My mom has made rum balls for as long as I can remember. They look beautiful on a dessert spread and can be packaged in a decorative tin as a gift. I swapped coconut rum for the traditional rum and added shredded coconut. -Jana Walker, Macomb, Michigan

1 package (12 ounces) vanilla wafers, finely crushed
1 cup confectioners' sugar
2 tablespoons baking cocoa
1 cup sweetened shredded coconut
1 cup chopped pecans
1/2 cup light corn syrup
1/4 cup coconut rum
Additional confectioners' sugar

Steps:

  • Whisk crushed wafers, confectioners' sugar and cocoa. Stir in coconut and pecans. In a separate bowl, whisk corn syrup and rum; stir into wafer mixture. Shape into 1-in. balls; let stand 1 hour., Roll in additional confectioners' sugar. Store in an airtight container.

1 1/3 cups flaked coconut
1 cup walnuts, finely chopped
1 (14 ounce) can sweetened condensed milk
1/2 cup rum (or 1/2 cup water plus 1 t. rum extract)
powdered sugar

Steps:

  • Combine crumbs, coconut and nuts in a bowl.
  • Stir in condensed milk and rum and mix well.
  • Shape into 1-inch balls and roll in powdered sugar.
  • Cover tightly and store in refrigerator at least 24 hours, or up to several weeks.
  • Roll in powdered sugar again just before serving.

LOL! Since this is a no bake recipe the rum balls are quite potent, and one surely needs a designated driver to eat them. Its been so long since I made them that I can't remember how many the recipe makes. Of course that may be a result of family and friends eating them as fast as they are made. When posting the recipe it made me post a number for the yield, hence the 24.

2 tablespoons cocoa powder
1 cup pecans (very finely ground)
1 cup confectioners' sugar
2 tablespoons white corn syrup
1/4 cup jamaican rum
1/2 cup granulated sugar

Steps:

  • Mix vanilla wafer crumbs, cocoa, nuts and 1-cup of confectioner's sugar well.
  • Add the corn syrup and rum. (mix well).
  • Shape into 1-inch balls and roll in granulated sugar.
  • Put into a tightly covered tin or metal container for at least 12-hours before serving.
  • (cookies keep very well for 4-5 weeks).

1/4 cup corn syrup
1/4 cup icing sugar
1/4 cup Malibu rum
2 cups Oreo cookie crumbs
1 cup finely chopped pecans
1 cup coconut

Steps:

  • Melt the chocolate on the stove, mix in remaining ingredients except coconut.
  • I find it easier to roll after it sits in the fridge overnight.
  • Roll into balls, size of your choice, and roll in fine ground Coconut.
  • Store in freezer.

They went over quite well. Then I sent the recipe to a friend, who had his first batch...'appropriated.' The rum balls will keep several weeks in an airtight container, but I've never had them last that long. It's a simple and easy recipe to make, and goes well in both high-class and casual situations. Enjoy!

1 cup powdered sugar
1 1/2 cups finely chopped walnuts, divided
2 tablespoons light corn syrup

  • Combine cookie crumbs, sugar, 1 cup chopped walnuts, corn syrup, rum and cocoa.
  • Mix well.
