50g (3 tbsp) butter (, unsalted (sub 2 tbsp neutral oil))
4 garlic cloves (, finely minced (Note 1))
1.5 tbsp ginger (, finely minced (Note 1))
1 onion (, finely chopped (white, yellow, brown))
2 tbsp curry powder (, mild or spicy (your choice!) (Note 2))
1/2 tsp tumeric powder
1/2 tsp cayenne pepper (, optional)
1 1/4 tsp salt
1/2 tsp black pepper
1 cup dried lentils (, green or brown (or any other dried lentils or split peas, Note 3))
400 ml / 14 oz coconut milk (, full fat)
400g/ 14 oz canned tomato (, crushed or diced)
3 cups (750 ml) water
1/2 cup coriander/cilantro (, finely chopped)
Yogurt (, optional)
Basmati rice ((or other rice))

Steps:

  • Saute onion: Melt butter in a pot over medium heat. Add onion, garlic and ginger. Slowly cook, stirring every now and then, for 10 minutes until tinged with gold and the onion is sweet.
  • Cook off spices: Turn heat up to high, add curry powder and turmeric, stir for 1 1/2 minutes.
  • Add everything else: Add remaining ingredients and stir. Bring to simmer, then place lid on and adjust heat to low / medium low so it's simmering gently.
  • Simmer: Simmer for 30 minutes, then remove lid and simmer for a further 10 minutes to reduce the sauce. {Note 2 for cook times of other lentils}
  • Lentils should be soft, sauce should be thickened and creamy. Too thick, add water. Too thin, simmer with lid off - thickens quickly.
  • Coriander: Stir through half the coriander, then taste and add more salt if needed.
  • Serve over basmati rice, sprinkled with more coriander and a dollop of yogurt. (Low carb option - cauliflower rice).

2 tablespoons olive oil
1 small, white onion, diced
1 teaspoon minced garlic (or 2 fresh cloves)
1 teaspoon curry powder
1 15 oz can of diced tomatoes
1 bay leaf
1/4 teaspoon salt
1 cup green lentils, washed and picked over
5 cups vegetable broth
1 cup water

Steps:

  • In a large pot, heat the olive oil over medium heat
  • Add the diced onion and cook for 2 minutes.
  • Stir in the minced garlic and curry powder and cook for 30 more seconds.
  • Add the tomatoes and bay leaf and cook for another minute.
  • Add the lentils and salt and cook for 8 more minutes.
  • Turn the heat to high and add all the vegetable broth and water.
  • Bring to a boil and then reduce heat to low and let simmer for about 30-35 minutes, until the lentils become soft.
  • Remove the bay leaf.
  • Using an immersion blender, blend part of the soup so the broth thickens, but leave the soup chunky. If you don' thave an immersion blender, take 3 cups of soup out and blend it, then add it back in.
  • Serve immediately or store in the fridge for up to 5 days.

4 6-ounce monkfish fillets (each about 1 inch thick), skin removed

Steps:

  • For sauce:
  • Bring first 4 ingredients to boil in medium saucepan. Reduce heat, cover, and simmer until cauliflower is very tender, about 17 minutes. Cool slightly. Transfer mixture to blender; add 3 tablespoons water and puree until smooth. Season with salt and pepper. (Can be made 1 day ahead. Cover; chill. Rewarm over medium heat, stirring, and adding more water to thin sauce, if desired.)
  • For lentils and browned butter cauliflower:
  • Heat oil in medium saucepan over medium heat. Add onion, carrots, and celery; sauté until soft, about 8 minutes. Add lentils, curry, and paprika; stir 1 minute. Add 2 1/2 cups water; bring to boil. Reduce heat, cover, and simmer until lentils are tender, stirring occasionally, about 30 minutes. Uncover; stir until liquid is absorbed, about 5 minutes.
  • Meanwhile, cook butter in large nonstick skillet over medium-high heat until browned, about 2 minutes. Add cauliflower; sauté until beginning to brown, about 5 minutes. Add 1/4 cup water; cover and cook until cauliflower is crisp-tender and water evaporates, about 3 minutes longer. Stir in lentil mixture. Season with salt and pepper. (Can be made 2 hours ahead. Let stand at room temperature. Rewarm before serving.)
  • For gremolata:
  • Mix parsley and lemon peel in bowl. Season with salt and pepper.
  • For fish:
  • Sprinkle monkfish with salt and pepper. Heat oil in large nonstick skillet over medium-high heat. Add fish; sauté until just opaque in center, about 6 minutes per side.
  • Divide sauce among 4 plates. Spoon lentil mixture alongside. Place fish atop lentils; sprinkle with gremolata.

Ingredient info: French green lentils are small, dark green, and speckled with black; they can be found at some supermarkets and at specialty foods stores.

Steps:

  • Heat 1 tablespoon olive oil in heavy large pot over medium heat. Add onion and carrot; sprinkle with salt and pepper. Cook until onion is translucent, stirring occasionally, about 4 minutes. Add half of chopped garlic; stir until vegetables are soft but not brown, about 4 minutes longer. Add 2 tablespoons curry powder; stir until fragrant, about 1 minute. Add lentils and 4 cups water. Sprinkle with salt and pepper. Increase heat and bring to boil. Reduce heat to medium; simmer until lentils are tender, about 30 minutes.

Steps:

  • Spread the lentils out on a baking sheet to make them easier to see. Pick out any stones or debris. Bring 3 cups of water to a boil in a sauce pot, then add the lentils. 1 cup red lentils
1 cup brown rice
1 cup split green peas
1 tbsp cilantro seeds
1 tbsp fennel seeds
1 tbsp cumin seeds
1 tbsp dried basil
1 tbsp dried chives
piece fresh ginger root
piece fresh turmeric root
3 bay leaves
2 medium onions
3 cloves garlic
2 tbsp coconut oil (olive oil or any healthy oil)
5 cups boiling water
4 tbsp yummy creamy carrot sauce: use any cream or coconut cream
pinch of salt
pinch of ground pepper (freshly ground will be the best)
pinch of cayenne pepper
handful fresh spinach
handful fresh mushrooms

Steps:

  • Wash and soak your lentils, split peas, and rice in a single large bowl of at least 10h. Make sure to add a lot of water as these are going to swell and double the volume.
  • Place a big saucepan on medium heat and bring all the dry spices and leaves, cover and stir now and then for about 5 mins.
  • Meanwhile, chop the onions, mince the ginger, turmeric, and garlic. Bring them in the pan and give them a stir for 2 mins before adding the coconut oil and stir again. cover them and let them cook for 8 mins on medium heat as you keep on stirring.
  • Rince the legumes and drain the water.
  • Bring them in the pan, stir everything together, then cover with some boiling water. The water should be covering about 2 cm above the legumes.
  • Increase the heat till the boiling takes place then reduce to medium high heat
  • Cover and let this cook for about 12 minutes on medium heat, you keep on stirring now and then, BUT YOU MUST BE VERY GENTLE when STIRRING.
  • In between, add any cream of your choice, I added my yummy creamy carrot sauce.
  • During this time, rinse out your spinach, cut them into halves if you've big leaves. wipe your mushrooms with a kitchen paper to wipe off any soil. Cut them into desired size.
  • Add salt, peppers and turn off the heat.
  • Add the mushrooms and the spinach, fold them in GENTLY, Cover, and leave the meal to cool for about 10 mins then serve and enjoy your lentil curry with rice & split peas.
  • NOTE; since the legumes are already soft and swollen, they're not going to take long to cook, so don't overload them with water unless you want a lot of sauce which we can say soup!

COCONUT CURRIED GOLDEN LENTILS (20 MINUTES!)

Simple, flavorful curried yellow lentils seasoned with fresh spices, garlic, and ginger and swimming in a curried coconut sauce. The perfect plant-based side!

1 1/2 cups golden (yellow) lentils* ( (rinsed and drained // or sub red with similar cook time or green with longer cooking time))
1 Tbsp coconut oil ((or water))
1 small shallot ((diced // optional))
4 cloves garlic ((minced // ~2 Tbsp as original recipe is written))
2-3 Tbsp fresh minced ginger
3/4 tsp sea salt
1 heaping Tbsp curry powder ((DIY or store-bought))
1 tsp ground turmeric
1/8 tsp cayenne pepper ((for heat - omit if you don't like spice))
1 1/4 - 1 1/2 cups light coconut milk
1-2 Tbsp coconut sugar or maple syrup ((plus more to taste // or sub stevia))
2 Tbsp fresh lemon juice

Steps:

  • Note: Soaking lentils is optional but can improve digestibility and speed cook time. See notes for tips.Bring water to a boil in a large pot or saucepan. Add lentils and bring back to a boil. Once boiling, reduce heat to a simmer and cook lentils uncovered for 4-5 minutes or until just tender. Then drain and set aside. Be careful not to overcook or they can become mushy (cooking time will vary by variety of lentil - check package for instructions).
  • In the meantime, heat a large rimmed skillet over medium heat. Once hot, add oil or water, shallot (optional), garlic, and ginger (start with lesser quantity, and add more to taste as desired). Sauté for 2-3 minutes, stirring frequently. Then add salt, curry powder, turmeric, and cayenne and cook for 1 minute more. Lower heat to low.
  • Add coconut milk and coconut sugar (or maple syrup) and stir to combine. Cook over low heat for 3-4 minutes to combine the flavors (see photo).
  • Add the (well) drained, cooked lentils (see photo) to the coconut sauce and stir. They will likely need more seasoning at this point. I added a bit more salt, curry powder, turmeric, cayenne, and coconut sugar because I like big flavor. But season to taste.
  • Turn off heat, add lemon juice, and stir. Then serve and enjoy! These are delicious on their own, but they would also be tasty with rice, cauliflower rice, steamed or roasted vegetables, and more.

4 carrots (peeled and chopped)
2 celery sticks (chopped)
1 onion (peeled and chopped)
3 cloves garlic (peeled and minced)
8 cups chicken broth (gluten free and lower sodium)
2 bay leaves
1.5 cups red lentils (split dried. Please wash and pick over for things don't belong)
1 sprig thyme leaves (fresh or or 1 teaspoon dried)
1 cup ham (chopped or if all you have is the ham bone, just add that.)
2 tsp curry powder ((or to taste))
salt and pepper (to taste)

Steps:

  • Add olive oil, carrots, celery and onions to a large pot and cook on medium heat until translucent. Add garlic.
  • Add chicken broth, bay leaves, red lentils, thyme, ham and/or ham bone, curry powder and salt and pepper to taste. Cook on medium high heat for about 15-20 minutes until the vegetables and lentils are tender. Remove bay leaves and fresh thyme from soup pot.
  • Enjoy! (if you wish, you can puree, but perfect just the way it is)
  • Sauté onion, celery and carrot in the Instant Pot (pressure cooker) with a little olive oil, just until aromatic. Then add garlic, chicken broth and bay leaves to the pot.
  • Add red lentils, thyme, ham or ham bone, mild curry powder and salt and pepper to taste.Place the lid on the pressure cooker and lock into place. Be sure to put the steam release valve in the closed position. Set the pressure cooker for 10 minutes on high pressure cooker. Allow to naturally release for 10 minutes and then carefully release the steam valve. Remove bay leaves and fresh thyme from instant pot.
  • Put all of the ingredients for ham and lentil soup into slow cooker. There is no sautéing required. Put the lid on the slow cooker and set on high for 4 hours or low for 6 to 8 hours. Remove bay leaves and fresh thyme from soup pot.

Steps:

  • Heat the oil in a wide, non-stick covered pan. Add the onion, put on the lid and cook for 5 mins, stirring occasionally, until golden.
