bake until heated through, about 20 minutes. Serve immediately.

4 large baking potatoes
2 tablespoons butter
2 tablespoons thinly sliced green onions
2 tablespoons all-purpose flour
½ cup milk
½ cup half-and-half
salt to taste
¼ cup half-and-half
1 tablespoon butter
¾ cup grated Parmesan cheese, divided
¼ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Arrange potatoes on a baking sheet.
  • Bake potatoes in the preheated oven until tender, about 1 hour.
  • Melt 2 tablespoons butter in small pot over medium heat. Add green onions; cook until soft, about 4 minutes. Stir in flour until well blended, about 1 minute. Pour in milk and 1/2 cup half-and-half gradually, stirring sauce constantly. Season with salt and cook until sauce is thickened, 10 to 15 minutes.
  • Cut a slice from the top of each baked potato and scoop the pulp into a bowl. Mash pulp until no lumps remain. Add 1/4 cup half-and-half and 1 tablespoon butter; blend together with an electric mixer. Stir in 1/2 cup Parmesan cheese and pepper until fully combined.
  • Fill baked potato skins with the mashed pulp mixture; make a well on top of each potato. Fill wells with onion sauce. Sprinkle 1/4 cup Parmesan cheese on top.
  • Turn on the broiler. Return stuffed potatoes to the oven and broil until golden brown; about 15 minutes.

4 medium russet potatoes, scrubbed
3/4 cup part-skim ricotta cheese
1/2 cup plain nonfat yogurt
4 scallions, finely chopped
Pinch of coarse salt
Freshly ground pepper

Steps:

  • Preheat oven to 375 degrees. Place potatoes on a baking sheet. Prick top of each potato a few times with a fork, and bake until easily pierced with a paring knife, about 45 minutes. Remove from oven; let cool slightly, about 10 minutes.
  • Using a serrated knife, cut off top one quarter of each potato, slicing lengthwise. Use a spoon to scoop flesh into a medium bowl, leaving a 1/4-inch border all around. Set shells aside. Mash flesh with a fork until smooth. Add remaining ingredients, and stir until combined.

1kg floury potatoes (such as King Edward)
25g butter , melted
200g goat's cheese
50ml single cream

Steps:

  • Heat oven to 190C/170C fan/gas 5. Prick each potato a few times with a fork. Place in the oven and cook for 1 hr. Remove from the oven and, using a tea towel to protect your hands, cut them in half lengthwise. Use a spoon and scoop out the flesh, leaving behind enough skin and flesh to form a shell.
  • Heat the grill. Place the potato halves, cut side up, onto a baking tray. Brush with a little melted butter then grill for 3-5 mins until starting to crisp. Meanwhile mash the potato flesh with 100g of goat's cheese, any leftover butter and cream, then season well. Spoon a little mash back into each potato shell, then top with a slice of goat's cheese. Place under the grill and cook for 5 mins until golden.

4 large russet potatoes
2 teaspoons vegetable oil
3 tablespoons butter
1 tablespoon minced green onion
salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
½ cup shredded white Cheddar cheese
½ cup heavy cream
1 egg yolk
1 tablespoon butter, melted
1 teaspoon paprika

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Rub potatoes with vegetable oil and place on the prepared baking sheet.
  • Bake in the preheated oven until a paring knife easily inserts into the center of a potato, about 1 hour. Set aside to cool until easy to handle, about 10 minutes.
  • Cut 1/3 off each potato lengthwise. Scoop flesh from each potato to within about 1/8-inch of the skins. Transfer flesh to a bowl.
  • Combine potato flesh with butter and green onion; stir until butter is melted evenly into potato. Add salt, black pepper, cayenne pepper, and cheese; stir until cheese is melted. Pour cream and egg yolk into potato mixture; mix to combine. Season with salt to taste.
  • Place small piece of potato skin inside the bottom of each larger potato shell. Fill each potato with an equal amount of cheese mixture. Gently press the surface of the filling with a fork to create texture. Brush tops with melted butter and sprinkle with paprika.

6 medium potatoes
4 tablespoons butter, at room temperature
1/3 cup whipping cream, at room temperature
3/4 cup sour cream, at room temperature
1 teaspoon salt
fresh ground black pepper
4 tablespoons finely chopped green onions

Steps:

  • Preheat oven to 350 degrees. Scrub potatoes, prick all over with fork and place directly on oven rack in center of oven. Bake until tender, about 1 hour and 10 minutes. Cool potatoes for 15 minutes.
  • Slice small portion of skin off one side of potatoes and carefully scoop out flesh. Side potato shells aside. Transfer flesh to mixing bowl. Rice or mash potato flesh.
  • Add sour cream and whipping cream and stir util incorporated into potatoes. Add butter and blend well. Add salt, pepper and green onions and stir. Adjust seasoning as necessary.
  • Spoon potato mixture into reserved potato shells. Top each with a few bits of butter. Can be made ahead and refrigerated. Allow to come to room temperature before baking.
  • Heat oven to 400 degrees. Place potatoes on baking sheet. Bake until heated through and beginning to brown on top, about 30 minutes. Can also place on grill, over indirect heat, for 20-30 minutes or until heated through.

2 teaspoons olive oil
2 teaspoons salt

4 cloves minced garlic
1 ½ cups shredded Monterey Jack cheese
½ cup sour cream
¼ cup chopped green onion, divided

4 slices cooked bacon, crumbled
1 pinch paprika, or to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Rub potatoes with olive oil and salt; pierce each several times with a fork and arrange onto a baking sheet about 6 inches apart.
  • Bake in preheated oven until easily pierced with a fork, 50 to 60 minutes. Remove from oven and set aside to cool until cool enough to handle, keeping oven heat at 425 degrees F (220 degrees C).

1 egg
1 pinch nutmeg
1/2 teaspoon chopped chives
1/2 cup alouette light garlic & herbs spreadable cheese
4 teaspoons bacon, pieces if desired*
1 green onion, thinly sliced, if desired

Steps:

  • Scrub and dry potatoes. Pierce with fork. Microwave on high for 8 to 10 minutes or until soft. Or bake at.
  • 350° F for 1 hour or until soft.
  • Cut potatoes in half. Scoop out flesh into medium bowl, leaving ¼ inch around edge of potato.
  • Mash with fork, or mix with a hand held mixer adding the egg, nutmeg, chives and Alouette until well mixed.

4 ounces fresh goat cheese, as room temperature

Steps:

  • Position rack in center of oven; preheat to 350°F. Place potatoes directly on oven rack; bake until very tender, about 60-70 minutes. About halfway through baking, prick the skins in a few spots to allow steam to escape. Move the potatoes to a cutting board and increase the oven temperature to 375º. Using oven mitts, grasp 1 potato in hand. Using serrated knife, cut off top 1/4 of potato. Using spoon, scoop out potato, leaving 1/2-inch-thick shell; transfer potato flesh to large bowl. Repeat with remaining potatoes. Mash potatoes until smooth. Beat 2 tablespoons butter into the mash. Work in the cream until fluffy and smooth, then beat in the goat cheese, green onions, and salt and pepper. Season the skins with salt and pepper. Spoon the filling into the skins. You can make the potatoes ahead to this point and refrigerate them for several hours or overnight. Pinch off bits of the remaining T. butter to dot the potatoes before you bake them.
